CINNAMON SPICED NUTS
No holiday party would be complete without something easy to munch on. These cinnamon spiced nuts are the perfect thing to bake and serve, whether it's the holidays or not!

Steps:
- Preheat the oven to 375°F. Spray the baking sheet pan with nonstick baking spray.
- On the prepared sheet pan, combine the nuts, maple syrup, brown sugar, cinnamon, cloves, ginger, cayenne, and salt. Stir together and spread into an even layer.
- Roast 12-15 minutes. The sugar thickens and coats the nuts. Remove from the oven. While cooling, stir intermittently to break up any large pieces. Store in an airtight container for up to 1 month.

- In a small bowl, combine the sugar, cinnamon and salt; set aside. In a large bowl, lightly beat egg white. Add pecans; stir until coated. Sprinkle with sugar mixture; mix well. , Spread in a single layer on a baking sheet. Bake at 300° for 20 minutes. Remove nuts from baking sheet to cool on waxed paper.

CINNAMON SPICED NUTS

Steps:
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In large bowl, combine all ingredients and stir until well combined.
- Bake for 15-18 minutes, or until crisp and golden, stirring once halfway through.
- Sample and sprinkle with additional sea salt, if needed.
- Cool for 10-15 minutes and store in an airtight container for up to one week.
SPICED PECANS
Steps:
- Preheat the oven to 300 degrees F. Spray a sheet pan with the cooking spray or brush it lightly with oil.
- Place the egg white in a large bowl and whisk vigorously for 15 seconds, until light and frothy. Whisk in the brown sugar, vanilla, cinnamon, ginger, chile powder, cloves, 1 teaspoon kosher salt, and 1/2 teaspoon pepper. Add the pecans and mix well, until thoroughly coated. Pour the mixture, including any liquid, onto the prepared pan and spread in a single layer. Bake for 30 minutes, tossing twice with a metal spatula. Each time you toss the pecans, spread them out again in one layer. When they're done, sprinkle with fleur de sel and allow to cool completely; they will crisp as they cool. Serve at room temperature.

- Add the nuts and dried cranberries to the parchment-lined baking sheet.
- In small bowl, stir together maple syrup, egg white, salt, cinnamon, and cayenne.
- Pour the spice mixture over the nuts, then stir to coat evenly.
- Spread the nuts into a single layer.
- Bake for 20 minutes, stirring halfway through.
- Cool, then enjoy. They will get crunchy and stick together into clusters as they cool.

Steps:
- Bring 1 cup sugar, 1/4 cup canned milk, 1/2 teaspoon cinnamon, 1/2 teaspoon vanilla to a boil in a saucepan big enough to hold the nuts, stirring constantly.
- After mixture boils add the nuts and continue stirring until all liquid is gone. Pour mixture onto Pam sprayed cookie sheet.
- Cool 3 minutes.
- Sprinkle with cinnamon sugar mix. Stir well, coating all nuts.
- Cool and store in covered container.

- Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with aluminum foil. Pour butter over foil layer.
- Whisk sugar, egg whites, cinnamon, and cayenne pepper together in a large bowl. Add pecans and toss to fully coat. Spread coated pecans on the buttered baking sheet.
