UPSIDE-DOWN APPLE PECAN PIE
This is by far the best apple pie I've ever had, and anyone who likes apple pie who has tried it agrees, this is a wonderful variation of an all-American favorite. Enjoy with a scoop of vanilla ice cream.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a 9 inch deep-dish pie pan, combine pecans, brown sugar and margarine; spread into a single layer. Roll out dough, and place bottom crust over pecan mixture.
- In a large bowl, combine apples, sugar, flour, cinnamon and nutmeg. Pour into crust in pan. Top with second crust. Fold edges of crust over, and flute to seal edges. Make several small slits in the top to allow steam to escape.
- Place pan on foil or cookie sheet during baking to guard against spillage. Bake in preheated oven for 40 to 50 minutes, or until crust is golden brown and apples are tender.
- Cool pie in pan for 5 minutes. Place serving plate over pie, and flip to invert, being careful not to come in contact with molten sugar. If some of the nuts stick to the pan, remove them with a knife, and place on pie. Allow to cool for 1 hour.

- Roll out dough to a 12-inch round on a lightly floured work surface. Transfer to a 9-inch pie plate. Trim edges, leaving a 1/2-inch overhang. Fold edges of dough under itself until flush with edge of dish. Crimp edges with fingers, the tines of a fork, or a spoon. Refrigerate until firm, about 30 minutes. Meanwhile, make crumb topping.
- Crumb Topping: Combine flour, pecans, brown sugar, and salt in a medium bowl. Massage butter into flour mixture with your fingers until mixture clumps together and no dry flour remains. Press into bottom of bowl and refrigerate until firm, about 20 minutes.
- Filling: In a large bowl, toss apples and pecans with flour, sugar, cinnamon, and salt until evenly coated. Stir together lemon juice and vanilla, drizzle over apple mixture, and toss to evenly coat.
- Preheat oven to 375 degrees with racks in middle and lower third positions. Place a parchment-lined rimmed baking sheet on lower rack. Pour apple mixture into crust. Break up topping into large pieces and sprinkle evenly over filling. Bake on center rack until bubbly and crust is golden brown, 1 1/4 to 1 1/2 hours. (If crust and crumb topping brown too quickly, tent with foil.) Let cool completely on a wire rack before slicing and serving.

- Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In large bowl, mix flour, 3/4 cup brown sugar, cinnamon and baking soda.
- With pastry blender or fork, cut in 3/4 cup butter until mixture resembles coarse crumbs. Stir in apples and egg. Press mixture firmly in pan. Bake 25 to 30 minutes or until puffed in center.
- Meanwhile, in 1-quart saucepan, combine all topping ingredients except whipped topping. Cook over medium heat, stirring frequently, until mixture comes to a boil. Boil 1 minute, stirring constantly. Remove from heat.
- Remove apple layer from oven. Drizzle hot topping over warm apple layer; spread evenly. Return to oven; bake 4 to 6 minutes longer or until topping is bubbly. Cool completely, about 1 1/2 hours. With serrated knife, cut into squares. Serve with whipped topping.

- Adjust rack to lower third of oven and preheat oven to 375 degrees F. DOUGH: Put the flour, sugar, and salt in a food processor bowl. Process just to blend the ingredients. Add the butter pieces all at once, and process with on/off bursts until the mixture has the consistency of cornmeal. Whisk the egg and vanilla together in a small bowl. With the motor on, pour the egg mixture down the feed tube. Process just until the ingredients form a ball. Divide the dough into eight pieces and scatter them over an ungreased 10x15x1" cool baking pan. With floured fingertips, pat the dough to extend the portions to cover the pan as evenly as possible. Bake for 10 minutes. don't allow the dough to color. Remove from oven. Reduce oven temperature to 350 degree F. TOPPING: Combine the butter, honey, and sugars in a heavy-bottomed 1 1/2 qt saucepan. Heat over med-low heat until butter melts; then raise heat to medium and bring the mixture to boil. Without stirring, allow mixture to boil only 1 minute. Turn off heat, stir in the cream, nuts, and zest. Pour over bottom crust; return crust to oven. Bake for 30-35 minutes, or until the topping is an amber color. Topping will bubble toward the end of baking. Place on a wire rack to cool to allow the topping to firm before cutting. Using a ruler as a guide and small paring knife, make marks at 2" intervals on the long sides. Cut along the diagonals to form diamond-shaped bars. After cutting, cover baking pan with aluminum foil and store up to 4 days at room temperature. Seal the foil around the rim of the pan without letting the foil touch and disrupt the topping's glossy surface.

- To prepare the dough, put the butter, sugar, shortening, egg yolks and vanilla extract in a mixing bowl and beat to blend well.
- Sift the flour, baking powder and salt together and fold this into the butter mixture. Shape into a soft ball. Wrap in plastic wrap and chill overnight.
- Be advised that the pastry in this recipe may crack or fall slightly apart when it is transferred to a baking dish. If it does, it may be patched with the fingers.
- Have ready a rimmed baking dish measuring about 8 by 12 inches. Remove the ball of dough from the refrigerator and let it stand to soften briefly, about 10 to 15 minutes. Shape the dough by hand into a rectangle measuring about 4 by 8 inches.
- Lay out a length of clear plastic wrap on a flat baking sheet and place the dough in the center. Cover with a second length of clear plastic wrap and roll the dough out into a rectangle measuring about 8 by 12 inches. Remove the top layer of plastic wrap. Invert the baking dish over the dough and quickly turn both the baking dish and the dough, letting the dough fall into the dish to cover the bottom of it. If the dough breaks or falls apart, it may be patched with the fingers with bits of dough.
- Meanwhile, preheat the oven to 350 degrees.
- Prick the dough all over with the tines of a fork.
- Bake the dough for 10 minutes. Let it cool while you prepare the filling. Let the heat in the oven remain constant at 350 degrees.
- To prepare the filling, combine the butter, honey, granulated sugar and brown sugar in a saucepan and bring to the boil. Cook, stirring, exactly three minutes.
- Remove from the heat and let cool. Fold in the pecans and stir in the cream. Blend well and immediately pour onto the baked crust. Spread evenly over the crust. It is advisable to cover the bottom of the oven with aluminum foil to catch any drippings. Place in the oven and bake 35 minutes. Let cool completely. Run a knife around the outside edge of the candy. It may be unmolded. Cut the candy into diamond shapes.

- For the crust:.
- Combine flour, baking powder& salt, set aside.
- Cream butter,sugar and shortening until light and fluffy.
- Add egg and vanilla and beat until well combined.
- Add dry ingredients, stirring until dough forms a ball.
- Wrap dough and refrigerate overnight.
- Preheat oven to 375°F Between 2 sheets of waxed paper roll the dough into a 15x10 inch rectangle 1/8 inch thick.
- Remove top sheet of waxed paper and invert onto a 15x10 inch jelly roll pan.
- Remove remaining wax paper and if necessary, patch the dough.
- Prick the dough liberally with a fork to prevent shrinkage during baking, and bake 10 minutes (DO NOT BROWN).
- Cool completely and reduce oven temperature to 350°F.
- For the Filling:.
- In a large saucepan combine butter, honey,and both sugars and bring to a boil over medium heat.
- Stir in nuts and mix thoroughly.
- Stir in cream and mix thoroughly.
- Set cooled partially baked crust into a pan of the same size (this is necessary to prevent burning of the crust while topping caramelizes).
- CAREFULLY spread pecan mixture over partially baked crust (mixture will be extremely hot and can severly burn you).
- Bake 35 minutes in 350F oven.
- Cool completely in pans on wire rack.
- Once cool cut crosswise into 1 1/2 inch stips, then cut diagonally at 2 inch intervals to form diamonds.
- **It is recommended that you do not use dark coated baking pans for this recipe.
- If you must, shorten baking time by at least 10 minutes.

My favorite apple cake is made with a shot of brandy and drizzled with caramel to set off the wonderful flavors. If alcohol is a no-go, use orange juice instead of apple brandy. - In a large, heavy-bottomed saucepan, melt butter over medium heat. Stir in apples, lemon juice, granulated sugar, cinnamon, and salt; cover and cook until apples have softened but are not falling apart, about 8 minutes. Add flour and cook, uncovered, until juices have thickened, about 2 minutes. Transfer to a 9-by-13-inch baking dish; let cool completely.
- On a lightly floured piece of parchment, roll out 1 disk of dough into a 13-inch round, about 1/8 inch thick. Fit into a 9-inch pie dish. Refrigerate until firm, at least 30 minutes. Meanwhile, roll out remaining disk of dough on a lightly floured piece of parchment to a 13-inch round, about 1/8 inch thick. Transfer on parchment to a baking sheet. Refrigerate until firm, about 30 minutes.
- Place apple mixture in prepared pie dish; spread in an even layer. Lightly brush rim of bottom dough with water.

This delicious pie is a hit at Thanksgiving, or anytime, really! It's a combination/adaptation of the Basic Flaky Pie Crust, Apple Pie by Grandma Ople, and Upside-Down Apple Pecan Pie.

- Whisk 2 1/2 cups flour and salt together in a bowl. Cut in shortening with 2 knives or pastry blender until the mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, tossing with a fork, until flour mixture is moistened and dough comes together. Do not add more water than you need. Divide the dough in half and shape into 2 balls. Wrap in plastic wrap and refrigerate, at least 30 minutes.

- Melt 1/2 cup unsalted butter in a saucepan over medium heat. Stir in 3 tablespoons flour to form a paste. Reduce heat and simmer until filling mixture is thickened slightly, about 3 minutes.
- Melt 1/3 cup butter in a separate saucepan over low heat. Add 1/2 cup brown sugar and whisk until smooth, about 2 minutes. Stir in pecans.
- Spread pecan mixture evenly onto lined pie pan. Roll out one ball of dough; line pie pan over pecan mixture. Toss apples with filling mixture; pour into pie plate. Roll out second ball of dough and place over apple filling. Crimp edges of bottom and top crusts together. Cut several small slits into top crust to vent. Place pie on foil-lined baking sheet.
- Bake pie in the preheated oven until crust is golden brown, about 1 hour.
- Remove pie from oven and allow to cool slightly, 5 to 10 minutes. Place a serving plate gently over pie and carefully flip to invert, being careful not to come in contact with molten sugar. Peel off waxed paper; cool for 1 hour.
