APPLESAUCE GRANITA WITH MAPLE YOGURT

Steps:

• For the Granita: In a shallow 8-inch square pan, stir the applesauce and lemon juice together and spread the mixture evenly in the pan. Place the pan in the freezer for at least 1 hour.
• For the Sauce: In a bowl, combine the yogurt, maple syrup, and cinnamon. Chill the sauce until ready to serve.
• Remove the granita from the freezer. With a fork, scrape the surface of the granita to gently fluff it up. Serve immediately, in dessert glasses or dishes, drizzled with yogurt sauce.

APPLESAUCE GRANITA

Steps:

• Place the applesauce in a pyrex dish. Cover with plastic wraper.
• Freeze, and every hour grate it with a fork, for 3/4 hours.
• Grate it on last time before serving.
• You can serve this as a alcohol free cocktail in a champagne or margarita glass with sparkling apple juice.

APPLE MINT GRANITA

Steps:

• Mix apple juice and mint leaves and allow to combine overnight in refrigerator. Strain mint leaves out of apple juice.
• Place a shallow metal pan in freezer. In a nonreactive saucepan, combine applesauce, mint flavored apple juice, sugar, lemon juice and salt. Bring to a boil, then simmer uncovered about 20 minutes.
• Cool to room temperature.
• Pour apple mixture into chilled pan; return to freezer. Stir every 20 minutes until it thickens into coarse crystals, about 1 hour.
• Stir granita and mound into small cups. Serve immediately.
