APPLE CRANBERRY BAKED OATMEAL
This easy-to-make Apple Cranberry Baked Oatmeal breakfast recipe is comfort food on a plate. Just mix and bake with simple pantry ingredients for breakfast, brunch, dessert, and snacks. You will love the added flavors of cinnamon, and pecans. Don't forget to pour a drizzle of maple syrup on top for a hearty and delicious healthy breakfast.

Steps:
- Heat the oven to 375 degrees F. and prepare an 8" x " baking pan with cooking spray.
- Combine the oatmeal, brown sugar, and baking powder in a large mixing bowl.
- In a medium-sized bowl add the butter and put in the microwave to melt. Then whisk in the applesauce, milk, and beaten egg. Mix to thoroughly combine.
- Pour the applesauce mixture into the dry ingredients, mix to combine with a heavy spoon or spatula.
- Stir in the cranberries and pecans.
- Pour the batter into an 8 x 8" pan and bake for 30 minutes or until set and browned.
- Remove from the oven and let cool for about 10 minutes then cut into squares and serve warm
- You can pour maple syrup on top of the oatmeal square once served.
- Cover any leftovers and store them in the refrigerator for up to a week for an easy grab-and-go breakfast.

- Preheat the oven to 375 degrees. Mix together the oats, salt, baking powder, and cinnamon. In another bowl, stir together the applesauce, almond milk, eggs, brown sugar, maple syrup, and vanilla extract.
- Combine the dry and wet ingredients. Fold in the cranberries and apples. Pour into a baking dish ( I used a 9 X 9 dish for 6 servings) sprayed with cooking spray.
- Bake for 45 minutes until the oatmeal is golden brown and a toothpick comes out clean from the center. Let cool slightly and serve.

CRANBERRY APPLE OATMEAL
I made this one morning in an effort to use up leftover cranberries from Thanksgiving. It's filling, healthy, and delicious! If you generally make oatmeal with milk instead of water, don't! The acid in the cranberries will make the milk separate. I tried it. It will still taste okay, but it won't look very pretty.

- Lightly coat an 8-inch square (2-quart) baking dish with cooking spray. Whisk together eggs, milk, vanilla, apple pie spice, salt, 1/2 cup of the brown sugar, and 5 tablespoons of the melted butter in a large bowl. Add apple cubes, 3 cups of the oats, 1/2 cup of the pecans, and 1/2 cup of the cranberries; stir to combine. Pour mixture into prepared baking dish; cover with plastic wrap.
- Stir together remaining 1/4 cup brown sugar, 3 tablespoons melted butter, 1/2 cup oats, and 1/2 cup pecans in a medium bowl. Cover with plastic wrap. Place covered baking dish and covered bowl in refrigerator; chill 8 hours or overnight.
- Preheat oven to 350°F. While oven preheats, remove baking dish and bowl from refrigerator; remove plastic wrap. Stir apple-oat mixture in baking dish to redistribute wet ingredients. Sprinkle top evenly with oat-pecan topping mixture.
- Bake in preheated oven until mixture is set in the middle and topping is golden brown, about 35 minutes. Remove from oven, and sprinkle with remaining 1/2 cup dried cranberries. Cool 10 minutes. Serve warm.
