Easy Applesauce Cake image

Just like grandma used to make, this delicious Easy Applesauce Cake is so satisfying. Applesauce cakes are great for using up pantry staples in your home. In exchange for basic ingredients, you get an amazing spice cake!

1/2 cup unsalted butter
1 cup granulated sugar
1 cup applesauce
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 cup raisins
1/2 cup walnuts
2 tablespoons powdered sugar

Steps:

  • Preheat oven to 350 degrees. Prepare an 8-inch baking pan with non-stick spray.
  • In a large mixing bowl, cream together the butter and sugar.
  • Add in the applesauce and mix well.
  • Add in the flour, baking soda, cinnamon and cloves and mix just until combined.
  • Fold in the walnuts and raisins.
  • Pour the batter into your prepared dish and bake for 40-45 minutes, until a toothpick comes out clean.
  • Sprinkle with the powdered sugar, cut and serve!

This cake is one of my grandfather's favorites. And it seems like he always knows when you're making it-he must have a keen sense of smell! The recipe was passed down through the generations beginning with my great-grandmother. Sometimes I can imagine her making it all those years ago.

1 cup sugar
1/2 cup shortening
2 tablespoons molasses
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon salt
1-1/2 cups applesauce
1 cup raisins

Steps:

  • In a bowl, cream the sugar and shortening. Beat in molasses until blended; set aside. Sift together flour, baking soda, cinnamon, cloves and salt; add to creamed mixture alternately with applesauce, beating well after each addition. Stir in raisins., Pour into a greased and floured 10-in. tube pan. Bake at 350° until a toothpick comes out clean, about 45 minutes. Cake will not rise to top of pan. After 10 minutes, remove cake from pan and cool on a wire rack.

Found in the All*You Magazine from March 2009. A nice moist cake with the fun of a pretty glaze. I've made this with both raisins and dried cranberries and they both work really well. Feel free to use what suits your tastebuds the best. It is a great cake to have when you expect company as it is light and goes great with a mug of coffee.

8 tablespoons unsalted butter, room temperature
1 cup sugar
1 large egg, room temperature
1/2 teaspoon baking soda
1 cup unsweetened applesauce (thicker is better)
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg
1/2 cup raisins (or dried cranberries)
6 tablespoons fresh lemon juice
2 cups confectioners' sugar

Steps:

  • Preheat oven to 350F and butter a 9x5" loaf pan and line bottom with parchment paper and butter paper. (This makes removing it from the pan so much easier).
  • Beat butter and sugar with an electric mixer until light and fluffy. Beat in egg.
  • Stir baking soda into applesauce in a separate bowl.
  • Mix dry ingredients together.
  • Add dry ingredients in to butter mixture alternating with the applesauce. Mix just until blended well - don't overmix or the cake will be dense.
  • Gently stir in raisins.
  • Pour batter into pan and bake until top springs back when pressed - about 50 minutes (check at 45 minutes).
  • Cool in pan on a wire rack for 10 minutes then turn out onto the rack to cool completely.
  • Make glaze by mixing the lemon juice with the confectioner's sugar until smooth. Spoon glaze over the cooled cake and let set up before serving.

1 teaspoon vanilla
2 1/4 cups flour

1 cup dark raisins

1 cup packed dark brown sugar

Steps:

  • Bring the water to a boil in a medium-size saucepan over moderately high heat. Stir in the oats. When the liquid returns to a boil, stir in the raisins and salt. Reduce the heat and simmer 4 to 5 minutes, stirring occasionally, until the oats are soft and the water is absorbed. Remove from heat, stir in the sugar, applesauce, and oil. Cool to lukewarm. Meanwhile, heat the oven to 350 degrees, and grease the pan. Put the flour, baking soda, cinnamon, and nutmeg into a large bowl. Stir to mix well. Stir the eggs into the oat mixture. Add the flour mixture, and stir just until moistened. Spread in the prepared pan and bake 30 to 40 minutes, or until the cake starts to shrink from the sides of the pan and a wooden pick inserted in the center of the cake comes out clean. The cake's texture and appeal are similar to those of banana bread; if you like, you can stir a large handful or two of raisins, nuts or both into the batter just before you scrape it into the pan. And although you can use homemade applesauce for this, know that store-bought is just fine.

  • Make the frosting: In a large bowl, combine the cream cheese, sour cream, honey and salt and whisk together aggressively until the cream cheese is slightly aerated (you can also do this with a handheld electric mixer or in a stand mixer).
  • Spread the frosting over the top of the cake and don't worry too much about making this perfect. A not-too-perfect cake is so much better than a perfect cake. Cut into wedges and serve. Leftovers can be wrapped in plastic wrap and stored in the refrigerator for up to 3 days.
