SUGARLESS APPLESAUCE CAKE
Applesauce and an artificial brown sugar replacement pair to make this raisin-studded cake.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray an 8x4 inch loaf pan with cooking spray.
- Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
- Beat the eggs until light and add sugar twin. Add applesauce and vanilla.
- Add flour mixture and beat until smooth. Fold in raisins.
- Pour batter into loaf pan. Bake at 350 degrees F (175 degrees C) for about an hour, or until a toothpick inserted into cake comes out clean.

This cake is moist and delicious. I am from Washington state and this is my Mother's recipe. Great topped with caramel frosting!

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan. Mix together the flour, baking soda, cinnamon, cloves and nutmeg. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture alternately with the applesauce. Fold in the walnuts and raisins. Pour batter into prepared pan.
- Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

RAISIN APPLESAUCE CAKE
This cake is one of my grandfather's favorites. And it seems like he always knows when you're making it-he must have a keen sense of smell! The recipe was passed down through the generations beginning with my great-grandmother. Sometimes I can imagine her making it all those years ago.

- In a bowl, cream the sugar and shortening. Beat in molasses until blended; set aside. Sift together flour, baking soda, cinnamon, cloves and salt; add to creamed mixture alternately with applesauce, beating well after each addition. Stir in raisins., Pour into a greased and floured 10-in. tube pan. Bake at 350° until a toothpick comes out clean, about 45 minutes. Cake will not rise to top of pan. After 10 minutes, remove cake from pan and cool on a wire rack.

APPLESAUCE & RAISIN CAKE
Found in the All*You Magazine from March 2009. A nice moist cake with the fun of a pretty glaze. I've made this with both raisins and dried cranberries and they both work really well. Feel free to use what suits your tastebuds the best. It is a great cake to have when you expect company as it is light and goes great with a mug of coffee.

Steps:
- Preheat oven to 350F and butter a 9x5" loaf pan and line bottom with parchment paper and butter paper. (This makes removing it from the pan so much easier).
- Beat butter and sugar with an electric mixer until light and fluffy. Beat in egg.
- Stir baking soda into applesauce in a separate bowl.
- Mix dry ingredients together.
- Add dry ingredients in to butter mixture alternating with the applesauce. Mix just until blended well - don't overmix or the cake will be dense.
- Gently stir in raisins.
- Pour batter into pan and bake until top springs back when pressed - about 50 minutes (check at 45 minutes).
- Cool in pan on a wire rack for 10 minutes then turn out onto the rack to cool completely.
- Make glaze by mixing the lemon juice with the confectioner's sugar until smooth. Spoon glaze over the cooled cake and let set up before serving.
