- Preheat oven to 375°. Whisk together first 5 ingredients. In another bowl, whisk together eggs, melted butter and vanilla; add to flour mixture, stirring just until moistened (batter will be stiff). Fold in apples. , Fill 12 greased or paper-lined muffin cups three-fourths full. For topping, mix brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. , Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack to cool. Mix glaze ingredients; drizzle over tops.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
- In a medium bowl, mix flour, baking powder, baking soda and salt.
- In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
- In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
- Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease 18 muffin cups or use paper liners.
- In a large bowl, sift together 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda and salt. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into prepared muffin cups.

- In a bowl, combine cake mix, flour, eggs, water and oil. Beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fill paper-lined muffin cups one-third full. Combine the filling ingredients; place 2 tablespoonfuls in the center of each muffin cup. Top with remaining batter. Combine the topping ingredients until crumbly; sprinkle over batter., Bake at 350° for 18-22 minutes or until a toothpick comes out clean. - Preheat oven to 350°F Spray a 12-cup muffin pan with Pam.
- Make topping: in a bowl, stir together brown sugar, cereal, flour, cinnamon, oil and water just until crumbly. Set aside.
- Make muffins: in a large bowl and using a whisk or electric beaters, combine sugar, brown sugar, milk, applesauce, oil and egg.
- In another bowl, stir together 1 cup flour, baking powder, baking soda and cinnamon. With a wooden spoon, stir the mixture into the applesauce mixture just until everything is combined.
- In a small bowl, stir together apples and 2 tsp flour; stir the mixture into the batter. Divide the batter among the prepared muffin cups. Sprinkle the topping evenly over top.

- Preheat oven to 400 degrees.
- Line 30 mini-muffin pan cups or 12 medium muffin cups with paper liners, or spray bottoms only with cooking spray.
- In medium bowl, combine flour, wheat germ, brown sugar, baking powder and salt; mix well.
- In small bowl, combine apple butter, milk, margarine and egg whites until well blended.
- Add to flour mixture, stirring just until dry ingredients are moistened.
- Fill muffin cups almost full with batter.
- Prepare streusel topping (see below); sprinkle evenly over batter, patting gently.
- Bake mini-muffins 12 to 15 minutes, and larger muffins 20 to 22 minutes, or until wooden toothpick inserted in center comes out clean.
- Serve warm.
- STREUSEL TOPPING: in small bowl, combine all ingredients; mix until well blended.
- Notes: To freeze, wrap muffins securely in foil or place in freezer bag.
- Seal, label and freeze.
- To reheat muffins, unwrap; microwave on high (100% power) about 30 seconds per muffin.
APPLESAUCE MUFFINS
Unsweetened applesauce, whole-wheat flour and toasted walnuts make these warmly spiced muffins a wholesome breakfast or afternoon snack. They are best served warm the day they are baked, but since they are made with oil, they will also stay soft and moist for a couple of days in an airtight container on the counter.

- Set a rack in the center of the oven and heat to 350 degrees. Line a 12-cup standard muffin tin with paper liners. In a small bowl, combine 1 tablespoon sugar and 1/2 teaspoon cinnamon, and set aside.
- In a large bowl, whisk the eggs and remaining 3/4 cup/150 grams sugar until light and foamy.
- Add the applesauce, oil, remaining 1 1/2 teaspoons cinnamon, nutmeg and salt, and whisk to combine.
- Add the all-purpose flour, whole-wheat flour, baking powder and baking soda to the bowl. Fold until a few streaks of flour remain, then add two-thirds of the walnuts and all of the chopped apple, if using. Fold until well combined and no streaks of flour remain.
- Divide the mixture among the 12 liners; they will be almost full to the top. Sprinkle with the remaining one-third of the walnuts and reserved cinnamon sugar.
- Bake until muffin tops are puffed and golden, and a skewer inserted into the center comes out clean, 15 to 22 minutes. Let cool slightly before removing from the pan. These are best the day they are made, but will last a day or two on the counter in an airtight container. Alternatively, let the muffins cool completely, then transfer to an airtight container and freeze.
