2 pounds ripe Bosc pears (4 pears)
2 pounds firm Macoun apples (6 apples)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

1 medium apple, peeled and chopped
1 medium ripe pear, peeled and chopped
1 tablespoon brown sugar
2 teaspoons all-purpose flour
1-1/2 teaspoons lemon juice
1/2 teaspoon apple pie spice
TOPPING:
1 tablespoon all-purpose flour
1 tablespoon butter, melted
1 tablespoon brown sugar
1/4 teaspoon apple pie spice
1/3 cup old-fashioned oats
2 tablespoons chopped pecans

Steps:

  • In a small bowl, combine the first six ingredients. Divide between two greased 8-oz. ramekins., In a small bowl, combine the flour, butter, brown sugar and pie spice; stir in oats and pecans. Sprinkle over fruit mixture., Bake at 375° for 18-22 minutes or until bubbly and golden brown. Serve warm.

1/2 cup packed brown sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 firm ripe medium pears, peeled, sliced (6 cups)
1/4 cup sweetened dried cranberries
1/4 cup dark rum, apple juice or apple cider
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup cold butter or margarine, cut into pieces
1/2 cup quick-cooking oats

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 8-inch square (2-quart) glass baking dish with butter or cooking spray.
  • In large bowl, stir together 1/2 cup brown sugar, 3 tablespoons flour, 1/2 teaspoon cinnamon and the nutmeg. Add pears, cranberries and rum; stir to coat fruit with sugar mixture. Spread in baking dish.
  • In medium bowl, mix 1/2 cup flour, 1/2 cup brown sugar and 1/2 teaspoon cinnamon. Cut in butter, using pastry blender or fork, until mixture looks like fine crumbs. Add oats; stir until crumbly. Sprinkle evenly over fruit mixture.
  • Bake 40 to 45 minutes or until pears are tender when pierced with a fork and topping is golden brown. Serve warm or at room temperature.
