VIETNAMESE PORK & PEANUT BURGERS
Mix up your midweek menu with these Asian-style burgers, made from pork mince and flavoured with oyster sauce, ginger and lime

Steps:
- In a large bowl, mix together the pork, oyster sauce, spring onions, ginger, chilli flakes and lime zest. Shape the mixture into 4 patties using your hands. Heat the oil in a large frying pan over a medium heat, add the patties and cook for 8 mins each side until cooked through.
- To serve, put lettuce leaves on the bottom halves of the buns and squeeze over a little lime juice. Add the burgers, sprinkle over the peanuts and cover with the top halves of the buns. Serve with the remaining lime wedges and mayonnaise or sweet chilli sauce, if you like.

- Preheat grill for medium heat and lightly oil the grate.
- Mix ground beef, green onion, hoisin sauce, Sriracha sauce, sesame oil, garlic powder, red pepper flakes, ginger, salt, and black pepper together in a bowl until thoroughly combined. Divide meat mixture into quarters; form each portion into a patty.
- Grill on the preheated grill until meat is browned and no longer pink inside, about 10 minutes per side.

AROMATIC ASIAN BURGERS (ABALOS STYLE)
The nutty smell of the sesame oil permeates the kitchen as these burgers are frying. While not authentically Asian, the taste distinctly hints at the flavors of the East. I created this recipe when I accidentally thawed out ground beef instead of chicken breast. Naturally, burgers were the quickest and easiest option. Serve in burger buns topped with teriyaki sauce Sriracha® sauce as condiments.

- Knead together the sesame oil, soy sauce, garlic powder, ground ginger, onion powder, pepper, ground beef, green onion, and water chestnuts in a bowl until evenly combined; form into four patties.
- Heat the peanut oil in a skillet over medium-high heat. Cook in the skillet until the burgers are cooked to your desired degree of doneness, about 5 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

- Mix everything together. I would do this with my hands to get everything really combined, but if you're sqeamish, use a wooden spoon.
- Grill, broil or pan fry until done to your taste. I usually have to hold back the urge to eat it a la tartare ;-).

ASIAN BURGER
Steps:
- Place the beef in a bowl, add with curry powder, sugar, cilantro, scallions, garlic, chiles, cumin, salt, and pepper, and mix well. Form into 4 (8-ounce) patties. Place patties on grill and grill to desired doneness. Place scallion pieces and shiitake caps on the grill and brush with the teriyaki sauce and grill until well charred.

INDONESIAN-STYLE BURGERS WITH PEANUT SAUCE

- In a small bowl stir together peanut butter, sour cream, 1 tablespoon lime juice, and 2 teaspoons soy sauce until combined. In a large bowl blend together ground chuck, remaining 2 teaspoons soy sauce, remaining tablespoon lime juice, coriander, gingerroot, red pepper flakes, and salt and pepper to taste until just combined. Form mixture into four 1-inch-thick patties. When forming patties, handle meat as little as possible for a juicier burger.
- Prepare grill.
- Grill burgers on an oiled rack set 5 to 6 inches over glowing coals about 4 1/2 minutes on each side for well-done. (Alternatively, burgers may be cooked in a hot well-seasoned cast-iron skillet or ridged grill pan.) Toast sesame buns. Transfer burgers to buns and top with peanut sauce and lettuce.
