Bourbon-BBQ Glazed Baby Back Ribs image

Slow-cooked ribs, roasted to perfection, finished on the grill with a bourbon-BBQ sauce from Dan Seidman of The Chef Dan.

1 rack baby back pork ribs, outer membrane removed
4 ounces apple juice
Reynolds Wrap® Aluminum Foil
2 tablespoons brown sugar
1 tablespoon sea salt
1 tablespoon freshly cracked black pepper
¼ tablespoon garlic powder
¼ tablespoon onion powder
¼ tablespoon ground coriander
¼ tablespoon dry mustard
⅛ tablespoon cayenne pepper
½ cup ketchup
¼ cup bourbon whiskey
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
½ tablespoon Dijon mustard
1 ½ tablespoons brown sugar
1 tablespoon molasses
1 clove garlic, finely minced
½ tablespoon soy sauce
1 teaspoon onion powder
1 teaspoon freshly cracked black pepper
1 pinch sea salt

Steps:

  • Combine all the ingredients for the dry rub in a small bowl and mix together well.
  • Tear a large enough piece of Reynolds Wrap® Aluminum Foil to place rack of ribs on it and be able to fully cover, meat side up. Evenly coat both sides of the ribs with the dry rub, pressing it in with your hands.
  • Fold up the sides of the foil to create a rim, and pour the apple juice in around the ribs. Fold the foil over the ribs and crimp it to create a tight seal. Tear off one more piece of large foil and wrap the whole thing again to ensure a tight seal.
  • Place the wrapped ribs in the fridge to marinate for 2 hours.
  • Preheat oven to 225 degrees F and cook ribs for about 4 hours. You should be able to easily pierce them with a fork, but they shouldn't be falling off the bone.
  • Combine all the BBQ sauce ingredients in a medium saucepan and bring to a boil over medium heat. Reduce to a simmer and allow the sauce to thicken and reduce by about a third, stirring occasionally.
  • Preheat grill to high heat. Cover the grill rack with Reynolds Wrap® Aluminum Foil. Place the cooked ribs meat side up on the grill and brush the top with a layer of sauce. Close grill until the sauce is mostly dried, about 5 minutes. Brush another layer of sauce on top and close grill for an additional 5 minutes. Remove ribs from grill and lightly brush with one more layer of sauce.
  • Cut the ribs into individual pieces and serve with extra sauce.

  • Pull the membrane off the underside of each rib rack using a towel to grasp the corner. On a rimmed baking sheet, rub the ribs with the remaining spice mix; bake, meaty side up, for 2 1/2 hours. Pour the cider mixture over the ribs and turn to coat. Tightly cover with foil and bake for 1 hour.
  • Light a grill. Uncover the ribs and brush with the barbecue sauce; grill over moderate heat, turning and brushing, until glazed, 15 minutes. Let rest for 10 minutes, then cut between the bones and serve.

This is a recipe that I did a couple of years ago. It takes some time, but it's worth it.

4 cups barbeque sauce
4 cups applesauce
4 pounds baby back pork ribs
salt and black pepper to taste
cayenne pepper to taste
garlic powder to taste

Steps:

  • Mix the barbeque sauce and applesauce in bowl. Place ribs on a large sheet of heavy duty aluminum foil, and rub on all sides with the salt, pepper, cayenne pepper, and garlic powder. Pour sauce over ribs to coat. Seal ribs in the foil. Marinate in the refrigerator 8 hours, or overnight.
  • Preheat grill for high heat.
  • Place ribs in foil on the grill grate, and cook 1 hour. Remove ribs from foil, and place directly on the grill grate. Continue cooking 30 minutes, basting frequently with the sauce, until ribs are done.

1 lb rack of baby-back pork ribs, cut in half
1 cup ketchup
1/4 cup apple cider vinegar
3 tablespoons dark brown sugar
3 tablespoons Worcestershire sauce
1 teaspoon liquid smoke
1/2 teaspoon salt

Steps:

  • Place ribs in a large pot and fill pot with enough water to cover ribs.
  • Bring water to a boil, reduce heat, cover and simmer for 1 hour, or until ribs are fork tender.
  • While ribs are boiling, combine remaining ingredients in a medium saucepan and bring to a boil.
  • Reduce heat and simmer, uncovered, stirring often, for 30 minutes or until slightly thickened.
  • Place boiled ribs, meat side down, on a broiler pan.
  • Brush with half the sauce mixture and broil 4" to 5" from heat for 6-7 minutes.
  • Turn ribs over, brush with remaining sauce, and broil additional 6-7 minutes, or until edges are slightly charred.
  • If you like your ribs falling off the bone, add 1 cup of apple cider vinegar to water before placing ribs to boil.

1/4 teaspoon crushed red pepper flakes

2 racks pork baby back ribs

Steps:

  • Preheat oven to 325 degrees F.
  • Stir together maple syrup, apple cider, raspberry preserves and crush red pepper flakes to form glaze.
  • Season pork ribs with salt and pepper.
  • Place ribs on a rack, bone side down, and bake for 40 minutes.
  • Brush ribs, on both sides with glaze; bake 15 minutes.
  • Brush ribs, on both sides again, with glaze; bake an additional 15 minutes.
  • Remove ribs to a platter, brush with any remaining glaze, and let rest 15 minutes before cutting and serving.

1 large onion, chopped
1 cup picante sauce
3/4 cup thawed apple juice concentrate
1/2 cup ketchup
1/3 cup packed brown sugar
2 tablespoons Dijon mustard
1 tablespoon soy sauce
2 teaspoons hot pepper sauce

Steps:

  • Cut ribs into serving-size pieces; sprinkle with salt and pepper. Place ribs, meat side up, on a broiler pan. Broil 4-in. from the heat for 5-7 minutes or until browned., Place onion in a 5- or 6-qt. slow cooker; top with ribs. In a small bowl, combine the remaining ingredients; pour over ribs. Cover and cook on low for 6-8 hours or until meat is tender., Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan.
