1 pound bulk pork sausage
1 medium apple, peeled and chopped
1 medium onion, chopped
1/2 cup chopped celery
3 cups cooked long grain rice
1/2 cup raisins
1/3 cup minced fresh parsley
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage, apple, onion and celery over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. , Transfer to a greased 2-qt. baking dish. Cover and bake 25-30 minutes or until heated through.

I usually shy away from making up recipes myself, but I threw caution to the wind when I had some sausages on hand and couldn't find a recipe I liked for them. The result was surprisingly good so I decided to post my experiment :)

Number Of Ingredients 9

1 lb pork honey garlic sausage
1 tablespoon oil
2 large sweet potatoes
1 large onion
1 granny smith apple
1/2 cup white wine
1/2 cup beef broth
1 garlic clove
1 1/2 teaspoons dried rosemary

Steps:

  • Preheat oven to 375°F.
  • Cut sausages into 3/4" pieces. Fry in oil over medium heat until cooked completely through. Remove to a lightly greased casserole dish.
  • Meanwhile, chop sweet potatoes into 3/4" cubes, place in a microwaveable bowl with 2 Tbsp water, cover and cook on high 3-5 minutes or until tender. Drain (if necessary) and add to sausage.
  • Slice onion into thin rings. Core and slice apple into thin slices, peeling if desired.
  • Drain all but 1 Tbsp grease from sausage pan. Add onions and cook, stirring often until soft and golden. Add apples and cook an additional 2 minutes.
  • Add garlic and rosemary. Cook, stirring, for 1 minute.
  • Add wine and broth. Cook for 2 minutes, stirring a couple of times.
  • Add onion mixture to sausage and sweet potatoes and stir gently to combine.
  • Place in oven for 15-20 minutes.

I haven't tried this recipe yet but I didn't want to lose it. I found it on the "Year of SlowCooking" blog.

1 lb sausage, any flavor
1 large apple, chopped, no need to peel
1 yellow onion, chopped
1/2 cup chopped carrot
3 cups already cooked long-grain rice
1/2 cup raisins
1 tablespoon dried parsley flakes
1 tablespoon brown sugar
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/4 teaspoon black pepper
1/3 cup chicken broth or 1/3 cup water

Steps:

  • The Directions.
  • The amount of ingredients fit nicely in a 4 quart crockpot. I'd say this comfortably feeds a family of 4-5 with a bit of leftovers. If you have a large family or teenagers, add more rice and sausage. It's a pretty easy recipe to adapt to your needs.
  • If you are going to use uncooked pork sausage, I'd recommend browning on the stove top, and draining before adding to the crockpot.
  • Otherwise, dump all the ingredients into the crock, and stir well.
  • Cover and cook on low for 5-7 hours, or on high for 3-4. You're really only heating through, and allowing the vegetables to soften.
  • This will not stick together like a gloppy casserole; it has the consistency of fried rice. Use bowls to serve rather than plates.

1 Tsp each Fresh sage, rosemary, and thyme Chopped
4 cups Long grain rice Cooked
1/2 cup Raisins or craisins Optional
1/3 cup Fresh parsley Minced
2 tablespoons Brown sugar
1/2 teaspoon Salt
1/4 teaspoon Allspice
1/4 teaspoon Ground cinnamon
1/8 teaspoon Pepper
1/3 Cup Smoked Cheddar cheese Grated
1/4 Cup Chicken broth or apple cider

Steps:

  • In a large skillet, cook the sausage, apple, onion and celery over medium heat until meat is slightly brown and apple and onions are soft but not mush; drain. In the skillet, stir rice, raisins and spices into the sausage mixture. Transfer to a greased 2-qt. baking dish. Pour broth or cider over top. Cover and bake at 350° for 25-30 minutes or until heated through. Remove cover, top with cheese and return to oven for about 5 minutes to melt cheese. Yield: 4-6 servings.
