1 lb asparagus spears, cut into 1-inch pieces (2 cups)
4 medium green onions, sliced (1/4 cup)
1 1/2 cups shredded Swiss cheese (6 oz)
1 can (6 oz) salmon or 1 can (5 oz) tuna, drained, flaked
1/2 cup Original Bisquick™ mix
1 cup milk
2 eggs
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried basil leaves
1/8 teaspoon pepper

Steps:

  • Heat oven to 400°F. Grease 9-inch pie plate. Sprinkle asparagus, onions, 3/4 cup of the cheese and the salmon in pie plate.
  • Stir remaining ingredients until blended. Pour into pie plate.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake about 2 minutes longer or until cheese is melted. Cool 5 minutes.

This recipe sounds very good and uses fresh asparagus. Again, it is a recipe from Betty Crocker Bisquick cookbooklet, October 1998. If you are like me and do not like to debone and pick thru canned salmon there is also a package of salmon. I believe it is Chicken of the Sea and is in the aisle with the tuna in the grocery store. My mom has used the packaged tuna and said it does taste a bit better than the canned and not so much of the mess.

1 lb asparagus, cut into 1-inch pieces and approximately 2 cups
2 medium green onions, sliced 1/4 cup
1 1/2 cups swiss cheese, shredded
6 ounces salmon, drained and flaked
1 cup Bisquick baking mix
1 3/4 cups milk
1 1/2 teaspoons fresh basil or 1/2 teaspoon dried basil leaves
1/8 teaspoon pepper

Steps:

  • Preheat oven to 400 degrees. Grease a 10x1 1/2 inch pie plate. Sprinkle asparagus, onions, 1/4 cup of the cheese and salmon into the pie plate, follow that order.
  • Stir together the baking mix, milk, basil, pepper, and eggs until blended and pour over salmon.
  • Bake for 40 to 45 minutes uncovered, or until knife inserted in the center comes out clean. Sprinkle remaining cheese immediately on pie. Bake an additional two minutes or until cheese is melted. Let stand 10 minutes, slice, and serve.

I received this recipe from a dear neighbor years ago when we lived in the mountains near Yosemite National Park. We had four small children, and the whole family really loved this recipe. Now I make it for my husband, for guests, and for my children and grandchildren when they visit.

1 pound fresh asparagus
1/2 cup chopped onion
2 tablespoons butter
3 eggs, lightly beaten
1/2 cup milk
2 tablespoons minced fresh parsley
1/2 teaspoon dried basil
1/2 teaspoon salt
1 can (14-3/4 ounces) pink salmon, drained, boned and flaked
1 unbaked pastry shell (9 inches)

Steps:

  • Place asparagus in a large saucepan with enough water to cover; cook until crisp-tender. Drain well. Reserve six spears for garnish; cut remaining spears into bite-size pieces. Set aside. , In a small saucepan, saute onion in butter until tender. Set aside. , In small bowl, mix eggs, milk, parsley, basil, salt and salmon. Add sauted onion. Place cut asparagus in pastry shell; top with salmon mixture. Arrange reserved asparagus spears, spoke fashion, on top. Cover edges of crust with foil to prevent over-browning. , Bake at 425° for 30-35 minutes or until filling is set.

2 salmon fillets , about 140g/5oz each
100g pack asparagus spears
3 tbsp olive oil
juice half a lemon
2 tsp wholegrain mustard
410g can cannellini beans , drained and rinsed
2 large handfuls of baby spinach leaves

Steps:

  • Get a steamer on to boil. Put the salmon fillets in the first tier and steam for 3 mins until the salmon has changed colour. Throw the asparagus spears in with the salmon and continue to steam for 4-5 mins until the asparagus is tender and the fish is cooked.
  • While everything's steaming, make a dressing by whisking together the olive oil, lemon juice and mustard. Tip the cannellini beans and spinach into a large bowl. When the asparagus is cooked scoop it into the bowl, then stir in the dressing. Divide the vegetables between two plates and sit the salmon on top.

It's high in folate, zinc, selenium, vitamin E and vitamin C, making it the perfect fertility boosting lunch or dinner. Cooking to conceive has never been so easy and delicious. The base of this tart is made using ground almonds, we've used a food processor to mix together all the base ingredients, however it is still possible to make this recipe without it, you can also mix the ingredients by hand and still achieve the same great taste, there will just be a slightly crunchier texture.

180 g ground almonds
1 tablespoon flax seed
1 tablespoon coconut oil
1 egg
1 tablespoon water
1 teaspoon olive oil
2 salmon fillets
9 asparagus spears
100 g lentils
500 ml water
1/2 red onion
100 g spinach
30 g frozen peas
2 eggs
2 egg whites
75 g Greek yogurt
115 ml almond milk, unsweetened
1 tablespoon fresh dill
2 teaspoons Dijon mustard
1 teaspoon nutmeg
1 teaspoon black pepper
1/2 lemon, juice
1 teaspoon olive oil

Steps:

  • Preheat the oven to 170C/340°F.
  • Place all of the pastry ingredients (except for the olive oil) into a food processor and pulse until combined. If the mixture is too sticky, add more ground almonds.
  • Grease your pie tin with the olive oil and place the pastry mixture inside it, pressing it along the bottom and up the sides until everywhere is covered.
  • Bake in the oven for 15 minutes.
  • Meanwhile, start making the filling. Place the lentils in a saucepan and cover with 500ml water, bring to the boil, then simmer for 15 minutes.
  • Break the tops from the asparagus spears. Add the asparagus, frozen peas and spinach to a large pan, cover with water, bring to a simmer and cook for 5 minutes. Drain, then set aside.
  • Cut the salmon fillets into chunks and remove the skin. Add the milk and salmon to a large pan, and bring to a gentle simmer. Cook for 4-5 minutes, then drain.
  • Heat the olive oil in a frying pan, slice the onion and gently fry until softened.
  • Whisk together the eggs, egg whites, Greek yoghurt, nutmeg and black pepper until combined, then add in the onion, peas, mustard, dill, lemon zest, salmon, spinach, and lentils.
  • When the pastry is ready - remove from the oven and pour in the filling mixture, then place your asparagus and fresh dill on top.
  • Place back into the oven and bake for a further 10-15 minutes, until the filling has set and the crust has started to brown.

1 pinch fresh ground black pepper
1 teaspoon chopped fresh thyme
1 ¼ cups milk
3 large eggs
1 tablespoon lemon zest
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
¼ teaspoon salt
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Butter the inside edges of a 2-quart casserole dish.
  • Stir flour, 1/2 teaspoon salt, sugar, black pepper, fresh thyme, and milk together in a large bowl until smooth.
  • Whisk eggs and lemon zest into milk mixture to form a smooth batter.
  • Melt butter in a heavy skillet over medium heat.
  • Cook and stir asparagus and 1/4 teaspoon salt in melted butter until the asparagus turns dark green and is coated with butter, 1 to 2 minutes.
  • Layer asparagus in the bottom of the prepared casserole dish. Pour batter evenly over the top.
  • Bake in the preheated oven until the pie has puffed up and is browned around the edges, 40 to 45 minutes.

1 ½ cups milk

  • Combine wine, olive oil, parsley, onion, and juice of 1 lemon in a large skillet over medium heat until simmering. Place salmon on top, with scales down. Cover and poach until fish flakes easily with a fork, about 20 minutes.

2 tbsp olive oil
8 asparagus spears, trimmed and halved
2 handfuls cherry tomatoes
1 tbsp balsamic vinegar
2 salmon fillets, about 140g/5oz each

  • Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  • Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.
