To a slow cooker chicken, I added an old family noodle recipe. If you want it to be more like a soup, add another quart of broth. This was a fixture at family reunions when I was a child, and the slow cooker makes it even easier.

2 carrots, sliced
2 onions, sliced
2 stalks celery, cut into 1 inch pieces
1 (4 pound) whole chicken
1 teaspoon salt
½ teaspoon ground black pepper
½ cup white wine
¼ teaspoon dried basil
2 eggs, beaten
¼ cup water
1 pinch salt
2 tablespoons shortening
1 cup all-purpose flour, or as needed
2 quarts low salt chicken broth

Steps:

  • Place the carrots, onions and celery in the bottom of a slow cooker. Place the whole chicken on top of the vegetables and season with salt and pepper. Pour in the white wine and sprinkle basil over the top. Cover and cook on Low setting for 8 to 10 hours.
  • In a medium bowl, stir together the eggs, water, salt, shortening and flour to form a stiff dough. After I've mixed in as much flour as possible using a fork, I knead the dough with my hand in the bowl to incorporate as much flour as possible. Let the dough rest for a few minutes.
  • Roll the dough out on a well-greased board to 1/8 inch thickness. Use a pizza cutter or pie crust cutter to cut into strips about 1/2 inch wide and 3 inches long. Dust lightly with flour, and leave to dry for a few hours while the chicken cooks.
  • When the chicken is done, remove the meat and vegetables to a platter. Transfer the juices to a large pot and stir in 2 quarts of chicken broth. Bring to a boil and add the noodles. Cook for about 10 minutes, until tender. Meanwhile, remove the meat from the chicken and shred. Discard bones and skin. When the noodles are done, return the vegetables to the pot and add shredded chicken meat. Serve.

1 (26 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
3 (14.5 ounce) cans chicken broth
2 cups diced, cooked chicken breast meat
2 teaspoons onion powder
1 teaspoon seasoning salt
½ teaspoon garlic powder
2 (9 ounce) packages frozen egg noodles

Steps:

  • In a large pot, mix the cream of chicken soup, cream of mushroom soup, chicken broth, and chicken meat. Season with onion powder, seasoning salt, and garlic powder. Bring to a boil, and stir in the noodles. Reduce heat to low, and simmer for 20 to 30 minutes.

One 2- to 3-pound chicken fryer, cut up
2 carrots, diced
2 celery stalks, diced
1/2 medium onion, diced
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon ground thyme
1/4 teaspoon turmeric
16 ounces frozen home-style egg noodles (such as Reames)
3 tablespoons all-purpose flour
Splash of half-and-half, optional
2 teaspoons finely minced fresh parsley

Steps:

  • Start by putting the chicken in a pot and covering it with water. Bring the water to a boil, and then reduce the heat to low. Simmer for 45 minutes. Remove the chicken from the pot. Set the chicken aside to cool briefly.
  • Shred the chicken with 2 forks, reserving the bones. Return the bones to the pot and boil for 20 minutes. Remove the bones from the pot and discard.
  • Add the shredded chicken, carrots, celery and onions to the pot. Then add the salt, pepper, thyme and turmeric. Bring the mixture to a gentle boil, and then reduce the heat and simmer for 10 minutes. Stir in the noodles; no need to thaw them first!
  • Finally, mix the flour with 1/2 cup water until smooth. Stir the flour mixture, the splash of half and half (if you're into that kind of thing) and the minced parsley into the pot. Simmer until the noodles are tender, about 15 minutes, tasting and adding more salt if needed at the end. The soup should be thick and stew-like and your kitchen should smell like home.

2 tablespoons butter
1 tablespoon olive oil
1 large Vidalia onion, chopped
2 celery stalks, halved lengthwise and cut into 3/4-inch pieces
2 medium carrots, halved lengthwise and cut into 3/4-inch pieces
Salt and freshly ground black pepper
2 cloves garlic, chopped
3 tablespoons all-purpose flour
6 cups chicken stock
1 bay leaf
Dash hot sauce (recommended: Tabasco)
Dash Worcestershire sauce
2 boneless, skinless chicken breasts, cubed into bite-size pieces
4 ounces egg noodles, about 1 cup
8 ounces frozen peas
1/4 cup freshly chopped dill leaves

Steps:

  • Melt the butter in a large Dutch oven over medium heat and add the olive oil. Add the onion, celery and carrots and saute until soft, about 4 minutes. Season with salt and pepper, to taste. Stir in the chopped garlic and saute until fragrant, 1 minute more. Whisk in the flour and stir frequently until it coats the vegetables and makes a paste. Cook until it reaches a pale blonde color, about 2 minutes. Gradually whisk in the chicken stock, making sure there are no lumps. Add the bay leaf, hot sauce, and Worcestershire and season with salt and pepper, to taste. Let the soup simmer for 15 minutes to thicken and develop the flavors.
  • Reduce the heat and add the chicken and the noodles. Do not boil the chicken or it will become tough. Add the peas and the dill and simmer gently for 10 more minutes.
  • Taste for seasoning and add more salt and pepper, if needed. Ladle the soup into serving bowls and serve.

These are my favourite chicken wings from my Aunt Jean. We rarely have leftovers, although my mom prefers the leftovers. Cook time does not include marinating. Definitely marinate this for 24 hours if you can. I've done the shorter marinating time and it really does make a difference.

15 ounces soy sauce
8 ounces honey
1 teaspoon garlic
2 cups beef broth

Steps:

  • Mix soy sauce, honey, garlic, and broth in a baking pan.
  • Place chicken in flat rows in sauce.
  • Marinate for at least 3 hours in fridge. They are best when left in for 24 hours and turned over at 12 hours.
  • Drain and bake at 350°F for approximately 30 minutes or until done.

1 whole chicken
3 bay leaves
½ onion
Salt

Seasonings (garlic, celery, Johnny's, etc.)
Eggs
Flour

Steps:

  • Chicken: Place a whole chicken in a stew pot and cover with water. Add 3 bay leaves Add ½ onion cut into large chunks Season with Johnny's or Old Bay, garlic powder, celery salt, black pepper (whatever flavor you want the broth to have). Cook 2-3 hours until it falls apart. Remove the chicken from the broth when done. Toss out anything you used for flavor (onions, etc.) Remove all the meat from the chicken and toss the bones. Noodles: Aunt Jean uses 3 eggs for Sunday dinner. More people = more eggs. General rule of thumb is one egg for noodles (and one potato) per person. Crack 3 eggs into a large mixing bowl Season with a dash of salt and pepper Beat eggs lightly until blended. Start with 4 handfuls of flour added to the eggs and fold together. Continue to add flour and fold together until you get a dough consistency that is not sticky (Aunt Jean used 5 more handfuls). Roll out the dough on a pastry sheet or freezer paper until thin. Use lots of flour to keep it from sticking. Let the dough dry until you can cut it easily without sticking (at least 10 minutes - longer the better) depending on how much time you have before dinner. Cut with a pizza cutter into thin noodles using flour so they won't stick (flour also thickens the broth). Put chickenless broth back on stove and bring to boil Drop the noodles in the broth one at a time, with stirring, so you don't get dumplings. Put in remaining flour from the pastry sheet as a thickener. Cook until the noodles are done, about 15-20 minutes, depending on how hungry you are. Combine: Optional (although Aunt Jean does not): you can add carrots, etc., to the broth while the noodles are cooking. Add the chicken back to the broth. (You can add the chicken while you are cooking the noodles or after, depending on whether you want the chicken cooked more or less). Serve over mashed potatoes. Makes as many servings as you like as long as you make enough noodles.
