A quick version of traditional cordon bleu, chicken breasts are placed over rice and ham, then topped with cheesy pasta sauce.

2 packages (6.2 ounces each) quick-cooking long-grain and wild rice
4 cups water
4 thin slices baked ham, cut into 1-inch strips
1 1/2 pounds chicken breast tenders (not breaded)
1 jar (16 ounces) Parmesan and mozzarella cheese pasta sauce
1/2 teaspoon paprika
1 cup finely shredded Swiss cheese (4 ounces)
1 tablespoon chopped fresh parsley

Steps:

  • Heat oven to 350°. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Mix rice, contents of seasoning packets and water in baking dish. Place ham over rice. Place chicken tenders over ham. Spoon pasta sauce over each chicken tender; sprinkle with paprika.
  • Cover with aluminum foil and bake 40 minutes. Uncover and bake about 20 minutes longer or until rice is tender and chicken is no longer pink in center. Sprinkle with cheese. Bake uncovered about 5 minutes or until cheese is melted. Sprinkle with parsley.

1 egg
½ cup milk
2 pounds skinless, boneless chicken breast halves - cut into chunks
1 cup plain dried bread crumbs
1 cup oil for frying
8 ounces Swiss cheese, cubed
8 ounces cubed ham
1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat egg and 1/2 cup milk together until combined. Stir in the chicken chunks to coat, then drain, and coat with bread crumbs. Heat oil in a large skillet to 375 degrees F (190 degrees C). Fry breaded chicken cubes in hot oil until golden brown on all sides, then remove, and drain on paper towels.
  • Place chicken cubes in a glass baking dish, along with the Swiss cheese, and ham. Stir together the soup with 1 cup milk, pour over casserole.
  • Bake in preheated oven until golden brown and bubbly, about 30 minutes.

1 1/2 cups cooked white rice
1 3/4 cups chopped cooked chicken (about 9 oz)
10.5 oz condensed cream of onion soup make your own
1/2 cup heavy cream (substitute half and half or milk to lighten up)
2 tbsp Dijon mustard
1/4 cup white cooking wine
1 cup diced ham
4 slices baby Swiss cheese
1/2 cup panko bread crumbs

Steps:

  • Layer rice into an 8x8 baking pan.
  • Layer chopped cooked chicken.
  • Layer chopped ham.
  • Layer Swiss cheese.
  • In a small bowl, mix together cream of chicken soup, heavy cream, Dijon mustard and white cooking wine. Drizzle over chicken and spread with a fork to create an even layer of sauce.
  • Sprinkle bread crumbs evenly over top.
  • Cover and bake at 375˚ for 20 mins. Uncover and bake an additional 15 mins or until bread crumbs are golden brown and center of casserole is hot. (Poke with a fork to check the center)

3 tablespoons whole-grain mustard
2 tablespoons mascarpone cheese
2 tablespoons olive oil
Four 5-ounce boneless, skinless chicken breasts
Kosher salt
4 large thin slices Emmentaler or Swiss cheese (approximately 4 ounces)
8 thin slices Black Forest ham (approximately 4 ounces)

Steps:

  • In a small bowl, mix together the mustard and mascarpone. Set aside.
  • Preheat the broiler to high.
  • Heat a large ovenproof skillet over medium-high heat. Add the oil and continue to heat for an additional 1 minute. Sprinkle the chicken breasts evenly with 1 teaspoon salt. Place the chicken in the skillet and cook on the first side until golden brown, about 4 minutes. Flip the chicken and continue to cook until just cooked through, about 2 minutes more. Remove from the heat.
  • Lay 1/2 slice of cheese on each chicken breast. Lay 2 slices of ham on top of the cheese on each breast. Divide the mustard sauce evenly over the ham and top with the remaining cheese slices. Broil until the cheese is melted, golden brown and bubbly, about 2 minutes.

2 tablespoons olive oil
1/2 onion, diced
2 tablespoons all-purpose flour
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 cup milk
2 cups shredded deli rotisserie chicken
1 cup chopped ham
2 cups cooked rice
1 1/2 cups shredded Swiss cheese (6 oz)
3/4 cup Progresso™ Italian style bread crumbs
1 tablespoon melted butter
Chopped fresh parsley for garnish, if desired

Steps:

  • Heat oven to 400°F. Lightly grease 10-inch round baking dish with olive oil; set aside.
  • In 10-inch skillet, heat 2 tablespoons olive oil over medium-high heat. Add onion; cook until tender and translucent, stirring occasionally. Add flour; stir to make a roux. Cook roux 1 to 2 minutes or until lightly golden. Gradually beat in broth with whisk, followed by milk, and simmer until slightly thickened into a gravy.
  • In large bowl, mix chicken, gravy, ham, rice and 1 cup of the cheese. Spread evenly in baking dish.
  • In another bowl, mix bread crumbs and butter to coat well. Add remaining 1/2 cup cheese. Top casserole with bread crumb mixture; bake about 20 minutes or until top is crisp and golden and casserole is bubbling.

2 teaspoons Dijon mustard
4 teaspoons chopped fresh chives
4 very thin slices lean cooked ham (about 3/4 oz each)
4 very thin slices reduced-fat Swiss cheese (about 3/4 oz each)
1 egg white
1 tablespoon water
1/3 cup finely crushed corn flakes or bran flakes cereal
1/4 teaspoon paprika

Steps:

  • Heat oven to 375°F. Spray 8-inch square (2 quart) glass baking dish with cooking spray. Between sheets of plastic wrap or waxed paper, flatten each chicken breast to 1/4-inch thickness.
  • Spread each chicken breast with 1/2 teaspoon mustard; sprinkle with 1 teaspoon chives. Cut ham and cheese slices to fit chicken. Top each chicken breast with ham and cheese slice. Roll up, tucking ends inside.
  • In shallow bowl, combine egg white and water; beat slightly. Place cereal crumbs in shallow dish. Coat chicken rolls with egg white mixture; roll in crumbs. Place in baking dish; sprinkle with paprika.
  • Bake 25 to 30 minutes, or until chicken is no longer pink in center.

2 small carrots, shredded (1 cup)
2 tablespoons butter or 2 tablespoons margarine
2 (6 ounce) packages chicken-flavor long grain wild rice mix, fast cooking
8 boneless skinless chicken breasts (about 2 1/2 pounds)
4 slices ham, fully cooked, cut in half (1/8 inch thick)
4 slices swiss cheese, cut in half

Steps:

  • Preheat oven to 350 degrees F. Spray a 13 x 9 x 2 inch baking dish with cooking spray.
  • Add water, carrots, butter, and rice mix to baking dish. Place chicken on rice mixture and top with ham.
  • Cover baking dish with foil and bake for 55 to 60 minutes or until liquid is absorbed and thickest pieces of chicken are no longer pink when cut.
