- Preheat the oven to 350 degrees F (175 degrees C). Line a 9-inch square baking pan with aluminum foil and spray with cooking spray.
- Slice attached rolls in half widthwise with a serrated knife, keeping rolls connected, into a bottom and top 'slab.' Place bottom slab in the prepared pan.
- Layer about half the ham evenly over the bottom slab of rolls. Layer Swiss cheese evenly on top, and arrange remaining ham over the cheese. Cover with the top slab.
- Place butter in a microwave-safe bowl. Heat in the microwave until melted, about 1 minute. Add mustard, poppy seeds, Worcestershire sauce, onion, salt, and pepper. Whisk to combine.
- Pour butter mixture evenly and slowly over the rolls. Spread over the tops using a spatula; some of the mixture will pool at the base of the rolls. Cover with aluminum foil and let stand at room temperature for 5 to 10 minutes.
- Bake in the preheated oven until cheese has melted, about 20 minutes. Uncover and continue baking until browned as desired, 3 to 5 minutes more. Slice into individual sliders.

- Preheat the oven to 400 F.
- Lay a sheet of aluminum foil flat on the counter.
- Place the thin sliced roast beef in the center of the foil and fold up all four sides to completely enclose the beef.
- Bake in the preheated oven for 10 to 15 minutes.
- When the beef is almost done, heat the cheddar cheese sauce in a microwave safe bowl for 30 seconds or until heated through.

- Layer on the roast beef slices piled high.
- Spread the heated cheese sauce on top of the roast beef.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Melt butter in a saucepan over medium-low heat; cook and stir onion until softened, 5 to 10 minutes. Add mustard, poppy seeds, and Worcestershire sauce; cook and stir for 5 minutes.
- Arrange the bottoms from each roll in the prepared baking dish. Spoon 2/3 the onion mixture over the roll bottoms. Add ham and Swiss cheese to each roll. Put tops of rolls over the Swiss cheese layer. Brush the remaining 1/3 onion mixture over tops of rolls. Cover dish with aluminum foil.
- Bake in the preheated oven for 15 minutes. Remove aluminum foil and bake until tops of rolls are lightly browned, 5 to 10 minutes.

- In a small frypan, melt butter and olive oil over medium heat. Add onions to the pan. Season with salt and pepper. Sauté until soft and caramelized. Remove from the heat and set aside.
- Preheat oven to 350 degrees F.
- Slice rolls and remove tops.
- In a small bowl, combine the mayonnaise and the horseradish.
- Spread bottom of rolls with half the mayonnaise mixture.
- Top with caramelized onion, roast beef, brie cheese.
- Spread tops of rolls with remaining mayonnaise mixture.
- Place tops on the sandwiches. Drizzle tops with melted butter and sprinkle with poppy seeds (if desired).

COPYCAT ARBY'S BEEF AND CHEDDAR WITH ARBY'S RED RANCH SAUCE
An identical, homemade Arby's roast beef sandwich with homemade Arby's red ranch sauce and Arby's cheese sauce, stacked high with shaved roast beef on a large poppy seed onion brioche bun.

- Preheat oven to 225 degrees Fahrenheit.
- Wrap the shaved roast beef in foil like a "packet" and keep in the oven to heat through.
- Arrange buns on a baking sheet.
- Brush tops of buns with beaten egg white (or whole egg, or butter); then sprinkle with poppy seeds and minced onion.
- Bake for 5-6 minutes.
- Combine the shredded cheddar cheese (4 ounces), American cheese (4 ounces, shredded or cut into cubes) with half and half (1/4 cup) and 1/4 tsp paprika in a small saucepan on medium-low heat.
- Cover, and stir occasionally until melted, smooth and combined. Turn off heat, or leave on lowest setting while preparing the rest of the ingredients.
- In a small saucepan, bring the ketchup (1 cup), apple cider vinegar (1/8 cup), sugar (1/2 tsp), paprika (1/2 tsp), garlic and onion powders (1/4 tsp), salt (1/2 tsp), and water (1/4 cup).
- Simmer the ingredients in the saucepan on medium high heat for 3-5 minutes.
- Turn off the heat, stir in the mayonnaise (2 tsp) until combined.
- Top the bottom bun first with a splat of homemade Arby's sauce, then pile with roast beef, then spoon over cheddar cheese sauce, followed by more Arby's sauce. Top with top onion and poppy seed bun.
- The prepared sandwiches can be kept warm in the oven at 170 degrees Fahrenheit until ready to eat, for up to one hour.

- Loaded Italian Sandwich. For a place that's all about the meat, cutting this meaty sandwich seems surprising. But according to Brand Eating, the chain is cutting several types of meat that go into this bad boy, making the item obsolete.
- Pizza Slider. Out of seven delicious little sliders on the menu, Arby's has cut two. But the choice of the two to cut is baffling to some—especially when it comes to the pizza slider.
- Ham Slider. Apparently, not only is the chain getting rid of this popular slider, but they're doing away with ham altogether. "Nooooo. The ham and pizza sliders were my favorite.
- Loaded Curly Fries. Some customers may not have even known what they were missing—Arby's had Loaded Curly Fries this whole time. They were topped with bacon, sour cream, and cheddar, and will be missed by many.
