AVOCADO TOAST WITH PICKLED RADISHES
This dish was truly the best breakfast I've had in a long time. A toasted slice of bread topped with soft avocado and the unique flavor of pickled radishes. Delicious.

Steps:
- Bring vinegar, water, honey, and salt to a boil in a small saucepan. Remove from heat.
- Put radishes, mustard seeds, black pepper, and bay leaf in a pint jar with a lid. Pour hot vinegar mixture over the radishes. Let the radishes come to room temperature. Cover with lid and place in the refrigerator for at least 2 hours.
- Mix coarse sea salt, furikake, and sesame seeds together in a small bowl to create the seasoning mix.
- Toast bread until lightly brown, about 2 minutes. Top each slice with half the avocado. Top avocado with a portion of the pickled radishes. Sprinkle half the seasoning mix over radishes. Place a small handful of cilantro on top. Squeeze lemon over the toast.

RADISH AVOCADO TOAST RECIPE BY TASTY

Steps:
- Thinly slice all the fresh radishes. Set aside.
- Cut the avocado in half, and use a knife to slice the inside, then scoop out the avocado into a bowl.
- Mash the avocado with lime, salt and pepper.
- Spread the mixture on some toasted bread.
- Top the avocado toast with the sliced radishes and any other garnishes you would like.
- Sprinkle with salt and cracked pepper.
- Enjoy!

- To make the pickles, bring honey vinegar and water to a simmer in a small sauce pan. Place sliced radishes in a pint size mason jar along with scallions. Pour the warm vinegar mixture over the radishes. Let radishes come to room temperature before putting a lid on and place in the fridge for at least 2 hours.
- To make the toast, toast bread until lightly brown. Spread with a smear of butter (optional but I’m always in favor of butter) and top each slice of toast with 1/4 of sliced avocado. Top with pickled radishes, a sprinkle of sea salt and garnish with the sliced greens of a scallion.
