SPAGHETTI AND MEATBALL CUPCAKES
They might look like spaghetti, but these sweet cupcakes are topped with piped frosting, hazelnut chocolate balls and strawberry jelly!

- Unwrap your cupcakes and discard the small cardboard square from the bottom. If any orange icing is hanging over the edge of cupcake, you can gently remove some of it so it does not show on your finished product.
- Prepare your frosting can by attaching the small circle decorating tip.
- Begin assembling by piping a pile of 'spaghetti' all over the top of your cupcake.
- Add a hazelnut chocolate 'meatball' on top of the soft frosting.
- Next, carefully spoon or squeeze some jelly 'sauce' right on top of the meatball.
- Now grate some white chocolate 'cheese' over the whole top of the cupcake.
- Repeat the process for all the cupcakes and allow them to set.

There's nothing like delicious spaghetti and meatballs... cupcakes? Spoof someone you love with these fun and tasty April Fools Cupcakes! They may look like spaghetti, but they don't taste like it! Cupcake recipes like these are a must-make.

- For Cupcakes:
- Preheat oven to 350 degrees F. Set foil baking cups on baking sheet.
- Mix ingredients in a large bowl on medium speed until moistened for 30 seconds. Increase speed to high and beat for two minutes longer until thick.
- Fill baking cups two thirds full with batter. Large cups yield about 15, small cups about 24 cupcakes.
- Bake until golden brown and a toothpick inserted in the center comes out clean, about 15-20 minutes; depending on size of cups.
- Remove cupcakes from oven and baking pan, place on cooling racks, and allow to cool completely. Set aside for decorating. Cupcakes can be baked the day before decorating. Store covered in a cool dry place.
- Decorating the Cupcakes:
- Place frosting in a small bowl, add cocoa powder and yellow food coloring and mix well.
- Frost cupcakes with a thin coating of frosting and place cupcakes on serving platter.
- Fill decorator bag (use medium round tip) with frosting and pipe frosting all over cupcakes as if they were one big plate of spaghetti.
- Unwrap chocolates and place in small bowl. Cover chocolates with strawberry preserves and mix gently. Place one chocolate "meatball" on each cupcake and drizzle strawberry preserves over the top.
- Use remainder of strawberry preserves to cover areas of the frosting. Serve as one giant platter of "spaghetti and meatballs."
SPAGHETTI AND MEATBALLS CUPCAKES

- Prepare your cupcakes according to package instructions. Let them cool.
- Tint the frosting with the yellow food coloring. Spread a thin layer of tinted frosting on top of the cupcakes. Arrange the cupcakes on a serving platter close together.
- Spoon the remaining tinted frosting into a piping bag with a Number 2 Wilton tip. Alternatively, you could use a Ziploc bag and snip a small corner from the bag (1/8 inch). Either piping method is fine!
- Now, have fun piping the frosting all over the cupcakes to make the noodles (this was my favorite part!). Make sure to pile the "noodles" high and have some of the "noodles" hang over the edges of the cupcakes.
- Mix the "meatball" chocolates with the strawberry preserves in a bowl to coat. Spoon some of the preserves on top of each cupcake. Place preserves-coated chocolate on top of each cupcake. With a spoon, drizzle cupcakes with the remaining strawberry preserves.
- Sprinkle the grated white chocolate over the cupcakes to look like Parmesan cheese.

- Heat oven to 350°F. Grease and flour 2 1/2-quart ovenproof glass or metal bowl. Prepare cake mix batter as directed on package, using water, oil and eggs. Pour batter into greased and floured bowl.
- Bake at 350°F. for 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool in bowl on wire rack for 30 minutes. Run thin knife around edge of cake; invert cake onto serving plate. Cool 1 hour or until completely cooled.
- Frost cooled cake with thin layer of frosting. Spoon remaining frosting into resealable plastic bag; seal bag. Cut small hole in bottom corner of bag. Squeeze bag to pipe frosting onto cake to resemble spaghetti. Stir strawberry topping to soften; spoon topping onto top of cake to resemble spaghetti sauce, allowing some to drip down sides.
- Unwrap candies; microwave on HIGH for 10 to 15 seconds to soften. Break each candy into thirds; roll into "meatballs" and arrange on cake. Sprinkle grated candy coating over top of cake to resemble cheese.

- Heat oven to 350°F
- Grease 2 8-inch layer cake pan.
- Prepare the box of white cake mix and bake according to the recipe.
- Cool on wire racks.
- Invert cakes on rack after 15 minutes and let cool completely.
- Prepare the box of brownie mix, and bake as directed in the 8 inch layer cake pan.
- Cool for 15 minutes in pan, then invert and let cool completely.
- "Tomato Slices" Place plain cookies on a wire rack set over wax paper.
- Put about 1/2 cup vanilla frosting in a small saucepan.
- Stir over low heat until melted and smooth.
- Remove from heat and stir in red food coloring (and a bit of yellow if needed) until frosting is tomato colored.
- Brush or spoon on top and sides of cookies.
- Let stand at least 30 minutes until firm to the touch.
- "Cheese" Spoon another 1/2 cup of vanilla frosting into a small bowl.
- Stir in yellow food coloring (and a drop of red if needed) until cheese colored.
- Cover to prevent drying.
- "Lettuce" Sprinkle granulated sugar on a large sheet of wax paper.
- Working with 1 at a time, place spearmint leaves on the sugar and fold wax paper over, so the candy is sandwiched between the sugar and the wax paper.
- Roll with a rolling pin until flattened and edges are jagged.
- The candy will become very sticky, but the sugar should help it release from the wax paper.
- "Buns" Put remaining vanilla frosting in a medium sized bowl.
- Stir in milk chocolate frosting and red and yellow food coloring, little by little, until frosting is the color of a hamburger bun.
- Place one cake layer on a serving plate.
- If well-rounded, best to cut off the hump, then put it upside down for the flat top.
- Cover with frosting.
- Arrange spearmint leaf "lettuce" on top and around edges of the bottom "hamburger bun".
- Place brownie cake on top of the "lettuce" using spatulas.
- Spoon "cheese" about 1 inch from edge of top of burger, letting some run down the sides.
- Top with "tomato" slices.
- If needed, now is the time to insert toothpicks through the brownie layer (leaving at least ¼" above the tomato cookies) to keep the cake layers from sliding off!
- Take the cake layer that rose the most for the top "bun".
- Place cake on wax paper and frost with remaining bun colored frosting.
- Lift onto tomato topped burger.

- Heat oven to 375*. Line 12 muffin tin cups with foil bake cups.
- In a large bowl, mix together all of the meat loaf ingredients until well combined. Divide the mixture evenly among the lined cups (the liners should be about three quarters full).
- Place the filled muffin tins on cookie sheets and bake the 'cupcakes' for about 15 minutes or until cooked through.
- Divide the mashed potatoes among three small bowls and stir a few drops of food coloring into each batch to create blue, yellow, and pink 'frostings.' Spread a generous dollop on each 'cupcake.'.

- Preheat oven to 375°. In a bowl, combine the pizza sauce, sausage and pepperoni; set aside. In another bowl, combine the biscuit mix, milk, eggs, butter and garlic salt. Spread half of the batter on the bottom and up the sides of a greased 10-in. fluted tube pan. Spoon meat mixture over batter; cover with remaining batter., Bake for 35-40 minutes or until browned and a toothpick comes out clean. Invert onto a baking sheet. Arrange cheese over cake.
