GERMAN APPLE PANCAKE
Also known as a Dutch baby, this is a terrific 'special day' recipe. If you are strapped for time, you can start it the evening before and pretty much pop it in the oven. The presentation is excellent! You can shorten the preparation time by using apple pie filling, but the crisp of new apples really makes it.

- In a large bowl, blend eggs, flour, baking powder, sugar and salt. Gradually mix in milk, stirring constantly. Add vanilla, melted butter and 1/2 teaspoon nutmeg. Let batter stand for 30 minutes or overnight.
- Preheat oven to 425 degrees F (220 degrees C).
- Melt butter in a 10 inch oven proof skillet, brushing butter up on the sides of the pan. In a small bowl, combine 1/4 cup sugar, cinnamon and 1/2 teaspoon nutmeg. Sprinkle mixture over the butter. Line the pan with apple slices. Sprinkle remaining sugar over apples. Place pan over medium-high heat until the mixture bubbles, then gently pour the batter mixture over the apples.
- Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and bake for 10 minutes. Slide pancake onto serving platter and cut into wedges.

PANNEKOEKEN (APPLE PIE PANCAKE/GERMAN)
I was watching Diners, Drive-ins and Dives and this was made and looked too good. Luckily it was submitted for publishing on the site and wasn't on food.com. This is a recipe courtesy of Maria Bayer, Magnolia Pancake Haus. People eat it for breakfast at the restaurant but could also be served as a dessert.

- Preheat the oven to 400 degrees F.
- Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
- Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
- Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
- Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!

APPLE PIE GERMAN PANCAKES WITH LUCKY LEAF PIE FILLING

- Preheat oven to 425. Spray a 9 x 9 inch pan with non stick spray. Spread the Lucky Leaf Pie Filling, butter, and cinnamon in 9 x 9 inch baking dish and set in oven while it heats up.
- Blend eggs with a whisk, mix in milk. Whisk in flour and salt. When oven is ready, pour mixture over Apple Pie Filling and bake for 15 min.
- Reduce heat to 350 and bake 15 min more.
- Let cool slightly before serving with powdered sugar and syrup.
DELORES'S APPLE PUFF PANCAKE PIE
Steps:
- Preheat the oven to 450 degrees and set out a deep 10-inch ovenproof skillet (cast-iron is best). In a small bowl, mix the granulated sugar with the cinnamon and set aside.
- In a medium-sized bowl, lightly whisk the eggs, milk and lemon zest. Blend in the flour just until mixed (the batter will be slightly lumpy).
- In the skillet, melt 1/4 cup of the butter over medium heat. Add the apples and saute for 5 minutes or until tender. Pour the egg batter over the apples and transfer the skillet to the oven. Bake for 20 minutes or until the apples are tender and the pie puffs up high.
- Meanwhile, melt the remaining 1/4 cup butter. Remove the skillet from the oven, drizzle the puff pie with the butter and sprinkle with the cinnamon-sugar mixture. Return the pie to the oven for 5 minutes or until the sugar mixture is bubbly. Sprinkle with a little confectioners' sugar and serve immediately, right from the skillet.

- Preheat a 10-in. cast-iron skillet in a 425° oven. Meanwhile, in a blender, combine the eggs, milk, flour, salt and nutmeg; cover and process until smooth. , Add butter to hot skillet; return to oven until butter bubbles. Pour batter into skillet. Bake, uncovered, for 20 minutes or until pancake puffs and edges are browned and crisp. , For topping, in a skillet, combine the apples, butter and sugar; cook and stir over medium heat until apples are tender. GERMAN APPLE PIE
I have had this recipe forever; I don't remember where it originates. It is different from a traditional apple pie with cream in the filling and vanilla in the crust. I have rave reviews whenever I make it and many requests for the recipe. The one thing I have learned is the tarter the apple the better! This is best during apple season and the apples are crisp and fresh.

Steps:
- In a medium sized bowl, combine flour and salt.
- Cut in shortening until mixture resembles coarse crumbs, using a pastry blender.
- Sprinkle in vanilla; cut in with pastry blender.
- Sprinkle dough with water, 1 tablespoon at a time, mixing until pastry holds together.
- Roll pie dough out to fit in a 9" pan. I roll between two pieces of waxed paper to decrease the sticking and increase ease of handling.
- Remove 1 piece of waxed paper.
- Place crust in pan, remove remaining waxed paper ,trim and flute edges as desired.
- For the filling, combine the sugar, flour and cinnamon. Sprinkle 1/4 cup of sugar mixture on the crust.
- Place 3 cups of apples in the pie pan.
- Sprinkle with half the remaining sugar mixture.
- Top with remaining apples.
- To this, sprinkle remaining sugar mixture.
- Pour cream over the pie.
- Bake at 450 degrees for 10 minutes then reduce the heat to 350 degrees and continue baking for 50-55 minutes.
- Note: Some of the sugar may look like it did not melt/blend into the pie. This is normal and happens to me almost every time. It does not affect the overall taste.

I live in a big apple-producing state, so I think this recipe represents our region well. I tasted this pie many years ago when my children's babysitter made it. I asked for the recipe and have made it many times since.

- In a small bowl, combine flour and salt; cut in the shortening until crumbly. Add vanilla. Gradually add water, tossing with a fork until dough forms a ball. Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of pie plate; flute edges., For filling, combine the sugar, flour and cinnamon; sprinkle 3 tablespoons into crust. Layer with half of the apples; sprinkle with half of the remaining sugar mixture. Repeat layers. Pour cream over all. , Bake at 450° for 10 minutes. Reduce heat to 350° bake for 55-60 minutes or until apples are tender. Cool on a wire rack. Store in the refrigerator. Serve with whipped cream if desired.

- Preheat oven to 400° F. Unroll pie crust on lightly floured surface. Brush with butter and sprinkle evenly with cinnamon. Roll up tightly and slice into 1/2-inch rounds, like miniature cinnamon rolls. Then press evenly into bottom and sides of 9-inch pie plate, making sure there are no spaces between the rolls.
- Pour 2 cans of Lucky Leaf Premium Apple Fruit Filling on top of the crust. Combine butter, flour and brown sugar in a large bowl and form into crumbles using a pastry blender. Sprinkle crumbles over apple filling.
- Bake until top and crust are golden brown and filling is bubbling, about 40-45 minutes (cover top/crust with foil if necessary). Remove from oven and cool.
- Whisk together powdered sugar, vanilla, cinnamon and milk in small bowl to form icing (add more sugar or milk to reach desired consistency). Drizzle over cooled pie.
