One-Pan Sausage and Veggie Bake image

Let your oven do the work with this one-pan meal! The veggies cook first, then they are topped with sausage and roasted until everything is tender and the top crispy.

1 sweet potato, peeled and diced
1 carrot, peeled and diced
½ onion, sliced
4 cloves garlic, unpeeled
2 tablespoons olive oil
2 links kielbasa sausage
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine sweet potato, carrot, onion, and garlic in a medium roasting pan. Drizzle with oil, salt, and pepper; toss to coat.
  • Roast in the preheated oven until vegetables begin to soften, about 20 minutes. Poke sausage links with a fork and place on top of vegetables. Roast until sausages are no longer pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read 165 degrees F (74 degrees C).
  • Top with the garlic cloves, squeezed hot out of their skins on each serving.

1 package (19-1/2 ounces) Italian turkey sausage links, casings removed
1 tablespoon butter
3/4 pound sliced fresh mushrooms
3 cups thinly sliced Swiss chard
1/4 cup white wine
3 garlic cloves, minced
9 large eggs
1-1/4 cups 2% milk
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan or shredded fontina cheese
Minced fresh parsley

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage over medium heat 5-7 minutes or until no longer pink, breaking into crumbles. Using a slotted spoon, transfer sausage to a greased 13x9-in. baking dish, spreading evenly. Remove drippings from pan., In same skillet, heat butter over medium-high heat. Add mushrooms; cook and stir until tender, 3-5 minutes. Add Swiss chard, wine and garlic; cook and stir until chard is tender and liquid is almost evaporated, 1-2 minutes longer. Add to baking dish., In a large bowl, whisk eggs, milk, salt and pepper until blended; pour over vegetable mixture. Sprinkle with mozzarella cheese., Bake, uncovered, 45 minutes. Sprinkle with Parmesan cheese. Bake until a knife inserted in the center comes out clean, 10-15 minutes longer. Let stand 5 minutes before serving. Sprinkle with parsley.

1 lb new potato, washed and cut in half
1 medium sweet onion, sliced into medium thick rings
1 lb smoked sausage, cut into bite sized pieces
1/2 lb baby carrots or 2 large carrots, cut into medium bite size pieces
1 teaspoon salt
1/2-1 teaspoon pepper
3 teaspoons melted margarine
1 teaspoon garlic powder
1 1/2 teaspoons dried thyme

Steps:

  • Preheat oven to 400ºF and spray a 9x13-inch baking pan with cooking spray.
  • Combine all ingredients except smoked sausage in a large zipper type plastic bag,mixing well.
  • Place ingredients from bag into prepared pan,bake uncovered for 30 minutes.
  • Add sausage to vegetables mixing well (if desired at this point feel free to add more seasonings).
  • Bake for 20 minutes or until potatoes are tender and golden browned.

1 cup diced carrots
1 cup diced potatoes
1 cup frozen peas
1 cup diced parsnips
1 cup shredded cabbage

1 can (8 ounces) cut green beans
2 tablespoons chopped onion
1 package (12 ounces) fresh pork sausage links
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

Steps:

  • In a greased 13-in. x 9-in. glass baking dish, layer the first six vegetables in order given, seasoning with salt and pepper between layers. Drain beans, reserving liquid; set liquid aside. , Place beans over cabbage; sprinkle with salt and pepper. Top with onion. Brown the sausage; drain. Place over onion. Combine soup and bean liquid; pour over sausage. , Cover and bake at 350° for 1 hour. Turn sausage over; bake, uncovered, 30 minutes longer or until vegetables are tender.

1 pound bulk pork sausage
1 tablespoon olive oil
1 (10 ounce) package fresh spinach
1 green bell pepper, chopped
1 Roma tomato, chopped
½ cup chopped onion
1 ½ cups shredded Cheddar cheese
2 (2.5 ounce) packages real bacon bits
12 large eggs
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon sea salt
½ teaspoon ground black pepper
½ teaspoon garlic powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Meanwhile, heat oil in another skillet over medium heat. Add spinach and saute until just wilted, about 2 minutes. Remove from heat.
  • Transfer spinach to the prepared baking pan; sprinkle in bell pepper, tomato, and onion. Add 1/2 of the Cheddar cheese. Sprinkle in sausage and bacon bits. Sprinkle with remaining cheese.
  • Mix eggs, oregano, basil, salt, pepper, and garlic powder together in a blender until combined. Pour mixture into the baking pan over the vegetables and meats.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.
