This fresh asparagus salad is one of my favorites and I can't wait to show you how to make it. With lemon vinaigrette dressing drizzled on top this salad has a light and flavorful crisp crunch in every bite.

1 bunch asparagus (cut into thirds)
3 cups spinach
1/2 cup radish (sliced)
1 cup cherry tomatoes (sliced in half)
1/2 cup peas
1/2 red onion (sliced)
1/4 cup feta cheese
1/4 cup olive oil
juice of one lemon
2 Tablespoons apple cider vinegar
salt and pepper

Steps:

  • In a large pot boil the asparagus for 3-5 minutes. Rinse in cold water.
  • In a large bowl combine spinach, radish, cherry tomatoes, peas, onion, and feta cheese.
  • In a small bowl whisk together olive oil, lemon juice, vinegar, salt and pepper.
  • Pour the desired amount of dressing over the salad and mix together.

For vinaigrette: Whisk together zest and juice of 1 lemon, 1 Tbsp rice wine vinegar, 1 tsp Dijon mustard, 1 tsp maple syrup, ¼ tsp fine sea salt and ¼ tsp

zest and juice of 1 lemon
1 Tbsp rice wine vinegar
1 tsp Dijon mustard
1 tsp maple syrup
½ tsp fine sea salt
½ tsp pepper
¼ cup extra-virgin olive oil
1 lb asparagus
3 cups cooked white quinoa
⅓ cup toasted cashews or hazelnuts, coarsely chopped
⅓ cup thinly sliced scallions
¼ cup packed fresh mint leaves, finely sliced

Steps:

  • For vinaigrette: Whisk together zest and juice of 1 lemon, 1 Tbsp rice wine vinegar, 1 tsp Dijon mustard, 1 tsp maple syrup, ¼ tsp fine sea salt and ¼ tsp pepper. Slowly add ¼ cup extra-virgin olive oil, whisking constantly. Bring a large saucepan of salted water to a boil; place a large bowl of ice water next to stovetop. Cook 1 lb asparagus, ends trimmed, tips intact and spears cut into 1-inch pieces, 2-4 minutes or just until crisp-tender. (Visit Parade.com/skills to learn how to prep asparagus.) With a slotted spoon, transfer to the ice water. When cool to the touch, drain well and spread on a towel to absorb any remaining water. Combine asparagus and 3 cups cooked white quinoa in a large bowl. Toss with enough vinaigrette to coat all of the ingredients, about ¼ cup. Add ⅓ cup toasted cashews or hazelnuts, coarsely chopped, ⅓ cup thinly sliced scallions, ¼ cup packed fresh mint leaves, finely sliced, and ¼ tsp each salt and freshly ground pepper; toss again. Add more salt, pepper and/or vinaigrette to taste. Serve warm or at room temperature.

3 tablespoons fresh lemon juice
1 1/2 tablespoons sherry vinegar
1 teaspoon honey
2 tablespoons extra-virgin olive oil
1/2 teaspoon Kosher salt
Freshly ground pepper
1 pound asparagus spears
1/2 red onion, sliced into thin half moons
1/2 cup thinly sliced mint strips
1 ounce ricotta salata, shaved with a vegetable peeler (Ricotta salata is an aged version of fresh ricotta and has a firm texture)

Steps:

  • In a small bowl or liquid measuring cup, whisk together vinaigrette ingredients and set aside.
  • Snap off woody ends of asparagus spears, and cut on bias into 1-inch pieces.
  • Blanch the asparagus: Bring a medium pot of water to boil; add asparagus and cook for 1 minute until bright green.
  • Drain and run asparagus under cold water or shock in a bowl of ice water. Dry off asparagus and place in a medium salad bowl.
  • Add sliced onion and mint to asparagus in bowl and toss with lemon vinaigrette.
  • Serve salad with shaved ricotta salata on top.

3/4 pound fresh asparagus, woody stems removed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 teaspoon Dijon mustard
1/2 lemon, juiced
1 tablespoon olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl toss the asparagus in the olive oil, and liberally season with salt and pepper. Spread the stalks out on a baking sheet, in a single layer, and roast until tender but still firm and moist, about 10 minutes.
  • Meanwhile, make the vinaigrette: In a small bowl, vigorously whisk together the mustard and lemon juice. Slowly drizzle in the olive oil, whisking quickly to emulsify the olive oil into the juice mixture. Season with salt and pepper, to taste.
  • Transfer the asparagus to a serving platter, toss with the vinaigrette and serve. The dish may be eaten warm or cold.

Asparagus is at its flavorful best for only a short time, usually between March and May, when you'll want to avail yourself of its abundance. There are, of course, a number of ways to prepare and serve asparagus, but this method, in which it is paired with a savory vinaigrette, is one of Martha's seasonal favorites.

Coarse salt
2 bunches asparagus (about 2 pounds), trimmed
1/2 teaspoon Dijon mustard
1 1/2 tablespoons champagne vinegar
Pinch of sugar
Freshly ground pepper
3 tablespoons extra-virgin olive oil
1 teaspoon lemon zest
1/2 teaspoon finely chopped fresh tarragon

Steps:

  • Prepare an ice-water bath; set aside. Bring a large pot of water to a boil. Add a generous amount of salt, and the asparagus. Return to a boil, and cook until asparagus are bright green and tender, about 3 minutes. Transfer to ice bath to cool. Drain well, pat dry, and transfer to a serving platter.
  • In a small bowl, whisk together mustard, vinegar, and sugar. Season with a pinch each of salt and pepper. Whisk in oil. Add lemon zest and tarragon; whisk to combine. Taste, and adjust for seasoning. Drizzle over asparagus. Serve immediately, or let stand at room temperature for up to 30 minutes before serving.

2 lbs thin asparagus spears, tough ends trimmed (2 bunches)
1 tablespoon olive oil
salt & fresh ground pepper
1 large shallot, minced (about 2 tablespoons)
1 tablespoon lemon juice
1 teaspoon lemon zest, grated
1 tablespoon thyme, minced
1/4 teaspoon Dijon mustard
1/3 cup extra virgin olive oil
salt & fresh ground pepper

Steps:

  • Adjust oven rack to uppermost position and heat broiler.
  • Toss asparagus with oil and salt and pepper, then lay spears in single layer on heavy rimmed baking sheet. Broil about 4 inches from heating element, shaking pan halfway through to turn spears, until asparagus is tender and lightly browned, 8 to 10 minutes.
  • Cool asparagus 5 minutes and arrange on serving dish.
  • Whisk shallot, lemon juice and zest, thyme, mustard, and olive oil in small bowl; season to taste with salt and pepper. Drizzle over asparagus and serve immediately.

I've been saving this since 1997 from McCall's magazine. There are 9 Passover recipes in it. The menu they gave is Gefilte Fish (no recipe), Chicken Soup With Matzo Balls, Mixed Green Salad (no recipe), Stuffed Tarragon Roast Capon With Rich Pan Gravy, Matzo Walnut and Mushroom Stuffing, Roasted Tzimmes, Asparagus With Lemon and Mint, Chocolate-Almond Torte With Strawberry Sauce, and Assorted Macaroons. One of these days I may get this made but for safe keeping I'm saving it here.

2 lbs asparagus, pencil-thin trimmed and cut diagonally into 2-in . lengths
2 tablespoons extra virgin olive oil
2 teaspoons lemon zest, finely grated
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
3 tablespoons very fresh mint mint leaves, finely shredded
1 tablespoon lemon juice

Steps:

  • In large pot of boiling salted water, cook asparagus 3 to 5 minutes, until crisp-tender. Drain in colander; dry on paper towel.
  • In serving bowl, combine olive oil, lemon zest, salt and pepper. Add hot aspargus. Toss mixture to bring to room temperature.
  • Just before serving, stir in mint and lemon juice.
  • Serve at room temperature.

  • Trim asparagus and have ready a large bowl of ice and cold water. In a large saucepan of boiling salted water cook asparagus until just tender, 3 to 4 minutes, and with tongs transfer to ice water to stop cooking. Drain asparagus well in a colander and pat dry.
  • Gently toss asparagus with vinaigrette and salt and pepper to taste.

  • Bring a large pot of salted water to a boil and set a bowl of ice water nearby. Drop the asparagus into the boiling water and blanch for about 1 minute, until tender but still bright green. Transfer to the ice water for 1 minute, then drain. Transfer the asparagus to a kitchen towel to dry and wipe out the bowl.
