UPSIDE-DOWN APPLE BACON PANCAKE

- Preheat oven to 375°. In an 8-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon to paper towels to drain, reserving drippings., Add apple to drippings; cook and stir over medium-high heat until crisp-tender, 2-3 minutes. Remove from heat. Sprinkle with bacon, brown sugar and cinnamon., In a large bowl, combine flour, sugar and baking powder. In a small bowl, combine egg, milk, butter and vanilla; stir into dry ingredients just until moistened. Pour over apples., Bake until lightly browned, 20-25 minutes. Invert onto a serving plate. If desired, dust with confectioners' sugar and serve with syrup.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Cover the bottom of a 10x15-inch baking pan with brown sugar and 2 tablespoons cinnamon. Layer apple slices on top.
- Place flour, apple juice, white sugar, butter, eggs, milk, remaining 1 tablespoon cinnamon, vanilla extract, baking powder, and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix until completely smooth, 5 to 10 minutes; the longer you mix, the fluffier the cake will be.
- Pour batter over apples in the baking pan, making sure they are evenly covered.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 55 minutes. Cool for 20 to 30 minutes. Place a large serving dish over the cake and carefully flip over.

- Pour butter into an ungreased 9-in. round baking pan; sprinkle with 1/2 cup brown sugar. Arrange apples in a single layer over brown sugar; layer with walnuts and remaining brown sugar., In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. - Preheat the oven to 400 F degrees.
- In a large bowl combine the apple cubes, fingerling potatoes, baby carrots, onion, sage and rosemary. Drizzle the honey and olive oil over, season generously with salt and pepper then toss really well so that everything.
- Arrange the veggies and apples in a large shallow roasting pan. Arrange the sausages in and around the vegetables.
- Bake for 30 minutes or until golden and cooked through.

UPSIDE-DOWN SAUSAGE-APPLE CORNBREAD
I got this recipe out of a local newspaper about 12 years ago. It makes a nice breakfast or brunch dish.

Steps:
- Grease bottom and sides of a 8" or 9" square baking pan.
- Brown the sausages in a medium skillet over moderately high heat, rotating them until browned and cooked through.
- Remove the sausage and discard all but 2 tablespoons of the drippings.
- Add butter and brown sugar to the pan.
- Heat, stirring until sugar is melted.
- Add apples and saute them over moderate heat, turning occasionally, until soft (about 10 min).
- Arrange sausages in rows across the prepared pan.
- Insert the apple slices, round side down, between the sausages, wedging them in tightly.
- Pour over juices from the skillet (the pan can be covered and refrigerated overnight at this point, if desired).
- Bring to room temperature before proceeding.
- Preheat oven to 400°F
- To make cornbread, stir together the flour, cornmeal, brown sugar, baking powder, and salt in a medium bowl.
- Add the egg, melted butter and milk.
- Stir with a wooden spoon until well combined.
- Pour the batter over the sausage and apples, smoothing the top to cover well.
- Bake for 25 minutes or until cake tester inserted in middle comes out clean.
- Remove from oven.
- Immediately invert onto a serving dish.
- Cut into squares and serve.
GERMAN STYLE SAUSAGE APPLE BAKE

- Melt four tablespoons of the butter in a heavy skillet. Add the apple slices and saute over high heat five to eight minutes, until the apples are barely tender and just beginning to brown. Remove the apples, draining them well, and reserve.
- Melt remaining butter in the skillet. Add the brown sugar and one- half teaspoon of the cinnamon and stir over low heat until syrupy. Pour the syrup into a nine-inch round baking pan. Arrange the apples in an attractive pattern over the bottom of the pan.
- Preheat oven to 350 degrees.
- Sift the flour, baking powder and salt together. Beat the egg yolks until thick, gradually beating in the sugar. Fold the dry ingredients into the batter.
- Beat the egg whites until not quite stiffly peaked and fold them into the batter. Spread the batter over the apples and bake for 30 minutes. Unmold unto a large platter and serve warm.

- 1. Heat oil in a large pan on a medium heat, fry the sausages 5 mins turning frequently.
- 2. Scatter over the onion, and cook for another 5 mins until softened.
- 3. Increase the heat and add the rosemary and apples, and cook for 3-4 minutes till the apple changes colour.
- 4. Add the cranberry sauce and mustard to the stock and stir, then add the stock to the pan too.
- 5. Bring to the boil and simmer uncovered for 10 mins.
- 6. Season to taste and serve with mashed potatoes (sweet potatoes work well with this dish)
