Apple Crisp image

Apples bubbling in their own juices, topped with a crunchy oat-pecan streusel -- this apple crisp is the ultimate fall dessert.

¼ cup plus 2 tablespoons all-purpose flour
¼ cup plus 2 tablespoons light brown sugar, packed
½ cup plus 2 tablespoons granulated sugar, divided
Pinch salt
6 tablespoons very cold unsalted butter, cut into ½-inch dice
1 cup chopped pecans
½ cup old-fashioned rolled oats
2½ pounds tart baking apples (about 5 large), peeled, cored and sliced ¼-inch thick
Lightly sweetened whipped cream or vanilla ice cream, for serving (optional)

Steps:

  • Preheat the oven to 350°F.
  • In a food processor, pulse the flour with the brown sugar, ¼ cup of the granulated sugar and salt until combined. Add the butter and pulse until the mixture resembles coarse meal. Transfer the crumbs to a bowl and stir in the pecans and oats. Set aside.
  • Generously butter a shallow 2-quart baking dish. In a medium bowl, toss the apples with the remaining 6 tablespoons granulated sugar. Transfer the apple mixture to the prepared baking dish and cover with the oat topping. Bake in the middle of the oven for 40-50 minutes, or until the apples are tender when pierced and the topping is toasted. Serve warm with vanilla ice cream if desired.
  • Freezer-Friendly Instructions: The crisp can be frozen tightly covered for up to 3 months. Before serving, reheat it, uncovered, in a 300°F oven until heated through and crisp on top.

3/4 cup Gold Medal™ all-purpose flour
3/4 cup old-fashioned oats
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup cold butter, cut in pieces
6 cups chopped (3/4-inch pieces) peeled tart apples (6 medium)
1/2 cup granulated sugar
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon ground cinnamon
1 teaspoon lemon juice

Steps:

  • Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In medium bowl, mix 3/4 cup flour, the oats, brown sugar and 1/2 teaspoon cinnamon until blended. Cut in cold butter, using fork or pastry blender, until mixture is crumbly. (Do not overmix.) Set aside.
  • In large bowl, mix Filling ingredients until well coated. Spread evenly in baking dish. Sprinkle streusel over top.
  • Bake 30 to 35 minutes or until topping is golden brown and juices are bubbling along edges.
  • Cool at least 20 minutes before serving.

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

I started with recipe #1423 and made enough adjustments to have a new recipe that perfectly suits my tastes. One big change is that I tossed the apples in cinnamon sugar. I hope you enjoy it as much as I did. Don't forget the vanilla ice cream and thanks to Whtsebring for the original recipe.
