This recipe has fewer calories because of the ground turkey and amazing flavor! It is a little spicy, but our family enjoys it this way. Because it has so much flavor, you cannot even tell it's not ground beef. It tastes great as a topping on baked potatoes as well as tacos. Enjoy!

1 ½ tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon ground paprika
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried oregano
¼ teaspoon cayenne pepper
1 (12 ounce) package ground turkey
½ cup water
1 tablespoon cider vinegar
1 ½ teaspoons brown sugar

Steps:

Mix chili powder, cumin, paprika, salt, garlic powder, onion powder, oregano, and cayenne together in a small bowl.
Cook turkey in a large nonstick skillet over medium heat, stirring to break up clumps, until no longer pink, 3 to 5 minutes. Stir in chili powder mixture and water. Reduce heat and simmer, stirring occasionally, until most of the liquid has been absorbed, about 10 minutes.
Stir cider vinegar and brown sugar into the skillet. Simmer until flavors combine, 3 to 4 minutes. Transfer to a serving bowl.

1 ½ pounds ground turkey
1 (8 ounce) can tomato sauce
8 fluid ounces water
1 (4 ounce) can diced green chile peppers
½ onion, chopped
1 (1.25 ounce) package taco seasoning mix
1 clove garlic, minced
12 (6 inch) corn tortillas
1 cup shredded lettuce, or to taste
½ cup Cheddar cheese, or to taste
½ cup diced tomatoes, or to taste
¼ cup chopped green onion, or to taste
¼ cup chopped cilantro, or to taste
2 tablespoons sliced olives, or to taste

Steps:

Preheat a large skillet over medium-high heat. Add turkey; cook and stir until browned, about 5 minutes. Add tomato sauce, water, green chile peppers, onion, taco seasoning, and garlic; simmer, stirring occasionally, until thickened, about 30 minutes.
Spoon turkey mixture over tortillas. Top with lettuce, Cheddar cheese, tomatoes, green onion, cilantro, and sliced olives.

I threw this together tonight with what I had on hand. It turned out really good! You can play with the spices to suit your taste, I have estimated the amounts here. I made them as written but I think some corn added to the mixture would be good too. Note: prep time includes cooking the filling

Ingredients

olive oil
1/4 cup red pepper
1/4 cup onion
1 lb ground turkey
3/4 cup salsa
1 teaspoon chili powder
1 teaspoon garlic powder
6 corn tortillas
1 -2 cup monterey jack cheese

Steps:

Chop the red pepper and onion.
Brown the chopped red pepper and onion in some olive oil for about 5 minutes. Add the ground turkey, breaking up as you brown it.
Add the salsa, chili powder and garlic powder mixing til seasonings are combined.
Place some of the mixture down the middle of soft corn tortilla, top with some of the shredded cheese and roll up.
I used a George Foreman grill for the next step, I imagine you could use a frying pan but the grill works nicely to seal up the tortilla. Spray some cooking spray on a preheated grill and grill the rolled tortilla until slightly crispy and cheese has melted.
You could serve this with sour cream and additional salsa if you wish.

This is a recipe that I adapted from a few other tortilla casseroles and it is a quick & easy tummy satisfier!

Ingredients

6 flour tortillas (medium)
1 lb ground turkey
1 onion
1 (16 ounce) can black beans
1 (1 1/4 ounce) packet taco seasoning
8 ounces sour cream
3/4 cup salsa
2 cups cheddar cheese (shredded)

Steps:

Brown turkey and small onion until meat is completely done.
Add taco seasoning packet and follow directions for cooking on back.
Spray non-stick casserole dish (9x9) with non-stick cooking spray.
Cut flour tortillas into bite size pieces and layer 1/2 of tortillas on bottom of casserole dish.
Add 1/2 of the cheese, sour cream, salsa and black beans.
Start with the remaining tortillas and repeat layering.
You may top with extra cheese or salsa if preferred. Other options include: corn, red pepper, green pepper, jalapenos, or any other ingredient.
***play with ingredients, if you like more sour cream, simply add more, if you like less, add less. Don't be afraid to test different options.
Bake at 350 until all cheese is melted and everything is heated thoroughly (usually about 30-40 minutes). You may wish to cover the dish with foil to prevent overbaking the top -- then removing it for the last 5-10 minutes.
