6 cooking apples, peeled, cored, and cut into eights
1/2 cup sugar
1/2 cup water
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 cup all-purpose flour
1/4 cup firmly packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons butter or 3 tablespoons margarine
vanilla ice cream (optional)

Steps:

  • Combine 6 or 7 large cooking apples with the sugar, water, cinnamon, ground allspice in a large saucepan; bring to a boil.
  • (I also add fresh grated nutmeg and a squeeze of lemon juice.)
  • Cover, reduce heat, and simmer 8 to 10 minutes or until apples are almost tender.
  • Spoon mixture into a deep-dish 9-inch pie-plate.
  • Combine flour, brown sugar, baking powder, and salt; cut in butter with a pastry blender or use finger tips until mixture resembles coarse meal.
  • (Next time I will use only 1/8 tsp of salt in the crumble.).
  • Crumble brown sugar mixture over apples.
  • Bake at 350°F for 30 minutes or until top is browned.
  • Serve with ice cream, if desired.
  • Yield: one 9-inch pie.

½ cup buttermilk baking mix
¾ cup milk
2 eggs

1 cup buttermilk baking mix
½ cup chopped walnuts
⅓ cup dark brown sugar
3 tablespoons margarine, chilled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.)
  • In a large bowl, combine apples, cinnamon, nutmeg, white sugar and 1/2 cup baking mix. Stir together the milk and eggs and mix into apple mixture, Pour filling into pie plate and dot with butter.
  • To make the Topping: In a large bowl, combine 1 cup baking mix, walnuts, brown sugar and margarine. Mix until crumbly and sprinkle over top of apples.
  • Bake in the preheated oven for 60 minutes, or until apples are cooked and topping is golden brown.

2 cups all-purpose flour
3/4 teaspoon salt
1 cup vegetable shortening, room temperature
1 egg
2 tablespoons cold water
1 tablespoon white vinegar
5 Northern Spy apples
3/4 cup fine sugar
2 tablespoons all-purpose flour
1 teaspoon cinnamon

Steps:

  • Combine the flour and salt in mixing bowl. Cut room temperature shortening into flour until mixture is uniform and shortening resembles large peas. Beat egg, water, and vinegar together to blend. Pour all of the liquid evenly over flour mixture. Stir in with fork until all of the mixture is moistened. Divide dough in half and shape each into a ball. Flatten each into a 4-inch circle. Wrap and chill dough for 15 minutes for easier rolling.
  • Dust rolling pin and work surface lightly with flour. Roll dough to a uniform thickness. Roll to a circle about 1-inch larger than upside down 8-inch pie plate. Carefully place one dough circle into pie plate and gently press into form of plate. Trim excess dough around the edge with the back of a knife.
  • Preheat oven to 400 degrees F.
  • Peel, core, and slice apples. Mix apple slices with sugar, flour, and cinnamon. Place apple mixture in pie shell. Place second pie crust on top and form to the edges of the pie plate. Cut slits in the top crust to allow for steam to release in oven. Bake for approximately 30 to 40 minutes, until pie is fully baked and apples are tender.

Steps:

4 large red apples, cored and thinly sliced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt butter in saucepan over medium heat. Stir in white sugar, brown sugar, salt, cinnamon, and water. Bring the syrup to a boil, stirring constantly to dissolve sugar, then remove from heat.
  • Unroll pie crusts, press one into a 9-inch pie dish, and place the apples into the crust. Unroll the second crust on a work surface, and cut into about 8 1-inch wide strips. BASIC PIE CRUST:
2-1/2 cups flour (white all-purpose)
Dash of salt
1/2 cup butter, chilled
1/2 cup shortening
Ice water (fill 1 cup but use only enough to moisten dough)
APPLE FILLING:
7 to 8 large Granny Smith apples, peeled (depending on size of apple & size of pie dish, have about 3 lbs. available)
3/4 cup sugar
4 tablespoons flour
Dash of salt
1 to 2 teaspoons cinnamon (depending on how much you like)
1 tablespoon butter (put dollop on top before covering with top crust)
1 beaten egg (you won't use all of it, just enough to brush on pie before baking)

Steps:

  • In a deep bowl, work the butter and shortening into the flour and salt with your hands until you see marble-sized lumps form. Think mixed nuts, but no bigger than almonds. Add ice water a little at a time, sort of "fluffing" the flour. Keep your movements light, as if you are tossing dressing into a salad with your hands. When the dough feels moistened enough, do a "squeeze test" and when it holds together you're done. Do not overwork the dough! It takes very little time and you'll be tempted to keep touching it, but don't! Now divide the dough in half, form each half into a disk shape and roll flat and thin to fit your pie dish. Sprinkle flour under and on top of your dough, and keep rolling surface and pin free from gunk to keep dough from sticking. Trim excess crust to about 1 inch from the dish edge with a scissors., Slice half of the apples directly into the pie, arranging to remove extra space between slices. Cover with half of your other ingredients (sugar, flour, cinnamon, salt), then slice the remaining apples and cover with second half of ingredients. Add dollop of butter on top, cover with top crust, seal and crimp edges, then brush with beaten egg (this gives the pie a nice golden brown shine; be careful not to let egg pool in crevices.) Use a knife to poke vent holes in the top (get creative here with a pattern), then bake at 425 degrees for 15-20 minutes. Turn oven down to 375 degrees and bake for another 30-40 minutes until juice bubbles. Keep an eye on it as it bakes. If it gets too brown, turn down the temperature. To be sure it's done, poke with a knife to make sure apples have softened. Do not overbake or apples will turn mushy.
