Yield 1 (9-inch) pie

Steps:
- Preheat the oven to 400 degrees F.
- Pie Crust: Mix flour and shortening. Add salt and cold water. Add all the cold water at once and mix delicately. Form a ball and refrigerate for 2 hours.
- Once dough is chilled, flour your worktop. Divide dough in half. Roll out 2 pie crusts. One should be slightly larger than the other, this will be your bottom crust.
- Meat Filling: Heat the oil in a large pot. Add the pork and onion and cook over medium-low heat for 45 minutes, stirring often. When pork is cooked remove fat from pan. Add grated potato, salt, pepper, and allspice, to taste. Stir well, and let mixture rest for 20 minutes.
- Preheat the oven to 400 degrees F. Butter the bottom of 9-inch pie plate. Place the bottom crust in the pie plate and poke several holes in the crust with a fork. Make sure an ample amount of crust spills over the edges of the pie plate. Fill the crust with the meat mixture. Level with a spatula. Wet edges of bottom crust and place top crust over meat mixture. Press top crust onto meat mixture to eliminate any air holes. Beat together the egg and the milk to make an egg wash. Pinch the crust edges together and brush the top crust with the egg wash.
- Bake for 10 minutes. Reduce heat to 350 degrees F and continue baking for 15 minutes or until crust is golden brown.
- Slice and serve hot or cold.

- Roast poblano chilies over gas flame or in broiler until blackened on all sides. Enclose chilies in paper bag. Let stand 10 minutes. Peel, seed and coarsely chop chilies.
- Heat 2 tablespoons olive oil in heavy large skillet over medium-high heat. Add corn kernels and cook until beginning to brown, stirring occasionally, about 5 minutes. Add jalapeño chilies, garlic, cumin and oregano; sauté 2 minutes. Remove from heat. Mix in roasted poblano chilies, canned tomatoes, 1/2 cup reserved juice from canned tomatoes, green onions and cilantro. Season with salt and pepper.
- Cook squash in large pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Set aside. Mix cheeses in medium bowl.
- Preheat oven to 350°F. Lightly oil 15 x 10 x 2-inch glass baking dish. Combine 5 cups water and 1 1/2 teaspoons salt in heavy large saucepan. Bring to boil. Combine cornmeal and remaining 2 cups water in medium bowl. Gradually whisk cornmeal mixture into boiling salted water. Reduce heat to medium-low. Cook until cornmeal is very tender and mixture is thick, stirring often, about 14 minutes. Remove from heat and mix in yogurt.
- Spread 2/3 of cornmeal over bottom of prepared dish (cover remaining cornmeal to keep warm). Arrange squash over cornmeal in dish. Sprinkle squash with salt and pepper. Sprinkle 2 cups cheese over squash. Spoon corn kernel mixture evenly over cheese, spreading with spatula. Spread remaining cornmeal evenly over corn kernel mixture. Arrange tomato slices atop cornmeal, pressing gently. Sprinkle with salt and pepper. Drizzle remaining 1/4 cup juice from canned tomatoes over. Sprinkle remaining cheese evenly over casserole.
- Bake casserole uncovered until heated through and top is golden, about 1 hour. (Can be made 1 day ahead. Cool slightly. Cover and refrigerate. Rewarm, covered with foil, in 350°F oven until heated through, about 30 minutes.)
- Let casserole stand 15 minutes. Garnish with cilantro sprigs and serve.
MEATLESS TACO PIE
I got the idea for this from a recipe in a recent issue of Parents. I changed the ingredients and preparation to suit my family's taste. Both kids and my husband loved it.

Steps:
- Preheat oven to 425 degrees farenheit. Add the pintos, salsa, tomato sauce, garlic powder, and taco seasoning to food processor and process until mixture is creamy.
- Pour into a 2qt casserole and bake 30 minutes or until heated through.
- Meanwhile mix cornbread ingredients in a medium bowl, remove casserole and spoon cornbread mixture over top of bean mixture and return to oven to bake an additional 15 minutes or until top starts to turn golden brown.
- Remove from oven and serve with shredded cheese.
- The rest of my family does not like chunky food, thats why I did this in a food processor. If you like a chunky mixture (as I do), feel free to simply mix all ingredients and bake as is, without processing.

- Lentil Burgers. A frequent problem among vegetarians is that they don’t always get enough iron. However, plenty of veggies are high in iron and make excellent meat substitutes.
- Vegetable Lasagna. The ingredients list for veggie lasagna may be a little long, but good lasagna of any kind requires several ingredients. This one has everything you could want in a lasagna.
- Lentil Tacos. Thanks to the homemade seasoning mix, these lentil tacos taste just as wonderful as any other taco you’ve had and probably a lot better than some.
- Meatless Sloppy Joes. If it looks like a sloppy joe, smells like a sloppy joe, and tastes like a sloppy joe, it’s obviously a sloppy joe, right? Well, yes and no.
- Bean and Veggie Stuffed Peppers. These stuffed peppers are cheesy, garlicky, and just a little bit spicy. Stuffed with onions, tomatoes, rice, beans, and lots of seasonings, they’re also nutritious and filling.
- Lentil Loaf. People looking at this lentil loaf would have no idea that it’s not meatloaf. It has a similar appearance and texture, but in my opinion, it actually tastes better.
- Jackfruit “Pulled Pork” Sandwich. Jackfruit is an interesting fruit. When fully ripe, it tastes sweet, even overwhelmingly so. However, if you pick it early and cook it, it takes on the appearance and texture of meat, and the taste is so mild that it absorbs the flavors of whatever you add to it.
- Bean and Veggie Chili. Unlike most people, I firmly believe that chili is all about the beans. I know; I know! For most people, it’s all about the meat.
- Broccoli Potato Soup. Broccoli potato soup is one of my favorite comfort foods in the winter months, and this vegan version of the recipe isn’t bad. It’s not quite as thick as the original recipe, but what it lacks in creaminess, it makes up for in taste.
- Black Bean Burrito Bowl. Looking for an easy, convenient, and meatless lunch? Try this black bean burrito bowl. At first glance, the ingredients list seems super long, but much of it is seasonings.
