Apple Strudel Muffins image

Fabulous apple muffins with a delicious cinnamon crumb topping! Give them a try -- you won't be sorry!

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup butter
1 cup white sugar
2 eggs
1 ¼ teaspoons vanilla
1 ½ cups chopped apples
⅓ cup packed brown sugar
1 tablespoon all-purpose flour
⅛ teaspoon ground cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
  • In a medium bowl, mix flour, baking powder, baking soda and salt.
  • In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
  • In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
  • Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

1 cup (220 g) brown sugar
1 cup (125 g) chopped apples
1 cup (117 g) sliced walnuts
1/4 cup (35 g) all-purpose flour
1 tsp (7 g) ground cinnamon
3 tbsp (42 g) unsalted butter (melted)
2 tbsp (28 g) unsalted butter (soft)
2 tbsp (24 g) brown sugar
2 tbsp (16 g) all-purpose flour
2 cups (250 g) all-purpose flour
1 tsp (5 g) baking powder
1 tsp (5 g) baking soda
1/2 cup (114 g) softened butter
1/2 cup (100 g) granulated sugar
3 large (99 g) eggs
1/2 tsp (2 g) 1/2vanilla extract
1/3 cup (80 g) apple juice

Steps:

  • Preheat oven to 350F/170C. Grease or place muffin papers inside 12 muffin tin.
  • To prepare streusel, in a medium bowl, combine brown sugar, apples, walnuts, flour and cinnamon. Stir in melted butter and set aside.
  • For the crumble; in a small bowl, add all the ingredients: butter, flour and sugar. And with your fingertips work the butter into the flour and sugar to form coarse crumbles. Set aside.
  • For the muffins, in a medium bowl, combine flour, baking powder and baking soda. Mix well. In a large bowl of standing mixer, set on medium speed and beat butter and sugar until light and fluffy (about 10 minutes).
  • Add eggs, one at a time, beat well after each addition. Add vanilla. Set mixer to low, alternately beat flour mixture and apple juice into egg mixture.
  • Spoon the batter into the 12 muffin tin and spoon on each muffin batter the streusel mixture, we prepared earlier. Bake for 15 minutes.
  • Remove the muffin tin from the oven, sprinkle the top with the crumble and bake for another 15 minutes. Transfer to wire rack and let cool completely before enjoying them.

  • Preheat oven to 375°. Whisk together first 5 ingredients. In another bowl, whisk together eggs, melted butter and vanilla; add to flour mixture, stirring just until moistened (batter will be stiff). Fold in apples. , Fill 12 greased or paper-lined muffin cups three-fourths full. For topping, mix brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. , Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack to cool. Mix glaze ingredients; drizzle over tops.

1/2 cup brown sugar, packed
1/4 cup all-purpose flour
1/4 teaspoon cinnamon
1/4 cup butter or 1/4 cup margarine, softened
1 1/2 cups all-purpose flour
1/2 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
2/3 cup milk
1/4 cup vegetable oil
3/4 cup shredded apple, packed (with peel or without)

Steps:

  • Topping: In small bowl rub together the first amounts of sugar, butter, cinnamon, and flour until crumbly.
  • Set aside.
  • Muffins: In large mixing bowl whisk together second amounts of flour, sugar, baking powder, and salt.
  • Make a well in the center.
  • In another bowl beat egg, milk, and cooking oil to blend.
  • Stir in apple.
  • Pour wet mixture into well of dry mixture.
  • Stir just until moistened.
  • Fill greased muffin cups 3/4 full.
  • Sprinkle with topping.
  • Bake in 400 F (200 C) oven for 15 to 20 minutes.

1/2 cup low-fat milk
1/3 cup unsweetened applesauce
2 tablespoons vegetable oil

3/4 cup chopped peeled apple
2 teaspoons flour

Steps:

  • Preheat oven to 350°F Spray a 12-cup muffin pan with Pam.
  • Make topping: in a bowl, stir together brown sugar, cereal, flour, cinnamon, oil and water just until crumbly. Set aside.
  • Make muffins: in a large bowl and using a whisk or electric beaters, combine sugar, brown sugar, milk, applesauce, oil and egg.
  • In another bowl, stir together 1 cup flour, baking powder, baking soda and cinnamon. With a wooden spoon, stir the mixture into the applesauce mixture just until everything is combined.
  • In a small bowl, stir together apples and 2 tsp flour; stir the mixture into the batter. Divide the batter among the prepared muffin cups. Sprinkle the topping evenly over top.
  • Bake for 18 to 20 minutes or until a tester inserted into the middle of a muffin comes out dry.
