This savory side dish is cheesy and creamy, perfect for a potluck or a weeknight family dinner. For extra creaminess use any Almond Breeze Almond-Cashew Blend instead of Almond Breeze Original.

Steps:
- Thinly slice 6 Yukon potatoes (we used a mandoline for an even consistent cut).
- In a saucepan, melt butter on medium heat. Add in flour and whisk until smooth. Add bay leaf and begin to add the Almond Breeze while constantly stirring with a whisk. Add garlic, nutmeg, and thyme. Mix in Parmesan cheese and vegetable stock and bring the mixture to a simmer to thicken. Salt and pepper to taste. Remove bay leaf and remove almond milk mixture from heat.
- Preheat oven to 375 degrees F. Grease your casserole dish with a nonstick spray.
- Lay half of the sliced potatoes on the bottom of the casserole dish. Pour half of the Almond Breeze mixture over the the potatoes. Repeat the process until you have a second layer. Spread the Cheddar on top and place casserole dish into the oven. Bake for 45 minutes or until potatoes are tender and fully cooked.

SMOKY SCALLOPED POTATOES
Steps:
- Preheat the oven to 400 degrees F.
- Butter a 13-by-9-inch casserole dish with 2 tablespoons butter.
- Melt the remaining 2 tablespoons butter in a large saucepan over medium heat. Once the butter foams, add the shallot and garlic, and sauté until softened, about 3 to 4 minutes. Season with salt and pepper, and pour in the half-and-half, smoked paprika, and potatoes. Bring to a low simmer. Allow to cook for 5 minutes.
- Pour half of the potato mixture into the buttered casserole dish. Shake the pan to arrange the potatoes in a single layer. Sprinkle half of each of the cheeses on top of the bottom layer. Add the remaining potatoes, and shake again to arrange in a layer. Sprinkle on the remaining cheese, cover with foil, and bake for 45 minutes, or until bubbling. Remove the foil, and place back in the oven for 15 minutes more, or until the potatoes and cheese are golden and browned.
- Let stand 15 minutes before serving.

- Heat oven to 350.
- Blanch potato slices in boiling water for 5 minutes.
- Drain and rinse with cold water.
- Spray a two-quart casserole with oil.
- Make a layer of 1/2 of the potatoes.
- Top with the cheese, onion, and flour.
- Top with the rest of the potatoes.
- Season.
- Slightly heat the milk and pour over the casserole.
- Cover and bake for 50 minutes.
- Uncover and bake for 20 minutes longer (or until lightly brown).
- Serve warm.

SARASOTA'S SUPREME SMOKY SCALLOPED POTATOES & HAM
The best way I know to use up Holiday ham. Now I cook ham all the time, almost once every 6 weeks or less, so I love to keep bags of chopped ham in my freezer. There are so many great uses and this is one. I love to use a smoky gouda for this and a little bacon and onion which just takes this dish over the top. Otherwise it is a pretty basic scalloped potato recipe. Give it a try for dinner one night. I serve this with a fresh salad and nothing more. It is rich, deep in flavors and a perfect way to use up some of that ham in the freezer.

- Bacon -- In a small sauce pan, heat to medium and add the bacon and saute slowly, not butter or oil needed. Just go slowly and crisp until golden brown and crisp. Remove the bacon to a plate lined with a paper towel to drain.
- Onions and Celery -- Now in the same pan with the bacon drippings (just keep 1 teaspoon of the drippings), you don't need any more. Just toss out any additional drippings. Saute your onion and celery until tender. It should take around 4-5 minutes if that on medium heat. Add the bacon and a little salt and pepper and set to the side.
- Ham and Potatoes -- Just have them thin sliced and diced and ready to go.
- Sauce -- In a medium size pot, medium heat, add the butter and melt. Add in the flour and mix well to combine. Cook on medium low until the butter and flour are well combined. Slowly add in the milk and cream while stirring constantly as well as the salt/pepper and cayenne. Stir well and cook on medium heat until the sauce begins to thicken. Add in the cheese (gouda and cheddar) stir until melted. If the sauce is a bit thick, just add a little more milk. I like happen to like mine thick, but my Mom always liked them a bit thinner, so I always added a little more milk when I made it for her. That is just personal taste.
- Casserole -- Spray a 13x9" or any similar casserole dish with non stick spray. Layer 1/3 potatoes, 1/2 the vegetables, 1/2 the ham, 1/2 the cheese sauce; then repeat. Top with potatoes and the remaining 1/2 cup cheese and a sprinkle of paprika for the topping.
- Bake -- I bake mine in a 350 oven for 30 minutes, covered with foil, then uncover and cook another 20-30 minutes until bubbly and golden brown.
SCALLOPED POTATOES WITH SMOKED TURKEY
This is from my Eat Well Stay Well cookbook. I'm typing it up for ZWT II. It is excellent and easy to make. Slice the potatoes as thin as possible and cut the turkey very tiny. This is a great comfort food dish for fall.

- Preheat the oven to 400. Rub a 9 inch glass baking dish with garlic. Discard the garlic.
- Dividing evenly, make alternating layers of potatoes, turkey, ¼ cup of the Parmesan, the flour and salt and pepper.

- Heat oven to 350°. Spray 1 1/2-quart casserole with nonstick cooking spray. Melt margarine in 1 1/2-quart saucepan over medium heat. Stir in flour, mustard, salt and pepper. - When ready to cook, set the Traeger temperature to 375°F and preheat with the lid closed for 15 minutes. Grill: 375 ˚F.
- Spread the butter over the bottom and sides of a 9-inch cast iron skillet. Ingredients. 2 Tablespoon unsalted butter, softened.
- In a medium bowl or liquid measuring cup, combine the cream, milk, flour, and garlic. Ingredients. 1 Cup heavy cream. 1/2 Cup milk. 2 Tablespoon all-purpose flour.
- Layer a quarter of the potatoes in the skillet. Season with salt and pepper, then pour over a quarter of the cream mixture. Repeat with the remaining ingredients to make 3 more layers.
- Place the skillet on the grill grates. Close the lid and cook until the potatoes are nearly fork-tender, about 50 minutes. Grill: 375 ˚F.
- Sprinkle the cheddar cheeses evenly over the potatoes. Close the lid and cook until the cheese is melted and bubbling and the potatoes are completely tender, about 10 minutes more.
