APRICOT ALMOND CHOCOLATE BALLS
This recipe comes from the Jewish Holiday Feasts cookbook and is a recipe for Purim. All times are guesstimates and do not include cool times. These are wonderful as candy or cookies, after dinner or with wine. Kids can help roll up the dough into balls.

Steps:
- In food processor, process apricots, almonds and chocolate until very finely chopped.
- In medium saucepan over medium-high heat, cook sugar and water until soft ball stage, approximately 240°F (approximately 10 minutes).
- Stir in apricot mixture and cool.
- Squeeze mixture together with hands to form firm ball.
- Using approximately 1 Tbsp of mixture, form into 1-inch balls.
- Roll in powdered sugar.
- Place in candy cups or serve as desired.
CHOCOLATE ALMOND APRICOT BRITTLE

Steps:
- Grease a rimmed baking sheet with vegetable oil. In a small bowl, toss together the almonds, chocolate chips, and apricots. Put them on the baking sheet, spreading them out into an even single layer across the entire baking sheet.
- In a medium saucepan stir together the sugar and the water. Cook over medium-high heat, stirring until sugar dissolves. Do not stir after that. Instead, using a pastry brush dipped in water, brush the sides of the pan a few times to incorporate any sugar that has stuck to the sides of the pan. Continue cooking until the sugar syrup turns golden brown, about 15 to 20 minutes. Carefully pour the caramelized sugar over the nut mixture on the
- cookie sheet. Also, be careful not to move the cookie sheet after the sugar has been poured. The baking sheet will be very hot in the beginning. Let cool for at least 2 hours.
- Break the brittle into pieces and place on a serving dish.
CHOCOLATE DIPPED APRICOT BALLS
Steps:
- In a food processor chop fine the apricots and hazelnuts and mix in enough of the liqueur to hold the mixture together. Shape the mixture into 1-inch balls, roll the balls lightly in the sugar, and let them stand at room temperature, uncovered, for 24 hours.
- In the top of a double boiler set over barely simmering water, melt the chocolate, stirring occasionally, until it is smooth and remove it from the heat. Coat half of each ball with the chocolate, letting the excess drip off and wiping the underside of the ball gently against the side of the double boiler. Chill the balls on a baking sheet lined with a piece of parchment paper until the chocolate has hardened.
- The confections keep, chilled, in an airtight container for up to 2 weeks.

- In a bowl, mix almond flour, almond butter, and vanilla extract. Create round balls using your hands.
- Place onto a baking sheet and chill for 20 minutes or until solid.
- In a microwave-safe bowl, melt the chocolate in 30-second intervals.
- Individually coat eat ball in the chocolate and place back onto the baking sheet.
- Sprinkle with sea salt, if desired.
- Chill until chocolate is set.
- Enjoy!

Steps:
- Line a 13"x9" rimmed baking sheet with a smooth sheet of heavy duty aluminum foil.
- In large bowl, melt chocolate carefully.
- Add 1 cup chopped almonds to chocolate, & stir to combine.
- Pour chocolate mixture onto prepared baking sheet, & spread with spatula or spoon until there is an even, thin layer.
- While chocolate is still wet, sprinkle remaining almonds & all the apricots over top of chocolate, pressing down gently to embed them in the chocolate.
- Place in refrigerator to set, about 10 minutes.
- Once set, break bark into uneven pieces & serve.
- If chocolate has not been tempered, keep in refrigerator until ready to serve.

- Heat oven to 375°F. In large bowl, stir cookie base ingredients until soft dough forms. Spread dough in bottom of ungreased 13x9-inch pan. Bake 10 to 15 minutes or until set. Cool 10 minutes.

- Line a baking sheet with a sheet of waxed paper.
- Place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
- Combine cranberries, almonds, and apricots in a bowl. Add to melted chocolate and mix until well combined.
