Number Of Ingredients 9

1 cup flour
1 teaspoon double-acting baking powder
Pinch of salt
2 eggs
1 cup skim milk
1 apple, peeled, cored and diced
3/4 cup raspberries
2 tablespoons melted unsalted butter
Maple syrup

Steps:

  • Preheat waffle iron.
  • Sift flour and baking powder into a mixing bowl and add salt. Separate eggs. Mix yolks with milk and add to dry ingredients. Mix together until just blended.
  • Add the apple pieces and raspberries and stir in the melted butter. Beat the egg whites with a whisk until stiff but not dry and fold into the batter. Lightly butter or spray the grids of your waffle iron if necessary. And brush or spray them again only if subsequent waffles stick.
  • Spoon batter out onto waffle iron (about half a cup for each waffle). Close lid and bake until browned and crisp. Serve at once. Top with maple syrup, served at the table.

Steps:

  • Preheat waffle maker. In a large bowl, combine biscuit mix, cinnamon and nutmeg. In another bowl, whisk eggs, milk and butter; stir into dry ingredients just until moistened; stir in apple., Bake waffles according to manufacturer's directions until golden brown. If desired, serve with whipped cream, syrup and additional chopped apples.

1 cup packed brown sugar
1 tablespoon all-purpose flour
5 large Granny Smith apples - peeled, cored and thinly sliced
1 cup frozen raspberries, thawed
½ cup old-fashioned oats
½ cup all-purpose flour
1 ½ teaspoons ground cinnamon
¼ teaspoon salt
6 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 inch square baking dish.
  • In a large bowl, mix brown sugar and 1 tablespoon flour. Add sliced apples and raspberries; toss to coat. Spoon into baking dish. In a medium bowl, mix together oats, 1/2 cup flour, cinnamon and salt. Stir in butter until crumbly. Sprinkle over apple mixture.
  • Bake in preheated oven for 50 to 55 minutes, or until topping is lightly browned. Serve warm.

When I was a little girl, growing up in Kansas City, Mo., my mother made these waffles for the family, especially if we were expecting company. For a little girl, the best part of this was the waffle iron Mother used. It was called a "Mazie Lee". All the waffles came out with a sun, moon and stars on them. The iron was used on the stovetop, so you cooked one side at a time. The iron is in my possession, and I enjoy making this treat for my family.

1/4 cup baking cocoa
1-1/2 cups cake flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup shortening
1 cup sugar
2 large eggs, separated
1/2 cup whole milk
1/2 teaspoon vanilla extract

Chocolate sauce
Fresh raspberries

Steps:

  • Combine cocoa, flour, baking powder and salt. Set aside. In a bowl, cream shortening and sugar until fluffy. Add egg yolks. Mix well. Add dry ingredients alternately with the milk. 2 cups granny smith apples, peeled, chopped (about 2 medium)
2 cups cranberries, coarsely chopped
1 (10 ounce) package frozen dry pack raspberries, thawed
1 1/2 cups sugar
3 tablespoons quick-cooking tapioca
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon almond extract
half-and-half or milk

Steps:

  • Heat oven to 375°F.
  • In a large bowl, combine apples, cranberries and raspberries. In a small bowl, combine sugar, tapioca, cinnamon, salt and almond extract; add to fruit mixture and toss well.
  • Spoon into unbaked pie crust. Fold edge under. Cover with top crust. Fold top edge under bottom crust; flute. Cut slits or design in top crust or prick with fork for steam to escape.
  • Brush crust with half-and-half. Sprinkle with sugar. Cover edge with foil to prevent over browning.
  • Bake 25 minutes. Remove foil. Bake an additional 25-35 minutes or until filling in center is bubbly.
  • Cool until barely warm or room temperature before serving.
