AUNT AMY'S SUPER CORN

This recipe is super easy and super delicious. It's SUPER CORN!

Number Of Ingredients 5

1 can(s) whole kernel corn, not drained
1 can(s) cream corn
8 ounce(s) sour cream
8 tablespoon(s) butter
1 box(es) jiffy cornbread mix

Steps:

  • Melt the butter in your pan, in the oven. I do this so I don't have to spray my pan with any chemicals. When it's melted, swish it around your pan to coat it, then dump the rest of it into a bowl for step #2.
  • Combine all ingredients (including the melted butter) and bake in a greased 8x8 pan at 350 degrees for 50-60 minutes. Should be golden brown. Doubles well, for a 9 x 13 pan.

I don't know who Sister Mabel is, but my mom and grandmother have always made this and it is divine. It is unique because it uses both baking soda and cream of tarter. It can be difficult to get the temperature right for the candy; the final product should be crisp and crunchy, not sticky. I always double this and it makes for a full oven!

2 cups light brown sugar, firmly packed
1/2 cup light corn syrup
1/2 cup butter
1/4 teaspoon cream of tartar
1 teaspoon salt
1 teaspoon baking soda
6 quarts popped corn

Steps:

  • In 2½ quart saucepan, combine brown sugar, corn syrup, butter, cream of tartar, and salt. Bring to boil, stirring over medium high heat.
  • Stirring constantly, boil rapidly until mixture reaches 260° on candy thermometer.
  • Remove from heat. Stir in baking soda quickly but thoroughly. It will bubble!
  • Pour at once over popped corn in large baking pan. Stir gently until all kernels are coated. If you are doubling it you will need someone to help you do this FAST. Bake at 200° for 1 hour, stirring 2 or 3 times during baking.
  • Turn out at once on wax paper. Spread apart and allow to cool completely. Break into small clusters. Store in tightly-covered containers.

Aunt Amy was a great cook! Unfortunately this is the only recipe I got from her.

Number Of Ingredients 6

8 c cereal, corn chex, rice chex, cheerios
peanuts and/ or pecans
1/2 c brown sugar
1/2 c dark karo
1/4 c butter
1/2 tsp salt

Steps:

  • 1. Bring syrup of brown sugar, dark karo, butter and salt to a boil, stirring till it boils. Then boil for 5 min.
  • 2. Pour over cereal in large bowl and mix well until coated. Pour onto buttered sheet pans.
  • 3. Bake at 250 degrees for 1 hour, stirring every 15 min. Spread on wax paper to cool. Put in large container w/lid when cooled.
