APPLESAUCE PUFFS
Applesauce Puffs are a great quick after-school snack, they are so easy to mix up and get into the oven, and the kids LOVE eating them.

Steps:
- Preheat oven to 400 degrees, and grease or spray with non-stick cooking spray a muffin tin.
- Combine biscuit mix, 1/4 cup sugar, and 1/2 teaspoon cinnamon.
- Add applesauce, milk, egg and oil. Mix until moistened.
- Fill greased muffin pan cups two-thirds full.
- Bake in 400-degree oven 12 minutes or until done. Cool slightly; remove.
- Combine the cinnamon sugar topping by mixing 1/4 cup sugar mixed with 1/4 teaspoon cinnamon.
- Dip the tops of the slightly cooled puffs in melted butter, then in the cinnamon sugar mixture.
- Best when served warm!

Steps:
- Mix biscuit mix, sugar and cinnamon
- Mix in applesauce, milk, egg and oil
- Stir well
- Fill greased muffin pans 2/3 full
- Bake @375 for 15 minutes
- Remove immediately from pan and roll in melted butter
- Combine cinnamon and sugar in a small bowl and roll muffin with melted butter on it in mixture
- Let cool and serve

- Preheat the oven to 350 degrees F (175 degrees C). Grease 30 mini muffin cups.
- Mix baking mix, applesauce, 1/4 cup sugar, milk, egg, oil, and 1 teaspoon cinnamon together in a bowl until just blended.
- Spoon batter into the prepared muffin cups, filling each 3/4 full.
- Bake in the preheated oven until golden, 12 to 15 minutes.
- While puffs are baking, place melted butter in a shallow bowl, and combine remaining sugar and cinnamon in a second shallow bowl.
- Dip warm puffs in melted butter, then in the cinnamon-sugar mixture.

THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

VERY SIMPLE. Used some leftover/dry sourdough bread and just started throwing things together. Eventually I created this. Its not TOO sweet and very filling. I used fat free milk and light butter but you can use anything.

Steps:
- Cut bread into 1-2 inch cubes and spread a layer on the bottom of a large glass baking dish. (Using HALF the bread cubes).
- In a saucepan, warm the milk and butter together long enough to melt butter. (Make sure you do not let the milk boil!).
- Once butter is melted, remove from heat. Add brown sugar.
- In a separate bowl whisk together eggs and vanilla untill well mixed and a little foamy/frothy.
- Whisk egg mixture into milk mixture.
- Pour mixture over the first layer of bread cubes, making sure to soak them through.
- Spread applesauce over the soaked bread cubes evenly and sprinkle cinnamon, nutmeg, and raisins.
- Add the rest of the bread cubes and pour remaining mixture over them. Sprinkle more cinnamon and raisins.
- Sprinkle with brown sugar (optional) and/or drizzle with a little maple syrup.
- Bake on 350 degrees for about 20-35 minutes or until the center is set.
APPLESAUCE MUFFINS
Steps:
- Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks. If desired, sprinkle with cinnamon-sugar.
