CANADIAN APPLE PIE
An apple pie with the sweet delight of maple syrup. Try it with maple walnut ice cream. Yum!

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Line a pie dish with 1 crust.
- Whisk together cornstarch, sugar, cinnamon, nutmeg, and salt in a large bowl. Stir apples, maple syrup and whole egg into cornstarch mixture.
- Pour apple mixture into the prepared crust. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape. Whisk together egg yolk and water in a small bowl; brush over the pie. Cover pie loosely with aluminum foil and place on a baking sheet.
- Bake in the preheated oven for 35 minutes. Remove foil; continue baking until crust is golden brown, about 15 minutes. Cool on a wire rack.

Oh my gosh. This pie is sooo good. Apples and cheddar compliment each other very nicely here - what else can I say? Try this one instead of your old standby apple pie recipe.

Steps:
- For pastry: Combine flour, sugar, mustard and salt.
- Cut in butter and shortening with a pastry blender.
- Stir in cheese.
- Sprinkle in water, 2 tablespoons at a time, tossing with a fork until dough can be gathered in a ball.
- Knead, divide into slightly unequal halves, and chill 45 minutes.
- For filling: Cut apples into chunks.
- Toss with butter and remaining ingredients.
- Roll out smaller portion of dough and fit into a 9-inch pie pan.
- Fill with apples.
- Roll out remaining dough and fit on top.
- Sprinkle with topping, cut slits in top.
- Bake at 350°F degrees for 1 1/4 hours.

This recipe I have never made but my Mom swears by it. She says that it looks and tastes just like apple pie!! I went through all of the recipes she gave me (took 45 minutes to find it) just so I could post this. I hope she was right!! ;-} I listed everything exactly as it is written on the index card.

- Preheat oven to 450 degrees.
- Boil everything together except crackers until butter melts.
- Break crackers into 1/4 pieces.
- Put into crust.
- Pour boiling mixture over crackers.
- Put top crust on and bake immediatly for 15 minutes in 450 degree oven.

This mouthwatering apple dessert is from "Demolition Desserts" by Elizabeth Falkner.

Steps:
- Combine 1/2 cup sugar, 2 tablespoons water, and lemon juice in a medium skillet over high heat. Continue heating mixture, without stirring, until sugar has dissolved. Slowly tilt the skillet back and forth until sugar is caramelized and is the color of dark amber, 4 to 5 minutes.
- Remove skillet from heat and carefully add apple cubes, arranging them in a single layer. Place the skillet over medium heat and allow the apples to simmer in the caramel until they slowly begin to darken and absorb the caramel, about 5 minutes.
- Remove skillet from heat and sprinkle apples with vanilla and salt. Let stand, without stirring or moving apples, until all the caramel has been absorbed, 10 to 15 minutes.
- Meanwhile, in a small saucepan over medium heat, combine apple juice, vinegar, and remaining 2 tablespoons sugar. Bring mixture just to a boil and immediately reduce heat to medium-low. Continue cooking until liquid has reduced by half, about 20 minutes.
- To serve, divide apples evenly between 4 plates. Place a small scoop of ice cream next to the apples. Sprinkle apples and ice cream with cheddar cheese crumbles. Drizzle apple-balsamic reduction onto the plates or directly over the ice cream. Serve immediately.
