4 cups 1/2-inch slices peeled apples (about 4 medium)
1 cup fresh or frozen cranberries
1 teaspoon grated orange peel
1/2 cup granulated sugar
3/4 cup old-fashioned oats
1/2 cup packed brown sugar
1/2 cup Gold Medal™ all-purpose flour
1/2 cup butter or margarine, softened
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 375°. Toss apples, cranberries, orange peel and granulated sugar in large bowl.
  • Mix remaining ingredients in medium bowl until crumbly. Press 1 cup of the oat mixture in ungreased square baking dish, 8x8x2 inches. Spread apple mixture over top. Sprinkle with remaining oat mixture.
  • Bake 40 to 45 minutes or until golden brown and apple mixture is bubbly around edges. Cool 30 minutes. Serve warm.

Original recipe is a twist on my Mom's version. Fast and easy dessert, great for fall season when apples are freshest and the cranberries come in. I have made it without the apples or using frozen cranberries. I enjoy it as a dessert and as a breakfast treat around the Thanks-Mas season. Loaded with antioxidants! I have also made a wheat-free version using nut flour. Serve plain or topped with ice cream, whipped cream, or a drizzle of heavy cream.

1 (12 ounce) package fresh cranberries
2 apples, or more to taste, cut into 1-inch pieces
½ cup raisins
¼ cup walnuts
1 ¼ cups white sugar, divided
ground cinnamon
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 egg
¼ cup butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x9-inch glass baking pan.
  • Mix cranberries, apples, raisins, and walnuts gently in the baking pan. Sprinkle with 1/4 cup sugar and cinnamon.
  • Combine remaining sugar with flour, baking powder, salt, egg, and butter in a medium bowl. Mix until crumbly. Spread topping over the apple mixture.
  • Bake in the preheated oven until topping is golden and inside is bubbling, about 50 minutes. Remove from oven and let cool for 5 to 10 minutes.

2/3 cup diced peeled tart apple
1/4 cup dried cranberries
Sugar substitute equivalent to 4 teaspoons sugar
2 teaspoons 100% orange marmalade spreadable fruit
1-1/2 teaspoons all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
4 sheets phyllo dough, (14 inches x 9 inches)
2 tablespoons butter, melted
1/4 teaspoon confectioners' sugar

Steps:

  • In a small bowl, combine the first seven ingredients; set aside. Place one sheet of phyllo dough on a work surface; lightly brush with butter (keep remaining phyllo dough covered with plastic wrap and a damp towel to keep from drying out). Fold dough in half widthwise, making a 9-in. x 7-in. rectangle; lightly brush with butter. Cut dough in half lengthwise, making two 9-in. x 3-1/2-in. strips. , Place 1 heaping tablespoon of apple mixture on the lower corner of each strip. Fold dough over filling, forming a triangle. Continue folding, like a flag, to the end of the strip. Lightly brush with butter, making sure all edges are sealed. Repeat with remaining phyllo dough and filling to make six more turnovers. , Place turnovers on a baking sheet lightly coated with cooking spray. Bake at 375° for 16-20 minutes or until golden brown. 1 pound sliced country white sandwich bread
1 large cooking apple, such as Gravenstein, or Golden Delicious
1 medium onion
2 ribs celery with leaves
1/2 cup dried apricots
Handful fresh flat-leaf parsley leaves
1/4 cup dried cranberries
2 to 3 sprigs fresh thyme
1/2 teaspoon kosher salt
Pinch fennel seeds, optional
3 cups chicken broth (about 1 1/2 small cans)
1 large egg
2 tablespoons turkey or chicken pan drippings or melted butter

Steps:

  • Preheat oven to 325 degrees F. Butter a shallow 3-quart casserole.
  • Cut or tear bread into bite-size pieces. Lay bread pieces in a single layer on 1 or 2 baking sheets. Bake until slightly dry and crisp, about 15 to 20 minutes. Cool.
  • Peel, core, and coarsely chop the apple. Coarsely chop the onion, celery, and apricots. Chop the parsley.
  • Melt the 6 tablespoons butter in a large skillet over medium-high heat. Add the apple, onion, celery, apricots, cranberries, thyme, salt, and fennel seeds; cook until soft, about 5 minutes. Add the broth and parsley and bring to a boil. Remove from the heat.

4 Granny Smith apples, peeled and sliced
3/4 cup of leftover cranberry sauce or canned whole cranberry sauce
2 Tablespoons flour (if your cranberry sauce is runny)
1 cup all-purpose flour
1/2 cup old fashioned roll oats
1/3 cup white sugar
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter, melted (1 stick)

Steps:

  • Preheat oven to 350*F Combine apples and cranberry sauce. Mix well. If cranberry sauce is runny, add 2 Tablespoons Flour and mix well. Place sliced apples in a 8x8 casserole dish. In a separate bowl, mix 1 cup flour, oats, white sugar, brown sugar, cinnamon and salt. Add melted butter and mix well. Crumble oat mixture on top of apples. Bake for 35 - 40 minutes or until apples are cooked through and tender to a toothpick. Remove from oven and allow to cool for 5 - 10 minutes then serve.

Steps:

  • Melt butter in a large skillet over medium heat.
  • Add apples through cinnamon; cook, stirring frequently, 5 minutes.
  • Add apricot preserves and dried cranberries with 1/4 cup water.
  • Cook, stirring, about 4-5 minutes until apples are tender; remove from heat and let cool (sauce should thicken).
  • Separate biscuit dough into 8 rounds and use a rolling pin to roll each out to a 6-inch circle.
