BUTTERNUT SQUASH TARTLETS



Butternut Squash Tartlets image

Tasty butternut squash mixture filled in filo shells for mini tartlets. Perfect for appetizers.

1 medium butternut squash, peeled, seeded, cut into 1/2-inch pieces (3 cups)
2 tablespoons olive oil
1 teaspoon freshly ground pepper
1/4 teaspoon salt
1 clove garlic
2 tablespoons whipping cream
1 teaspoon chopped fresh sage leaves
2 packages (1.9 oz each) frozen mini filo shells, 30 shells thawed
1/2 cup finely grated Asiago cheese (2 oz)
Fresh sage leaves, if desired
Additional ground pepper, if desired

Steps:

  • Heat oven to 425°F. Place butternut squash in ungreased 17x12-inch half-sheet pan. Drizzle with olive oil; toss gently to coat. Sprinkle with pepper and salt. Roast 30 to 40 minutes or until browned and tender, stirring after 20 minutes. Cool in pan on cooling rack, about 30 minutes. Reduce oven temperature to 400°F.
  • In food processor, place garlic. Cover; process, with on-and-off pulses, until chopped. Add butternut squash, whipping cream and chopped sage. Cover; process 1 to 2 minutes or until smooth, scraping bowl occasionally.
  • Line cookie sheet or half-sheet pan with foil. Spoon about 1 rounded teaspoonful butternut squash mixture into each filo shell. Place on cookie sheet. Sprinkle with cheese.
  • Bake 7 to 9 minutes or until edges are golden brown. Immediately remove to cooling rack. Garnish with sage leaves and pepper. Serve warm.

Heirloom-Squash Tartlets image

Batches of these sweet tartlets are made with a variety of heirloom squashes chosen for their hues; ours include White Acorn, Golden Nugget, and Red Kabocha.

Number Of Ingredients 11

2 pounds heirloom squashes, (such as White Acorn, Golden Nugget, or Red Kabocha), cut into wedges and seeded
All-purpose flour, for work surface
2 recipes Easy Pate Sucree
3 large eggs
3/4 cup sugar
1 tablespoon plus 1/2 teaspoon cornstarch
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Pinch of ground nutmeg
1 1/2 cups evaporated milk
1/2 teaspoon salt

Steps:

  • Preheat oven to 375 degrees. Fit a medium pot with a steamer insert, and fill with water to just below the insert. Bring to a boil. Add squashes to insert; steam until soft, 15 to 20 minutes. Let cool completely.
  • On a lightly floured surface, roll out 1 disk of dough to a large rectangle, about 1/8-inch thick. Transfer to a baking sheet, and refrigerate until firm, about 30 minutes. Repeat with remaining disk.
  • Cut dough into twelve 5-inch rounds. Fit a round into each 4 1/2-inch tart shell, pressing into corners; trim flush with top edge. Refrigerate until firm, about 30 minutes. Line each shell with parchment paper, and fill with pie weights or dried beans. Freeze 10 minutes.
  • Bake tart shells 10 minutes. Remove weights and parchment. Return to oven; bake 5 to 10 minutes more. Transfer to wire racks; let cool completely.
  • Scoop out flesh of squashes into a food processor, and process until pureed (you should have 1 1/2 cups puree). Transfer to a large bowl. Add all other ingredients, and whisk until combined.
  • Reduce oven temperature to 350 degrees. Set tart shells on a rimmed baking sheet. Divide filling among shells. Bake until all but centers are set, 15 to 18 minutes. Transfer to wire racks; cool completely.

1 medium butternut squash, peeled, seeded and cut into 1/8-inch slices
1 medium acorn squash, peeled, seeded and cut into 1/8-inch slices
2 tablespoons water
1/4 cup olive oil
1 tablespoon minced fresh thyme
1 tablespoon minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup all-purpose flour
1/2 cup ground pecans
6 tablespoons sugar
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 package (17.3 ounces) frozen puff pastry, thawed
1 large egg, lightly beaten
2 tablespoons butter

Steps:

  • In a large microwave-safe bowl, combine squash and water. Cover and microwave on high for 5 minutes or until crisp-tender. Drain; return to bowl. In a small bowl, combine oil, thyme, parsley, salt and pepper; drizzle onto squash and toss to coat. In another small bowl, combine the flour, pecans, sugar, nutmeg and cinnamon; set aside., Unfold pastry sheets on a lightly floured surface. Roll each pastry to 1/8-in. thickness; transfer each to an ungreased baking sheet. Sprinkle with pecan mixture. Arrange squash slices to within 1-1/2 in. of edges, alternating slices of butternut and acorn squash. , Fold up edges of pastry over filling, leaving centers uncovered. Brush pastry with egg. Dot squash with butter. Bake at 375° for 35-40 minutes or until golden brown.

SIMPLE AUTUMN BUTTERNUT SQUASH AND BACON TART



Simple Autumn butternut squash and bacon tart image

A wonderful woman from my church makes an Autumn tart every October that is so tasty and reminds me of the fall. I adapted her recipe and came up with this tart that so tastes like an Autumn tart, with the roasted squash and rich cheeses. Enjoy!

1 - refrigerated pie crust, i used pillsbury
1 pound(s) peeled and cubed butternut squash
1-1/2 tablespoon(s) olive oil
- salt and pepper to taste
5 slice(s) thick cut bacon
2 teaspoon(s) minced garlic
1 small red onion, sliced into thin pieces
2 large eggs
1 - eggyolk
1 cup(s) light cream
1/4 cup(s) freshly grated parmesan cheese
1/3 cup(s) shredded gruyere cheese
1 tablespoon(s) fresh thyme, chopped

Steps:

  • Cut parchment paper to fit a 9-inch pie pan. Lightly spray paper w/ cooking spray. Place 1 pie crust in pan. Heat oven to 375.
  • In medium bowl, toss squash w/ oil. Season w/ salt and pepper. Place squash on a baking sheet. Bake until tender, about 30 mins. Let cool. Reduce heat to 350. In a skillet, over medium heat, cook bacon, until almost crisp, adding onion and garlic to the pan the last minute. Remove mixture w slotted spoon to a paper towel lined plate to drain.
  • In lg bowl, whisk together eggs, egg yolk, cream, parmesan cheese and a dash each of salt and pepper. Spoon squash into pie crust in pan, sprinkle w/ gruyere cheese. Pour egg mix over all in pie crust. Bake for 30 mins. Spoon bacon/onion mix over top. Bake another 10 mins. Let cool slightly. Sprinkle with fresh thyme. Slice and serve.
