Apple Wedge Salad with Golden Balsamic Dressing image

This wedge salad updates a classic while preserving the retro feel. Apples, walnuts, bacon, and gorgonzola is topped with a drizzle of sweet, creamy golden balsamic dressing.

1 - head of iceberg lettuce
1 - large gala apple, chopped
1 teaspoon(s) lemon juice
6 slice(s) bacon, cooked and crumbled
8 tablespoon(s) gorgonzola cheese
1/3-1/2 - purple onion, thinly sliced
1/3 cup(s) walnuts
CREAMY GOLDEN BALSAMIC DRESSING
1/2 cup(s) mayo
4 tablespoon(s) light olive oil
4 tablespoon(s) golden balsamic vinegar
2 tablespoon(s) honey
1/2 teaspoon(s) cracked black pepper

Steps:

  • Mix dressing ingredients and set aside. This may be hand mixed or use an immersion blender if you prefer an emulsion.
  • Cut lettuce into 4-6 wedges and place on salad plates. Chop apple and stir in lemon juice to prevent browning.
  • Divide the bacon, cheese, apples, walnuts, & onions evenly and sprinkle the wedges with them. drizzle each salad with dressing. Serve and enjoy.

Classic wedge salad with added zing of a balsamic reduction.

1 cup(s) balsamic vinegar
1 - head iceberg lettuce
6 slice(s) bacon, cooked and crumbled
1 bottle(s) blue cheese dressing (good quality)
- crumbled blue cheese
16 small cherry tomatoes, quartered

Steps:

  • Place vinegar in a small saucepan and bring to a boil. Reduce heat and keep it at a simmer until reduced by approximately one-third and mixture coats a spoon.
  • Remove from heat and allow to cool (it will thicken as it cools). Set aside 1/4 cup for salad. Reserve rest for another use (store in refrigerator).
  • Remove core from lettuce. Cut lettuce head in half, then cut each half into quarters. Place on serving tray (or individual plates).
  • Drizzle each lettuce wedge with dressing and balsamic reduction. Sprinkle with blue cheese, crumbled bacon and cherry tomatoes
  • Serve immediately.
