APRICOT LAVENDER JAM



Apricot Lavender Jam image

My trick to infuse the lavender aroma into the jam is to process a portion of the sugar with the lavender.

4 ½ cups white sugar, divided
1 tablespoon dried lavender blossoms
3 ½ pounds fresh apricots, pitted and sliced
2 tablespoons lemon juice
1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)

Steps:

  • Combine 1/2 cup sugar and lavender blossoms in the bowl of a food processor; pulse until the lavender blossoms are finely chopped and the sugar is fragrant.
  • Measure apricots; you should have 5 cups prepared fruit. Chop finely and place into a plastic or glass bowl with a tight-fitting lid. Add lavender sugar and lemon; mix well. Cover and refrigerate overnight.
  • Inspect 8 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Mix 1/4 cup of the remaining sugar and pectin together in a bowl; add to apricots. Transfer fruit mixture to a large saucepan and mix well. Slowly bring to a full rolling boil that does not stop bubbling when stirred. Add the remaining sugar and stir well, scraping over the bottom of the pan, to fully dissolve the sugar. Cook for 1 minute, stirring constantly.
  • Ladle apricot jam immediately into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

1 rack of lamb
1/4 cup olive oil
Salt and freshly ground black pepper
3 tablespoons canola oil, plus 3 teaspoons
1 cup apricot preserves
2 tablespoons stone-ground mustard
1/2 cup water
1/2 cup panko bread crumbs
1 tablespoon freshly chopped tarragon leaves
1 tablespoon freshly chopped rosemary leaves
1 tablespoon freshly chopped thyme leaves

Steps:

  • Preheat the oven to 425 degrees F.
  • Rub the rack of lamb, outside portion, with salt and pepper. Next place skillet over Heat and add 2 tablespoons of the oil to a skillet. Place the rack fat side down and sear until the meat is nicely browned. Remove to a plate.
  • For the apricot glaze, add the apricot preserves, mustard and the water to a small saucepan and stir over low heat until the mixture is combined. Brush the glaze over the seared rack of lamb. Combine the panko bread crumbs and the fresh herbs in a small bowl until thoroughly mixed. Add 3 teaspoons of oil to the crumbs, to moisten. Cover the lamb rack with the crumb mixture and pat to make the crumbs adhere. Place the rack back in the skillet and roast in the oven for 15 minutes. Let the lamb rack rest for 10 minutes before serving.

GRAPEFRUIT MARMALADE



Grapefruit Marmalade image

Ruby red grapefruit and sugar is all you need to make a slightly bitter, sweet, and tangy marmalade. Try this on toast or, for a twist, use it in any recipe calling requiring orange jam or marmalade. I have used it on meatballs and chicken wings with delicious results. Make sure you use organic grapefruit to ensure an edible zest.

4 ruby red grapefruits
3 cups white sugar

Steps:

  • Inspect two 5-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until marmalade is ready. Wash new, unused lids and rings in warm soapy water.
  • Thoroughly wash and dry the grapefruits. Run a zester around 2 grapefruits to produce ribbons of zest. Set aside. Cut away thin strips of peel from the other two grapefruits with a sharp paring knife.
  • Peel off all remaining outer white parts of the fruit and discard. Cut the grapefruits into wheels. Remove any seeds.
  • Put grapefruit wheels and zest strips into a non-reactive saucepan. Add sugar and stir well to cover fruit. Heat over medium-high heat until bubbling, mixing constantly. Smash the heated fruit until it liquefies. Reduce heat to low and cook over a steady boil, stirring often. Remove and discard any persistent white froth that won't disappear after being stirred. Continue to cook for about 10 minutes until marmalade begins to coat the back of a spoon.
  • Add zest ribbons and cook for 5 minutes more. Place a small amount of marmalade on a plate and put it in the freezer. Test the consistency after 3 minutes.
  • Remove the marmalade from the heat when the freezer sample meets your desired consistency.
  • Pack grapefruit jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.

1/2 cup red onion, finely chopped
1/2 cup green onion, finely chopped
1/2 medium red bell pepper, finely chopped

1/2 teaspoon hot pepper sauce
black pepper, to taste

Steps:

  • Heal oil in a medium saute pan over medium heat.
  • Add peppers and onions, reduce heat to medium low and saute 3-4 minutes, until vegetables soften, not browning.
  • Add remaining ingredients and simmer 20 minutes.
  • Cool marmalade and then store in refrigerator.

1 large orange
2 large lemons
2 tablespoons water
1 2/3 cups dried apricots
7 cups water, extra
9 cups sugar

Steps:

  • Remove and reserve seeds from unpeeled quartered orange and lemon.
  • Put seeds and 2 tablespoons of water in small bowl. Cover and set aside.
  • Blend or process chopped orange, lemons and apricots, in batches, until finely chopped.
  • Combine fruit mixture with the extra water in large saucepan; bring to a boil.
  • Reduce heat and simmer, covered, 45 minutes.
  • Transfer mixture to large heatproof bowl; cover.
  • Stand fruit mixture and seed mixture, separately, overnight.
  • Drain seeds over small bowl; reserve liquid and discard seeds.
  • Measure fruit mixture and allow 1 cup sugar to each cup of fruit mixture.
  • Return fruit mixture with reserved seed liquid to pan; bring to a boil.
  • Add sugar and stir over heat, without boiling, until sugar dissolves.
  • Boil, uncovered, stirring occasionally, about 30 minutes or until marmalade jells when tested.
  • Stand 5 minutes.
  • Pour hot marmalade into hot sterilised jars, seal while hot.

MOROCCAN LAMB WITH APRICOTS, ALMONDS & MINT

2 tbsp olive oil
550g lean lamb, cubed
1 onion, chopped
2 garlic cloves, crushed
700ml lamb or chicken stock
grated zest and juice 1 orange
1 cinnamon stick
1 tsp clear honey
175g ready-to-eat dried apricots
3 tbsp chopped fresh mint
25g ground almonds
25g toasted flaked almonds
steamed broccoli and couscous, to serve

Steps:

  • Heat the oil in a large flameproof casserole. Add the lamb and cook over a medium-high heat for 3-4 minutes until evenly browned, stirring often. Remove the lamb to a plate, using a slotted spoon.
  • Stir the onion and garlic into the casserole and cook gently for 5 minutes until softened. Return the lamb to the pot. Add the stock, zest and juice, cinnamon, honey and salt and pepper. Bring to the boil then reduce the heat, cover and cook gently for 1 hour.
  • Add the apricots and two-thirds of the mint and cook for 30 minutes until the lamb is tender. Stir in the ground almonds to thicken the sauce. Serve with the remaining mint and toasted almonds scattered over the top.

  • Place the stones on a chopping board and with the flat side of a heavy knife really press down on them to break open the shells. Tie up these kernals in a little piece of muslin so they don’t get to roam free within the jam and cause a dental hazard at a later date and then toss the little muslin packet into your jam pan with the rest of the ingredients when you start your cooking process.
  • I like to let my apricots soak up the sugar and lavender before I cook them, this is very much the French way of preserving and it allows the sugar to draw out all the juice and flavour from the fruit. If you have time let the fruit, lavender and sugar sit in a bowl or pan overnight just covered with a clean tea towel. Make sure you have just used the tiny buds of the lavender and not the whole stalks. Do not be tempted to add more and more lavender as this delicate little flower packs a bit of a punch in the flavour department and a little goes a long way. Overdo it and you could end up with something too heavily fragranced and flavoured that smells more suitable for the bathroom than the kitchen table!
  • Next day add the lemon zest and juice and slowly heat your fruit mixture along with the little muslin bag of kernals.
