1 1/2 tablespoons cumin seeds
1/4 cup freshly ground coffee beans
Kosher salt and freshly ground pepper
1 1/2 tablespoons chili powder
1 1/2 teaspoons ground cinnamon
4 8-ounce flat iron steaks
Canola oil

Steps:

  • Make the coffee rub: Toast the cumin seeds in a small dry skillet over low heat until fragrant, about 2 minutes, making sure to shake the pan frequently. Transfer to a spice grinder and finely grind. Mix the toasted cumin seeds with the ground coffee, 1 tablespoon salt, 1 1/2 tablespoons pepper, the chili powder and cinnamon in a small bowl.
  • Blot the steaks dry. Brush the meat with a little canola oil. Spread the coffee rub on a baking sheet and roll the steaks in the mixture to coat, using about 1 tablespoon per steak. Cover and refrigerate 1 hour but no longer-otherwise, the meat will begin to cure.
  • Preheat a grill to medium high. Drizzle a little canola oil on both sides of each steak, then grill 5 to 6 minutes per side for medium rare. Transfer the steaks to a cutting board and let rest 15 minutes before slicing.

1/2 cup steak rub
4 tablespoons paprika
2 tablespoons course black pepper
1/2 tablespoon white pepper
1/2 tablespoon cayenne pepper
4 tablespoons rib rub
5 tablespoons minced garlic
1/2 cup brown sugar
6 tablespoons balsamic vinegar
1 tablespoon sea salt
1/4 cup chopped fresh rosemary
1/4 cup chopped fresh tarragon
1/4 cup chopped fresh thyme
Olive oil, as needed

Steps:

  • Combine all ingredients, except oil, in a large bowl. While stirring, add olive till the mixture is a "slushy" consistency. Submerge steaks in mixture, rubbing it into the surface of the steaks. Marinate steaks in mixture for approximately 30 minutes. Preheat grill to 425 to 450 degrees F and place steaks on grill, flipping halfway through. To cook a 16-ounce steak to preferred doneness, cook for: rare, 2 to 3 minutes on each side, medium-rare, 4 to 5 minutes on each side and medium, 6 to 7 minutes on each side

Four 3/4-inch-thick rib-eye-steaks (about 8 to 10 ounces each)
2 tablespoons olive oil
2 tablespoons plus 2 teaspoons chipotle rub
For the chipotle rub:
1/4 cup dried Mexican oregano*
1/4 cup corn oil
5 dried chipotle chiles*, stemmed, seeded, and deveined (wear rubber gloves)
5 ancho chiles*, seeded and deveined (wear rubber gloves)
25 garlic cloves
1 1/2 cups coarse salt
Accompaniments
3 cups Drunken Beans
1/4 cup Green Chile Mushroom Salsa Butter
Chipotle Fried Onion Rings
available at Mexican markets and some specialty produce markets.

Steps:

  • Prepare grill.
  • Pat steaks dry and brush on both sides with oil. Rub steaks with chipotle rub and in a shallow baking dish large enough to fit steaks in one layer marinate them at room temperature up to 30 minutes.
  • Grill steaks on an oiled rack set 5 to 6 inches over glowing coals until crusty and medium-rare, about 4 minutes on each side. (Alternatively, steaks may be cooked in a hot well-seasoned ridged grill pan.) Transfer steaks to a warm platter and let stand 5 minutes.
  • Divide beans among 4 small deep platters and top with steaks. Dollop salsa butter on steaks and top with onion rings.
  • For the Chipotle Rub:
  • In a small heavy skillet dry-roast oregano over moderate heat, shaking skillet occasionally, until fragrant and beginning to brown, about 2 minutes, and transfer to a small bowl. Cool oregano completely and in an electric coffee/spice grinder grind fine.
  • In a heavy skillet heat oil over moderately high heat until hot but not smoking and, using tongs, fry chiles, 1 or 2 at a time, turning them, until puffed and just beginning to brown, about 10 seconds. (Do not let chiles burn or rub will be bitter.) Transfer chiles as fried to paper towels to drain and cool until crisp.
  • Wearing rubber gloves, break chiles into pieces and in coffee/spice grinder grind fine in batches. In a food processor grind oregano and chiles with garlic and salt until mixture is a shaggy, saltlike consistency. If mixture seems moist, on a large baking sheet spread it into a thin, even layer and dry in middle of an oven set a lowest temperature until no longer moist, about 1 hour. Wearing rubber gloves, break up any lumps with your fingers. (Chipotle rub keeps in an airtight container, chilled, 6 months. Regrind rub before using. Makes about 3 1/4 cups.)

1 tbsp finely chopped parsley
50g butter , softened, plus a little extra
1 red chilli , finely chopped
juice and zest ½ lemon
olive oil
x rib-eye steaks , seasoned
2 handfuls mixed salad leaves
450g floury potatoes , such as Estima, King Edward or Maris Piper, peeled and cut into chunky chips
2 tbsp olive oil
1 tsp thyme leaves
1 garlic clove , crushed

Steps:

  • For the chilli butter, mash the parsley into the butter with the chilli, a squeeze of lemon juice, the zest and some seasoning. Chill until firm.
  • Heat oven to 200C/180C fan/gas 6. For the chips, toss all the ingredients on a baking tray, then season. Roast for 35-45 mins until golden and crisp.
  • Heat a good glug of oil in a frying pan. Add the extra butter and the seasoned steaks, fry for 2-4 mins on each side, then transfer to plates. Toss the leaves with olive oil and lemon juice. Divide between the plates, add the chips and top each steak with a piece of chilli butter.

4 boneless rib-eye steaks (8 to 10 oz. each, 1-in. thick) or 4 New York strip steaks (8 to 10 oz. each, 1-in. thick)
oil, for coating the grill grate
2 tablespoons kosher salt
2 tablespoons paprika
1 tablespoon dark brown sugar
1 tablespoon ground dried ancho chile powder
1 -3 teaspoon ground dried chipotle powder
1/2 teaspoon ground cumin
1/2 teaspoon ground black pepper
1 1/2 cups purchased salsa
3 tablespoons unsalted butter, cut into pieces

Steps:

  • Pat steaks dry with paper towels, then scatter the chile rub over the steaks, patting it in with your fingers to adhere. Let the meat rest at room temperature as you heat the grill.
  • Oil a grill rack and arrange 4 to 5 inches from heat. Prepare grill for a hot fire or high temperature on a gas grill.
  • Grill steaks until darkly crusted, 3 to 4 minutes per side. Reduce heat to medium low (on a gas grill) or move steaks to low-heat area (for a charcoal grill), cover and grill for another 3 to 4 minutes for medium-rare to medium (135 degrees to 140 degrees).
  • Transfer to a platter, cover loosely with foil, and let rest for 5 to 8 minutes. Serve topped with generous dollops of Salsa Butter.
  • To prepare the Fragrant Chile Rub: Combine all ingredients to blend.
  • For the Salsa Butter: Bring the salsa to a boil in a small saucepan or skillet and cook until most of the liquid is gone. Remove from heat and whisk in the butter until the sauce is smooth. Serve warm.
