Steps:
- In an 3 quart microwave safe baking dish, arrange the apples into two rows.
- Pour apple juice over apples.
- Sprinkle with spices and lemon peel.
- Cover and microwave on HIGH for 7 minutes or until apples are tender - turning midway through.
LOW FAT LOW SUGAR CHOCOLATE APPLE SNACK CAKE
Inspired from Kittencal's great Apple Snack Cake. I needed a version lightened up as far as it would go. Really a good recipe, fast, easy, cheap and everyone will love it!

Steps:
- Oven to 350°.
- Spray a square pan with nonstick spray, I used a glass pan.
- Combine first 5 ingredients in bowl.
- In another bowl, combine water, oil, lemon juice, vanilla.
- Add to dry ingredients, stir until just combined.
- Toss apples with sugar and cinnamon, fold into batter.
- Pour into prepared pan.
- Bake for 30-35 minutes or until done.

LOW-CAL LOW-FAT APPLE DESSERT
This is a dessert that I sort of patched together from other recipes and from my own idea. Nothing in this recipe contains any calories except for the apples, (and cool whip if desired) so it is just like eating an apple, only MUCH tastier!!

Steps:
- Heat oven to 350 degrees.
- Peel core and slice each apple.
- Place 1 apple into a blender and blend, adding enough water to make a juice consistency.
- Pass this apple/water mixture through a strainer and into another container so you get apple juice which is not grainy.
- Add the splenda and caramel syrup to the apple/water mixture. Toss apples with liquid and bake for about 25 minutes or until tender.
- Each serving can be topped with 2 tablespoons fat free cool whip (15 cals) if desired. Enjoy!

- Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray. In a large bowl, beat eggs, brown sugar, melted butter, sugar and vanilla until well blended. In another bowl, whisk flour, cinnamon, baking powder, baking soda and salt; gradually beat into egg mixture. Stir in apples and pecans., Transfer to prepared pan. This recipe says it cost .47 cents per serving. I found this recipe in a Sams Club leaflet. I have not tried this recipe, but I'm posting it for safe keeping. I plan on using Weight Watchers oatmeal and Splenda brown sugar.

- Preheat oven to 375.
- For filling, combine cored, peeled and sliced apples with apple juice, Stevia and cinnamon in a large bowl.
- Spray an 8x8-inch baking pan with cooking spray. Spread apple mixture evenly over bottom of pan.
- For topping, combine oatmeal, flour, brown sugar and margarine in a medium bowl. Sprinkle oatmeal mixture evenly over the top of apples.
- Bake for 30-35 minutes or until fruit is tender and topping is golden brown.
