Aunt Martha's Gingerbread Cookies image

Festive Gingerbread Cookies decorated with Royal Icing are always a hit at Christmas. I love this recipe because the dough is cooked on the stove and makes the house smell good during the holidays.

Categories     Kid Friendly

Time 40m

Number Of Ingredients 10

1 cup sugar
1 cup unsalted butter
1/2 cup dark unsulphered molasses
1 tsp. ground cinnamon
1 tsp. ground allspice
1 tsp. ground ginger
2 large eggs, lightly beaten
1 tsp. white or cider vinegar
5 cups all-purpose flour
1 tsp. baking soda

Steps:

  • In large pot, mix sugar, butter, molasses, and spices. Bring to boil over medium heat, stirring constantly. Remove from heat and cool to lukewarm. When cooled, add eggs and vinegar. Mix well. In large bowl, blend flour and baking soda with whisk. Add flour and baking soda to molasses mixture, and mix to a smooth dough. Cover with plastic wrap and chill overnight until firm. Roll dough in portions on floured board to 1/8" thick for small cookies, and 1/4" thick for large cookies. Use cookie cutters to cut desired shapes. Bake on ungreased cookie sheets at 350 degrees for 10-12 minutes, until edges begin to brown. Remove cookies to rack to cool completely before decorating. Note: Cookies will harden as they cool. Frost with Royal Icing and sprinkle with decorations.

GINGERBREAD COOKIES

Gingerbread Cookies image

Provided by Duff Goldman

Categories     dessert

Time 4h

Yield 30 cookies

Number Of Ingredients 16

2 cups all-purpose flour, plus more for flouring the surface
2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
1/4 teaspoon ground cloves
1/4 teaspoon salt
1 stick (1/2 cup) unsalted butter, softened
1/3 cup lightly packed dark brown sugar
1/3 cup molasses
1 extra-large egg
Nonstick cooking spray, for spraying the parchment paper
4 cups powdered sugar (approximately)
3 extra-large egg whites (pasteurized)
3 drops lemon juice, plus more if needed
Food coloring, optional

Steps:

  • For the cookies: In a medium bowl, combine the flour, ginger, cinnamon, nutmeg, baking soda, cloves and salt.
  • In a big bowl, beat the butter and brown sugar together with a wooden spoon or a hand mixer. Mix in the molasses and egg until smooth, then add the flour mixture and mix until well combined. Wrap the dough in plastic wrap and refrigerate for 1 to 2 hours.
  • On a floured surface, roll out the dough to about 1/8-inch thickness. Freeze it flat on a baking sheet for 20 to 30 minutes.
  • Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper. Lightly spray the paper with cooking spray.
  • Use your preferred cookie cutters to stamp out shapes (or use a paring knife and architect the gingerbread home of your dreams), then transfer the shapes to the prepared baking sheets. Bake until the dough no longer looks shiny, 18 to 20 minutes. Let cool on the sheets for 10 minutes, then transfer the cookies to a wire rack to cool completely.
  • For the royal icing: Using a stand mixer and the whisk attachment, whip most of the powdered sugar with the egg whites and most of the lemon juice. Whip until the icing holds its shape and is bright white (not translucent), 5 to 8 minutes. If it is too soft, add more powdered sugar. If it is too stiff, add a bit more lemon juice, drop by drop. If you are using color, add a few drops of it at this point and keep whipping until you have a shade you want. Pipe the royal icing onto the cooled cookies to decorate.
  • To store royal icing: The ideal way is to scrape it out of the bowl and into a plastic, disposable piping bag, then leave it at room temperature. Don't cut the bag until you're ready to use the royal icing and don't overfill the bag--you want enough room to tie the back of the bag off to keep the icing airtight. If any air comes into contact with the icing, it gets hard and that part of the icing is useless. Never attempt to mix hard bits back into the royal icing--you'll ruin the whole batch. The other accepted method of storing the icing is to scrape it into a plastic or ceramic bowl, and cover it with a wet paper towel. This method works, but it wastes both paper towels and royal icing. It's also just annoying. When you're piping small designs, you want to use very small parchment piping bags. It's easy to stick the nose of a large piping bag into a small one and extract exactly how much you need. When the icing is in a bowl, you have to use a spoon to get it out. The spoon is difficult to get into a piping bag, and you keep using spoons and wasting royal icing.

GINGERBREAD COOKIES

Gingerbread Cookies image

Provided by Trisha Yearwood

Categories     dessert

Time 4h35m

Yield 5 dozen cookies

Number Of Ingredients 16

1 cup vegetable shortening
1 cup granulated sugar
1 cup molasses
2 tablespoons cider vinegar
1 large egg
1 tablespoon ground ginger
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon salt
4 to 5 cups sifted all-purpose flour, plus more for flouring
Nonstick cooking spray, for the baking sheets and rolling pin
3 large egg whites, room temperature (or equivalent meringue powder)
2 1/2 cups sifted confectioners' sugar
1/4 teaspoon cream of tartar
Food color, for tinting, optional

Steps:

  • For the cookies: In the bowl of an electric mixer, cream the shortening and granulated sugar together until light and fluffy. Add the molasses, vinegar and egg and beat on high speed to blend thoroughly.
  • Sift together the ginger, baking soda, cinnamon, cloves, salt and 4 cups of the flour in a separate bowl. Add the dry ingredients to the creamed shortening and sugar and mix to make a firm, manageable dough, adding more flour if needed. Wrap the dough in plastic and refrigerate until firm, about 3 hours.
  • Preheat the oven to 375 degrees F. Lightly spray 2 baking sheets with cooking spray.
  • Spray a rolling pin with cooking spray and lightly flour your work surface. Roll the dough to 1/8-inch thickness and cut it into desired shapes with a knife or cookie cutters. (You can reroll the scraps to make a few more cookies.) Place the cookies 1 inch apart on the prepared baking sheets and bake for 5 to 6 minutes. Cool the cookies for 2 minutes on the baking sheets before removing to a wire rack to cool completely. Repeat with the remaining dough.
  • For the royal icing: Beat the egg whites and 1/3 cup of the confectioners' sugar with a wire whisk or the whisk attachment of your mixer. Add another 1/3 cup sugar and the cream of tartar and beat 10 minutes longer. Add the remaining sugar and beat until the mixture is smooth and thick. The icing can be tinted as desired with food coloring.
  • Ice the cooled cookies with the royal icing as desired.

CLASSIC AUNT SALLY (OR SALLY ANN) COOKIES

Classic Aunt Sally (Or Sally Ann) Cookies image

These are wonderful not-too-sweet gingerbread-like cookies. The icing sets up like royal, except it is soft inside the hardened shell. They freeze great, and are terrific for gift-giving, as they package beautifully. I make them for Halloween in the shape of bats and covered with orange sprinkles and for thanksgiving as leaves with no sprinkles.

Categories     Dessert

Time 1h30m

Yield 48 cookies, 36 serving(s)

Number Of Ingredients 17

1 cup shortening (not butter)
2 eggs
1 cup sugar
1 cup molasses
1 cup buttermilk
5 1/2 cups flour
1 teaspoon salt
4 teaspoons baking soda
1 tablespoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon clove
1 tablespoon ginger
1 (1/4 ounce) envelope plain gelatin
4 cups powdered sugar
3/4 teaspoon baking powder
1 teaspoon vanilla
1 cup cold water

Steps:

  • Cream shortening and sugar, add molasses and eggs and buttermilk.
  • Mix dry ingredients thoroughly, then add to creamed mixture.
  • Refrigerate for an hour or so, until slightly firm.
  • Roll out at about 1/4" (thicker for more cakelike cookies, thinner for crispier ones - they're good both ways).
  • Cut out (traditionally with a SPAM can, but to each her own).
  • Bake at 325 for about 12-15 minutes.
  • When cookies are cool, whip up the icing.
  • In saucepan, dissolve gelatin in cold water.
  • Bring to a boil and simmer for about 10 minutes.
  • While simmering, add 3 C powdered sugar to a large straight-sided bowl and measure in soda. Stir.
  • Pour hot liquid into sugar mixture and whisk. Add vanilla. Lumps are not good.
  • If 3 C of powdered sugar is enough to produce a almost-set pudding-like icing, it is read. If it seems thin, add another cup and whisk inches.
  • Take cooled cookies and dip the tops into the icing, wiping off excess on side of bowl.
  • Set on wax paper until icing is hard.
