Great Canadian Steak Spice image

Found this in one of my magazine's in the back. from barbecue whiz Ted Reader. Would be great on steaks, chicken, pork or even seafood. Enjoy.

2 tablespoons kosher salt
1 tablespoon fresh coarse ground black pepper
1 tablespoon coarsely ground white pepper
1 tablespoon mustard seeds
1 tablespoon cracked coriander seed
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon crushed red chile
1 tablespoon dill seed

Steps:

  • In a bowl combine the salt, black pepper, white pepper, mustard seeds, coriander seeds, garlic powder, onion powder, chilies and dill seeds.
  • Store in an airtight container in a cool, dry place away from heat and light.

This is just like the steak spice you find in the Montreal delis in Canada. It is bold and spicy and good on so much more than just steak. Grinding the spice mixture at home only takes a couple of minutes and provides the freshest flavor.

2 tablespoons white peppercorns
1 tablespoon coriander seed
2 teaspoons dill seed
2 teaspoons mustard seed
1 teaspoon red pepper flakes
2 tablespoons dried minced garlic
2 tablespoons kosher salt

Steps:

  • Place white peppercorns into a mini food processor or spice grinder; pulse several times. Add coriander seed, dill seed, mustard seed, and red pepper flakes to food processor; pulse until seeds are broken into a coarse mixture.
  • Transfer spice mixture to a small bowl; stir in garlic and kosher salt. Store mixture in an airtight glass container; shake before using.

2 tablespoons blended mixed peppercorns
1 tablespoon coriander seed
1 tablespoon dill seed
1/2 teaspoon hot pepper flakes
2 tablespoons coarse sea salt
1 tablespoon garlic powder
1 tablespoon onion powder

Steps:

  • Use a grinder, coffe grinder or mortar to crush the peppercorns, coriander, dill seeds and pepper flakes.
  • Add the remaining ingredients and mix well.
  • Sprinkle generously on steaks, whole chiken before roasting, or tuna steaks before grilling.
