3 tablespoons orange juice
2 tablespoons extra virgin olive oil
1/4 cup pitted kalamata olive, coarsely chopped
1 garlic clove, minced
1 teaspoon honey
salt and black pepper
1 avocado, pitted, peeled and cut into thin wedges
1/2 red onion, sliced thin
1/2 head romaine lettuce, washed, dried and sliced into thin strips
1 dash sugar

Steps:

  • In a small bowl, whisk together orange juice, olive oil, olives, garlic, and sugar.
  • Season with salt and pepper. In a bowl, combine avocados and onions. Pour the olive dressing over the avocado mixture and toss lightly.
  • Serve on a bed of sliced romaine.

1 cup buttermilk
1/2 cup fat-free plain yogurt
1 medium ripe avocado, peeled and sliced
2 green onions, chopped
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon dill weed
1/8 teaspoon pepper
Salad greens and vegetables of your choice

Steps:

  • Combine the first 9 ingredients in. a food processor; cover and process until smooth. Serve over salad. Store in the refrigerator.

2 small limes, juice of
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/2 cup freshly grated parmesan cheese
salt and pepper
20 black olives, thinly sliced
4 avocados, peeled, pitted and diced

Steps:

  • In a large bowl, mix the capers, garlic, lime juice, olive oil, balsamic vinegar, Parmesan cheese, salt, and pepper.
  • Gently toss in the olives and avocados until coated. Cover, and chill 30 to 45 minutes before serving.
