APPLE PECAN CREPES
This is a very easy, quick and delicious brunch item. When they taste the nutty apple pie filling tucked inside the creamy vanilla sauce draped over the tender crepes, everyone "oohs" and "aahs" between bites. Prepare a big batch-people tend to go back for seconds and even thirds!

- Preheat oven to 375°. In a small bowl, combine pie filling, pecans and cinnamon. Spread 2 rounded tablespoonfuls down the center of each crepe; roll up tightly. , Place in a greased 13x9-in. baking dish. Bake, uncovered, 10-14 minutes or until heated through., Meanwhile, in a microwave-safe bowl, combine egg, cream, sugar and extracts. Cover and microwave at 50% power for 3-1/2 to , 4-1/2 minutes or until thickened, stirring after each minute. Cool. Serve with crepes.

APPLE CREPES

- Crepes:
- Put the eggs, water, and 1/2 cup milk in a large bowl. Whisk until combined. Add the flour, cinnamon and salt and again whisk until combined. Whisk in the melted butter.
- Refrigerate the batter for at least 1/2 hour.
- Heat a 6-inch non-stick pan over medium heat. Pour 2 tablespoons crepe batter into the pan and quickly rotate the pan so the batter forms a thin layer over the bottom of the pan. (Return excess batter to the remaining batter.) Cook the crepe for 1 to 2 minutes until it is golden brown. Loosen the edge of the crepe with a knife and using your fingers, invert the crepe and cook the other side for about 10 seconds.
- Continue cooking crepes until you have at least 12.
- Make sure the crepes are cool and then cover them with plastic wrap. Refrigerate until you are ready to serve them.
- Apple Balls:
- Peel the apples. Using a melon baller, scoop out the apple balls making sure you do not scoop into the core. Make 42 balls total.
- Combine the cider, sugar, and water in a medium-sized saucepan. Bring the mixture to a boil and boil for about 30 seconds until the sugar dissolves.
- Reduce the cider mixture to a gentle boil. Place the apple balls in the cider syrup and cover them with parchment paper or a cloth towel. Poach the apple balls for about 5 minutes until the are soft. Be careful not to over-poach them as you want them to retain their shape. Poaching timing will depend on the variety of apple being used.
- Remove the apples from the cider syrup, reserving the syrup. The apples can be poached ahead of time.
- Plating:
- Place the cider syrup in a large saute pan over medium heat. Place the crepes 1 at a time in the liquid, folding them into quarters once they have been coated with the syrup. Heat the crepes until they are warmed through.
- Place 2 crepes on each plate. Increase the heat to high and add the lemon juice, Calvados, salt and butter. Cook until the sauce thickens slightly. While the sauce is cooking place a pile of apple balls on top of the crepes in the middle of each plate. Pour the sauce over the crepes. Top with a tablespoon of creme fraiche. Serve immediately.
APPLE CREPES
Steps:
- Peel the apples and core them. Quarter each and cut each quarter in 4 equal slices.
- Preheat oven to high broil. Place flour in a mixing bowl. Add sugar, egg and vanilla while stirring with a wire whisk. Add cream and beat to make batter as smooth as possible.
- Heat 1 teaspoon of butter in an 8-inch nonstick skillet. Add 4 slices of apple and brown lightly on both sides on medium heat. Arrange the slices in center forming a star. Pour one-quarter of the batter evenly over the apples, keeping star intact. Cook about one minute or more until light brown.
- Transfer to plate, reversing the crepe. Continue making crepes with remaining ingredients. Pour a little warm sauce over all.
APPLE-PECAN CAKE

- Preheat oven to 350 degrees. Butter a 9-inch square baking pan. Line with parchment paper, leaving a 2-inch overhang on two sides. Butter parchment. In a medium bowl, toss apple and pecans with 2 tablespoons flour to coat. In a large bowl, whisk together remaining flour, baking powder, nutmeg, and salt. In a small bowl, combine applesauce and yogurt.
- In another large bowl, using an electric mixer, beat butter, granulated sugar, and orange zest on high until light and fluffy, 3 minutes, scraping down bowl as needed. Beat in eggs, one at a time, until combined. With mixer on low, add flour mixture in three additions, alternating with two additions applesauce mixture, and beat to combine. Fold in apple mixture. Transfer batter to pan and smooth top.
- Bake until golden and a toothpick inserted in center comes out clean, about 50 minutes. Let cool in pan on a wire rack, 20 minutes. Using parchment, lift cake from pan. Dust with confectioners' sugar before serving.

Nickie, my boss, made this cheesecake and brought to work. Everyone raved about it, and it is to die for! I know of no one who does not like it, although it may not be so beautiful to look at.

- Preheat oven to 325 degrees F (165 degrees C). Line a 9x13 inch baking dish with aluminum foil, extending the foil sheets over the side of the dish.
- To make the crust, mix the graham cracker crumbs, butter, and 2 tablespoons brown sugar together in a bowl until evenly blended. Press evenly over the bottom of the prepared baking dish.
- To make the filling, beat the cream cheese, 1 cup brown sugar, and vanilla together in a mixing bowl until evenly blended. Beat in the sour cream. On low speed, add the eggs, one at a time, just until blended. Pour the mixture over the crust.
- To make the topping, place the apples in a bowl, and toss with 1/2 cup brown sugar, pecans, and cinnamon until evenly blended.
- Bake in preheated oven until center is almost set, about 55 minutes. Cool, and refrigerate 4 hours, or overnight.
- Before cutting, allow the cheesecake to sit 30 minutes at room temperature, then lift from the baking dish using the extended aluminum foil sheets, and place on a cutting board or serving plate. Remove the aluminum foil, and cut into 16 squares.

- Whisk eggs and salt together in a bowl. Gradually stir flour into eggs, alternately with 2 cups milk until fully incorporated. Beat 1/4 cup vegetable oil and 1/2 teaspoon cinnamon into flour mixture. Refrigerate batter for at least 1 hour.

- Preheat oven to 350.
- To make the filling--In a 9-inch pie pan that's 2 inches deep (or a similar baking pan), toss the apples with the sugar to taste, cinnamon, and flour.
- To make the topping--In a medium bowl, mix together all the topping ingredients with your fingers or a pastry cutter until small pebbly pieces of butter are distributed throughout the mixture.
- Sprinkle the entire mixture over the apples.

- Roll out dough to a 12-inch round on a lightly floured work surface. Transfer to a 9-inch pie plate. Trim edges, leaving a 1/2-inch overhang. Fold edges of dough under itself until flush with edge of dish. Crimp edges with fingers, the tines of a fork, or a spoon. Refrigerate until firm, about 30 minutes. Meanwhile, make crumb topping.
- Crumb Topping: Combine flour, pecans, brown sugar, and salt in a medium bowl. Massage butter into flour mixture with your fingers until mixture clumps together and no dry flour remains. Press into bottom of bowl and refrigerate until firm, about 20 minutes.
- Filling: In a large bowl, toss apples and pecans with flour, sugar, cinnamon, and salt until evenly coated. Stir together lemon juice and vanilla, drizzle over apple mixture, and toss to evenly coat.
- Preheat oven to 375 degrees with racks in middle and lower third positions. Place a parchment-lined rimmed baking sheet on lower rack. Pour apple mixture into crust. Break up topping into large pieces and sprinkle evenly over filling. Bake on center rack until bubbly and crust is golden brown, 1 1/4 to 1 1/2 hours. (If crust and crumb topping brown too quickly, tent with foil.) Let cool completely on a wire rack before slicing and serving.

- Whip together the cream cheese, the heavy whipping cream, and the powdered sugar to form a whipped cream. Let chill.
- Line a cake pan with 6 crepe, letting them fall over the sides. Spread a layer of the cream cheese whipped cream on the bottom and cover with a crepe. Add a layer of the whipped cream, then a layer of diced apples, and then a layer of whipped cream. Top with a crepe and a layer of whipped cream. Spread the remaining crepes with whipped cream. Roll up 8 crepes and spiral them in the dish. Cover with whipped cream, the last crepe, then another layer of whipped cream. Close the cake with the overhanging crepes. Remove the springform pan and place on a serving platter. Form a flower with apple slices on top of the crepe cake.
- Melt half of the sugar in a saucepan over medium heat. Add the remaining of the sugar, heavy whipping cream, and butter. Beat until caramel forms, then add the pecans. Mix and spread in the bottom of the springform pan to form a disc. Let cool and harden.
- Cut a star out a star from the cap of a plastic bottle. Cut the bottle in half and keep only the neck. Cut out one of the bottom corners of the Ziploc bag and insert the bottle top into it to form a piping bag. Fill with the remaining whipped cream. Use the piping bag to pipe whipped cream around the edge of the cake. Place the pecan disc on top of the apples. Add a drizzle of caramel over the piped whipped cream. Cut into slices and enjoy.
