One of the definitive desserts of fall, apple crisp is easy and economical. Test kitchen tip: Empire, Gala, or Braeburn apples are especially good in this recipe.

- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.

- Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.

The best apple crisp I've ever had. Simple and delish. I adapted this recipe from my mom's. It's very easy to make- the hardest part is peeling the apples.

- Preheat the oven to 350 degrees.
- Spray a 13" x 9" baking pan with a non-stick spray.
- Place the sliced apples in the baking pan. Pour the lemon juice over the apples and mix well so that each apple is covered.
- Add the lemon zest and sugar and mix again so that the apples are coated.
- In another bowl, combine the flour, brown sugar, lemon zest, cinnamon and salt.
- Cut the butter into the topping ingredients until crumbly, then pour the topping over the apples.
- Bake for 35-40 minutes, or until apples are soft and topping is crispy.
- Serve with caramel butterscotch topping and ice cream and enjoy!

- Preheat oven to 350 degrees F (175 degrees C).
- Combine apples, water, lime juice, and 1 1/2 teaspoons white sugar in a pot over medium heat. Stir until well combined. Add 1 teaspoon cinnamon and cook over medium-low heat, stirring occasionally, until apples are softened and water has evaporated, 15 to 20 minutes.

- Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
- Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.
- If you'd like, peel the apples. Cut into 1/2-inch chunks, discarding the seeds and cores. Add to the skillet and drizzle with 1 tablespoon lemon juice for tart apples and 2 tablespoons for sweet-tart and sweet ones. Mix until evenly coated, then spread in an even layer. Crumble the frozen crisp mixture on top. (There will be gaps.)
- Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.

- Preheat the oven to 400°F and grease 4 (8-ounce) ramekins or an 8x8 baking dish with coconut oil.
- Make the filling: Combine the apples, apple cider vinegar, and water in a saucepan and simmer over very low heat, covered, stirring occasionally (making sure the apples don’t burn on the bottom of the pan) for 15 minutes. Uncover, stir, and add the cinnamon, cardamom, ginger, and salt and stir again. The apple should be tender and the juices should be thick.
- Make the topping: In a small bowl, combine the oats, almond flour, walnuts, brown sugar, cinnamon, and salt. Use your hands work in the firm coconut oil until the mixture crumbles. If the mixture is too dry, add a few drizzles of water until the mixture starts to stick together when pinched.
