HAM WITH APPLE RAISIN SAUCE
Since I ran across this recipe several years ago, I've used it often for special dinners. What I really like is the ease of preparation. You don't have a lot of cleanup because everything is done right there in the bag. -Sandy Olberding, Spencer, Iowa

Steps:
- Shake flour in the oven roasting bag. Place in an ungreased 13-in. x 9-in. baking pan. Place the apples, apple juice, raisins, brown sugar and cinnamon in the bag; mix well. Place ham in bag. Close bag. Cut six 1/2-in. slits in top of bag. , Bake at 350° for 2 to 2-1/4 hours or until a thermometer reads 140°. Serve with sauce.

HOMEMADE APPLESAUCE

Steps:
- Add apples, apple cider, lemon juice, sugar, cinnamon sticks and a dash of nutmeg to a large saucepan. Bring to a boil, cover with a lid and reduce to a simmer. Let cook for 15 minutes or until apples are tender. Remove cinnamon sticks and discard.
- Mash with a potato masher, and stir in the 1/4 teaspoon ground cinnamon and dash of nutmeg. Transfer to a serving dish and serve warm.
RAISIN SAUCE FOR BAKED HAM
Steps:
- Serve the raisin sauce warm, with sliced ham or other pork dishes, and enjoy.

BROWN SUGAR BAKED APPLES
Golden Delicious apples are used for this autumnal dessert, but Rome Beauties work well, too.

- Peel skin off top quarter of each apple. Using melon baller, scoop out core, leaving bottom intact. Stand apples in 13x9x2-inch baking pan. Mix sugar and spices in bowl. Reserve 2 tablespoons mixture. Fill apple cavities with remaining sugar mixture. Spoon 1/2 tablespoon maple syrup into each cavity. Scatter 3 tablespoons butter pieces over apples. (Can be made 4 hours ahead. Cover; chill.)
- Preheat oven to 350°F. Pour 1/2 cup water into pan with apples. Bake apples 35 minutes. Add reserved 2 tablespoons sugar mixture, 2 tablespoons maple syrup, 1 tablespoon butter, and 1/2 cup water to pan. Bake until apples are tender when pierced with skewer, about 25 minutes longer. Transfer apples to 8 bowls. Place baking pan atop 2 burners; boil over medium-high heat until syrupy, about 2 minutes. Spoon sauce over apples. Serve with whipping cream, if desired.
APPLESAUCE BAKED OATMEAL
I make this on the weekend for the kids to eat through the week. I double the recipe with no problems. It is a great way to use up the applesauce in the fridge.

In our home, baked ham was reserved for the holidays. Always decorated with pineapple rings, cherries and studded with cloves it still never did it for me. In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

- In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
- In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.
