½ cup shortening
1 cup brown sugar
¼ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup milk
2 cups apple - peeled, cored, and chopped
¼ cup shortening
2 cups sifted confectioners' sugar
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
¼ cup evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. Sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
  • In a large bowl, cream together the shortening, brown sugar and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the chopped apples.
  • Spread batter evenly in prepared pan. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • To make the frosting: In a medium bowl, combine 1/4 cup shortening, confectioners' sugar, cinnamon and nutmeg. Beat until light and creamy. Beat in the milk, one tablespoon at a time, until desired spreading consistency is achieved. Spread over top of cooled cake.

1/3 cup butter or margarine
2/3 cup granulated sugar

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 8-inch square pan with shortening.
  • In large bowl, mix brown sugar and softened butter with spoon until light and fluffy. Beat in egg. Stir in flour, baking soda, 1 teaspoon cinnamon, the nutmeg and salt. Stir in apples. Spread batter in pan.
  • Bake 25 to 35 minutes or until toothpick inserted in center comes out clean.
  • Meanwhile, in 1-quart saucepan, heat sauce ingredients over medium heat, stirring frequently, until butter is melted and sauce is hot. Serve warm sauce over warm cake.

½ teaspoon ground nutmeg

1 cup white sugar
¾ cup apple butter
1 teaspoon vanilla extract
½ cup whole bran cereal or wheat germ
1 cup sour cream
2 eggs, room temperature

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Prepare the topping by mixing together the brown sugar, cinnamon, nutmeg, and chopped pecans.
  • Sift together the flour, baking powder, baking soda, and salt.
  • Beat butter and sugar together in a large bowl with an electric mixer until light and fluffy; add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next. APPLE TOPPING:
2 cups chopped peeled tart apples
3 tablespoons sugar
1 tablespoon orange juice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
CAKE:
1/2 cup butter, melted
3/4 cup sugar
2 large eggs, room temperature
1-1/2 teaspoons vanilla extract
1-1/4 cups cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sour cream
BUTTERMILK SAUCE:
3/4 cup sugar
6 tablespoons butter, cubed
1/3 cup buttermilk
2 teaspoons light corn syrup

Steps:

  • In a small saucepan, bring cider a boil; cook until liquid is reduced to about 1/4 cup, 15-20 minutes. Remove from the heat and cool., Preheat oven to 350°. In a large bowl, combine apples, sugar, orange juice, cinnamon and cloves; toss to coat. For cake batter, in a large bowl, beat butter, sugar, eggs, vanilla and cooled cider reduction until well blended.
