- Combine sugar, salt and chili powder in a dry, small bowl and stir to incorporate. Place in a shallow serving dish.

- In a small bowl mix the salt, chile powder, and brown sugar. Sprinkle over both sides of the pineapple slices. Place pineapple slices onto a preheated, oiled grill or grill pan on high heat for 1 minute on each side. Reduce heat to low and continue cooking for 2 to 3 minutes per side or until the pineapple has softened and the sugar has caramelized on the edges.
SPICY PINEAPPLE OVER CREAM CHEESE APPETIZER
I believe I got this yummy recipe from my friend, Betsy. It is very good and easy to assemble. The time I've given for 'cooking' is actually the time for chilling.

Steps:
- In a small saucepan, combine the jelly, preserves, mustard and horseradish.
- Cook over medium heat until everything is melted, stirring as it heats.
- Remove from heat, cover and refrigerate at least one hour until chilled.
- To serve: place the block of cheese on a serving plate and top with 1/2 cup of the pineapple sauce.
- Serve with crackers.
- Refrigerate the remaining sauce for up to 3 weeks.

- Drain pineapple, reserving juice. Set pineapple aside and pour juice into saucepan. Add sugar, vinegar, salt and spices to pineapple juice.
- Bring to boil, then simmer for 10 minutes, stirring occasionally. If desired, add red food coloring to tint a delicate pink.
- Pour hot syrup over pineapple. Cover and let it cool, then chill for several hours.
- Serve as is or with dip.

- In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel and chop., In a stockpot, combine remaining ingredients. Stir in tomatoes. Bring to a boil over medium-high heat.
