Apple Pie Bread image

Filled with fall apples, studded with pecans and dried cranberries, and crowned with a sweet streusel topping, this Apple Pie Bread is what breakfast dreams are made of!

1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup lightly packed light brown sugar
1/4 cup buttermilk
2 teaspoons baking powder
2 eggs
1 1/2 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons homemade apple pie spice
1/2 teaspoon salt
2 cups shredded, peeled apple (about 4 medium or 2 large) (see note below)
3/4 cup chopped pecans
1/2 cup dried cranberries
1/4 cup lightly packed light brown sugar
3 tablespoons all-purpose flour
1/4 teaspoon homemade apple pie spice
2 tablespoons unsalted butter
1/3 cup chopped pecans

Steps:

  • Preheat oven to 350°F. Spray a 9x5x3-inch loaf pan with nonstick cooking spray; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat the butter on medium-high speed for about 30 seconds.
  • Add in sugars and mix until well combined.
  • Add buttermilk and baking powder; beat until combined.
  • Add eggs and vanilla; beat until thoroughly incorporated.
  • In a medium bowl, combine flour, apple pie spice and salt, whisk until combined.
  • Slowly add the flour mixture to the bowl and mix on low speed until just incorporated.
  • Fold in apples, pecans and cranberries.
  • Spoon batter into prepared pan; spread evenly. Prepare the streusel topping.
  • In a small bowl, combine brown sugar, flour and apple pie spice. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in pecans. Spoon streusel topping over the batter, pressing them gently into the batter.
  • Bake for 60 to 65 minutes or until a wooden toothpick inserted near the center comes out clean.
  • Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight before slicing.

1 (21 ounce) can apple filling
1 cup butter, at room temperature
½ cup white sugar
½ cup (packed) dark brown sugar
2 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
¾ cup raisins
¾ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 loaf pan.
  • In a medium bowl, use a potato masher to break up apples in the filling; set aside. In a large mixing bowl, cream together butter, white sugar, and brown sugar. Stir in eggs, apples, and vanilla extract until well blended. Sift together flour, baking soda, cinnamon, and salt. Stir into apple mixture, then stir in raisins and walnuts. Pour batter into prepared pan.
  • Bake in preheated oven for 60 minute, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 9x5 inch loaf pan.

3 cups all-purpose flour
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
4 large eggs, room temperature
1 cup canola oil
1/2 teaspoon vanilla extract
2 cups chopped peeled apples (about 2 medium)
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350°. Line 2 greased 8x4-in. loaf pans with parchment; grease paper., Whisk together first 6 ingredients. In another bowl, whisk together eggs, oil and vanilla; add to flour mixture, stirring just until moistened (batter will be thick). Fold in apples and walnuts. , Transfer to prepared pans. Bake until a toothpick inserted in each center comes out clean, 50-55 minutes. This bread is so moist and flavorful that my kids even eat the ends, which for most quick breads I usually have to throw away. At Christmas, I make the mini loaves and give as gifts to my neighbors. The oil can be replaced with 1 cup of unsweetened applesauce. Still flavorful but not quite as moist. If possible, don't skip the walnuts, they really add to it.

2 cups sugar
1 teaspoon vanilla
3 cups apples, diced
3 cups flour
1 teaspoon cinnamon

Steps:

  • Combine and set aside the oil, eggs, sugar, and vanilla.
  • Sift flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually.

  • Bake in 2 regular loaf pans or 3 foil loaf pans for 1 1/2 hours at 300 degrees.
