TUNA WITH AVOCADO MAYONNAISE
Dinner ready in 25 minutes! Relish these scrumptious grilled fish steaks served with homemade avocado mayonnaise - a flaky meal.

Steps:
- Heat grill. In food processor bowl with metal blade, combine all mayonnaise ingredients. Cover; blend until smooth. Place mixture in small bowl. Refrigerate while preparing tuna.
- When ready to grill, brush both sides of tuna steaks with olive oil; sprinkle with peppered seasoned salt and cumin. Place on gas grill over medium-high heat or on charcoal grill 4 to 6 inches from medium-high coals. Cook 8 to 12 minutes or until fish flakes easily with fork, turning once. Serve tuna steaks with avocado mayonnaise.

- Preheat oven to 400. Lightly coat a baking sheet with cooking spray.
- In a large mixing bowl, lightly mash the avocado.
- Add the tuna, bread crumbrs, red onion, cilantro, ilime juice, hot sauce, garlic powder, salt, and egg.
- Mix until the ingredients are fairly well combined.
- Form into 6 patties, then arrange on the prepared baking dish. Bake for 10 minutes, flip, then continue baking until the outsides are lightly crisp and the cakes are cooked through (about 10 additional minutes).

SEARED TUNA & AVOCADO ROLLS
Steps:
- Heat a medium (10 to 11-inch) dry cast-iron skillet over high heat for 3 minutes. Brush the tuna all over with olive oil and sprinkle it generously with salt and black pepper. Sear the tuna in the skillet for exactly one minute on each side. (The inside will be raw.) Transfer to a cutting board, cut into 1/2 to 3/4-inch dice, and set aside.
- In a large bowl, combine 1/4 cup olive oil, the lime zest, lime juice, soy sauce, Tabasco, 1 1/2 teaspoons salt, and 1 teaspoon black pepper. Add the tuna, scallions, and jalapeño. Cut the avocado in half, remove the pit, peel, and cut 1/2 to 3/4-inch dice. Carefully stir the avocado into the tuna mixture and set aside for 20 minutes.
- Meanwhile, combine the shallot and vinegar in a small bowl and set aside.
- Place the butter in a large (12-inch) sauté pan over medium-high heat and heat until the butter sizzles. Without opening the buns, toast them on each side for one minute, until nicely browned. Line the buns up on a platter, cut sides up, and spoon the tuna mixture into the buns. Drizzle with the Chipotle Mayonnaise and sprinkle on the pickled shallots. Serve while the buns are warm.
- Place the mayonnaise, chipotle pepper, adobo sauce, lime juice, and 1 1/4 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth. Refrigerate for up to a week.

- In a large bowl, combine the tuna, 1/3 cup bread crumbs, egg, onions, red pepper, mayonnaise, lemon juice, garlic powder and cayenne.
- Divide mixture into eight portions; shape into 2-inch balls.
- Roll balls in remaining bread crumbs.
- Flatten to 1/2 inch thickness.
- In a large nonstick skillet, cook tuna cakes in butter for 3-4 minutes on each side or until golden brown.
