If you've never made chutney, you might think it to be one of those long-simmering, involved recipes that take the better part of a day. Really, making chutney is no harder than making applesauce. All you do is cook down the fruit with spices, herbs, sugar and, very important, a little vinegar to accentuate the tang, and you're done. The intriguing flavor comes from the combination of ingredients, not from a complicated technique.

170 grams all-purpose flour (about 1 1/4 cups), more as needed for rolling out dough
1 gram fine sea salt (about 1/4 teaspoon)
10 tablespoons unsalted butter, preferably a high-fat, European-style butter, chilled and cut into 1/2-inch pieces
2 tablespoons cider vinegar
70 grams light brown sugar (about 1/3 cup)
1 star anise pod
1 cinnamon stick (2 inches long)
1 small sprig fresh rosemary
1 teaspoon grated fresh ginger root
1 gram black pepper (about 1/2 teaspoon)
2 grams ground cardamom (about 1/2 teaspoon)
1 gram fine sea salt (about 1/4 teaspoon)
3 pounds ripe plums, pitted and sliced (about 6 cups)
100 grams granulated sugar (about 1/2 cup), more to taste
1 teaspoon freshly grated orange zest
25 grams instant tapioca (about 2 tablespoons)
90 grams all-purpose flour (about 3/4 cup)
100 grams dark brown sugar (about 1/2 cup)
5 grams cinnamon (about 1 teaspoon)
Pinch ground cloves
1 gram fine sea salt (about 1/4 teaspoon)
5 tablespoons unsalted butter, cut into pieces
Vanilla ice cream, for serving (optional)

Steps:

  • Make the crust: In a food processor, briefly pulse together flour and salt. Add butter and pulse until mixture forms chickpea-size pieces (3 to 5 one-second pulses). Add ice water 1 tablespoon at a time, up to 6 tablespoons, pulsing occasionally until mixture is just moist enough to hold together. Form dough into a ball, wrap with plastic and flatten into a disk. Refrigerate at least 1 hour.
  • Make the chutney: In a medium saucepan over medium heat, bring vinegar, 2 tablespoons water, brown sugar, star anise, cinnamon stick, rosemary sprig, ginger root, pepper, cardamom and salt to a simmer, stirring to help dissolve sugar. Add a third of the plums and let mixture simmer until thickened, stirring frequently, 20 to 30 minutes. Let cool, then discard star anise, cinnamon stick and rosemary.
  • Meanwhile, toss remaining plums, granulated sugar, orange zest and tapioca in a bowl and let sit for 20 minutes. (If your plums are tart, add more sugar to taste.)
  • Lightly flour a work surface and rolling pin. Gently roll out dough to fit a 9-inch pie pan, dusting with flour if dough is sticking. Fold dough in half and transfer to pie pan. Carefully press crust into pan and crimp edges. Return pie to refrigerator for 20 minutes. While crust chills, heat oven to 400 degrees.
  • Gently press foil into pie crust and fill with pie weights or dried beans. Transfer to oven and bake for 18 minutes. Remove the foil and pie weights and bake for another 5 to 10 minutes, or until crust is a light golden brown. Transfer to a rack to cool slightly.
  • Meanwhile, prepare the crumb topping: In a small bowl, combine flour, brown sugar, cinnamon, cloves and salt. Using your hands, work in butter until the dry ingredients are completely incorporated into butter and large, marble-size clumps form when pinched. Let sit in refrigerator while assembling pie.
  • Mix chutney into uncooked plums. Pour filling into crust and cover with crumb topping. Turn oven down to 350 degrees and place pie on a baking sheet on middle rack in oven. Bake pie for 1 to 1 1/2 hours or until fruit is bubbling and top is golden brown. Serve warm or at room temperature, with vanilla ice cream if you like.

RUSTIC PLUM CROSTATA WITH LEMON THYME

Whether you call it a crostata, a galette or a rustic fruit tart, this juicy, messy confection has a charm that lies with its flavors rather than its looks. It hits the same luscious, buttery, jammy notes as a fruit pie, but instead of being neatly trimmed, crimped and latticed, it features hasty folds and raggedy edges: perfectly acceptable points of style. Unlike jewel-like tarts crowned with perfect fruits, crostatas do just as well with weeping, bruised specimens, as long as you cut out any obviously funky bits. And crostatas are easy to improvise. You can use whatever fruit you have, making this a handy recipe to pull out when the result of your farmers' market shopping exuberance begins to wrinkle and fade.

1 cup (130 grams) all-purpose flour
1/3 cup (40 grams) whole-wheat flour
1/2 cup (100 grams) plus 1 tablespoon (15 grams) sugar
1/2 teaspoon (2 grams) plus a pinch fine sea salt
1 large egg
Heavy cream
6 tablespoons (85 grams) unsalted butter, cut into small pieces
3 cups sliced and pitted ripe sugar plums or mix of other plums about 1 1/2 pounds before pitting
1 1/2 tablespoons (22 grams) cornstarch
1 small bunch lemon thyme (or use 1 teaspoon lemon thyme leaves)

Steps:

  • In a food processor fitted with a steel blade, pulse together the flours, 1 tablespoon sugar and 1/2 teaspoon salt until blended. In a measuring cup, lightly beat the egg, and add just enough cream to get to 1/3 cup. Lightly whisk the egg and cream together.
  • Add the butter to the flour mixture and pulse to break up the butter. Do not over-process; you need lima-bean-size chunks of butter. Drizzle the egg mixture over the dough and pulse until it just starts to come together but is still mostly large crumbs.
  • Put the dough on the counter and knead to make one uniform piece. Flatten into a disk, wrap in plastic and chill for 2 hours or up to 3 days.
  • Heat the oven to 375 degrees. Roll the dough out to a 12-inch round (it can be ragged). Transfer to a rimmed baking sheet and chill while preparing the filling.
  • Toss together the plums, all but a tablespoon of the remaining sugar, a pinch of salt and the cornstarch. Pile fruit on the dough circle, leaving a 1 1/2-inch border. Gently fold the pastry over the fruit, pleating to hold it in (sloppy is fine). Brush pastry with cream. Sprinkle remaining sugar on top, with the thyme.
  • Bake for 30 to 40 minutes, until the crust is golden and the fruit is tender. Cool for 5 minutes, then transfer to a wire rack. Remove the thyme branches (some leaves will cling; you want this). Serve warm or at room temperature.

Use your favorite homemade double crust pie shell, or the dreaded store bought - either way it's as easy as Pie!

2 unbaked pie crusts
2 lbs plums
1/2 cup sugar
2 tablespoons flour
1 teaspoon cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 450 degrees.
  • Place one pie crust into a 9"pie dish.
  • Wash plums, do not peel.
  • Cut plums in half remove pit, then into quarters.
  • Arrange plums in the pie crust.
  • Mix together the dry ingredients, then sprinkle over the plums.
  • Dot with the butter.
  • Place top crust over plums, trim crust edges with enough to turn under, then crimp crust edge.
  • Cut about 6 1" slits into the top of the pie.
  • Bake at 450 degrees for 12 minutes, reduce heat to 325 degrees, bake 25 minutes longer or until plums are tender.
  • Cool, serve warm or cold.

2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup (2 sticks) cold unsalted butter, cut into small pieces

Steps:

  • Put flour, salt, and sugar in bowl of a food processor, and pulse to combine. Add butter, and process for about 10 seconds, or just until the mixture resembles coarse meal.
  • Add ice water, tablespoon by tablespoon (1/4 to 1/2 cup), through the feed tube with machine running, just until the dough holds together without being wet or sticky; do not process more than 30 seconds. Test the dough at this point by squeezing a small amount together. If it is crumbly, add a bit more water.
  • Divide dough in half, and wrap each half in plastic wrap, using a rolling pin to flatten into a disk. Chill until needed. Wrapped in plastic, dough can be frozen for several weeks before using.

PLUM TART

This tart, adapted from the pastry chef Jacquy Pfeiffer, with whom I wrote a cookbook, is a very simple way to show off the last of the season's plums. Use the same formula for peaches, apricots and figs when those fruits are in season. The important thing to remember when making fresh fruit tarts with cut stone fruit is that you need to pack the fruit into the pastry tightly. If you don't, the fruit will collapse in the shell as it bakes, and it will lose a lot of liquid, which could make the pastry shell soggy. Another way to prevent the shell from becoming soggy is to line it with crumbs of one kind or another - they can be cookie crumbs or breadcrumbs, crumble topping or streusel, that will absorb the juice from the fruit.

1 9-inch sweet pastry tart shell, fully baked (see recipe)
2 pounds/900 grams plums, pitted and cut in half if small Italian plums, cut into quarters if larger
1 cup/120 grams crumbled vanilla cookies, bread crumbs or crumble topping
3 tablespoons/45 grams sugar
1/2 teaspoon/1 gram cinnamon
1/4 to 1/2 cup apricot jam (optional)

Steps:

  • Heat oven to 375 degrees. If using smaller, halved plums, use a paring knife to cut a 3/4-inch slit through the top of each half, from the tip of the plum to just above where the pit should be. (This will allow the liquid from the plums to evaporate during baking instead of settling into the pit cavity.)
  • Place pastry shell on a sheet pan or baking sheet. Spread crumbs or crumble topping over bottom of pastry shell in an even layer. Arrange plums in tight concentric circles in pastry shell, skin-side down, beginning with rim of the pan and standing plums up slightly.
  • Mix together sugar and cinnamon and sprinkle 2 tablespoons over plums. Place in oven and bake 45 minutes, or until tips of plums have colored; plums should retain their shape. Remove from heat, on baking sheet, and allow to cool on a rack.
  • Once plums have cooled, sprinkle remaining cinnamon-sugar mixture over the fruit. Alternatively, heat jam in a small saucepan until runny and, instead of sprinkling fruit with sugar, gently brush cooled plums with jam to glaze.

1kg plum, halved, stoned and finely chopped
3 onions, finely chopped
100g dried cranberries or raisins, roughly chopped with an oiled knife
1 tbsp finely grated ginger
1 tbsp black mustard seed
1 tbsp ground cumin
1 tbsp paprika
1 tsp chilli flakes
400ml red wine vinegar
500g light muscovado sugar

Steps:

  • Put all the ingredients, except the sugar, into a large pan and stir well. Bring slowly to the boil, then reduce the heat, cover and simmer for 10 mins, until the plums are tender.
  • Stir in the sugar plus 2 tsp salt and keep stirring until it has dissolved. Boil the chutney for 20-30 mins, uncovered, stirring occasionally to prevent it catching on the bottom, until it is thick and pulpy.
  • Pot into sterilised jars (see Know-how, below), seal, label and store for at least 2 weeks before eating. Will keep for up to 6 months in a cool dark place.

CLASSIC PLUM PIE WITH CUSTARD

900g plum , stoned and thickly sliced
140g golden caster sugar , plus extra
tsp ground cloves
1 heaped tbsp cornflour
flour , for dusting
500g pack shortcrust pastry
1 egg , beaten, to glaze
4 egg yolks
85g caster sugar
250ml milk
250ml double cream
seeds scraped from 1 vanilla pod

Steps:

  • Heat oven to 200C/fan 180C/gas 6 and put a large baking sheet in to heat up. Put the plums, sugar and cloves in a pan. Simmer until the sugar dissolves and the plums are juicy, 8-10 mins. Mix the cornflour with a little of the juice, then mix well into the fruit. Boil for a few mins, stirring, until thickened.
  • For the custard, blend the yolks and sugar. Heat the milk, cream and vanilla in a pan until almost boiling, then gently pour onto the egg mix, whisking constantly. Return to a clean pan and heat gently, stirring, until the mix thickens and coats the back of a spoon. Cool quickly, then chill. Custard can be made up to a day ahead and gently reheated.
  • Roll out two-thirds of the pastry on a floured surface. Use to line a pie dish, letting the pastry hang over the edges a little. Fill with the plums. Roll out remaining pastry, about 2.5cm bigger than the dish, then drape over the plums. Pinch edges together well, then make a small hole in the top. Brush with egg and sprinkle with sugar. Can be assembled up to 1 day ahead. Place on the hot baking sheet. Bake for 25-30 mins until golden brown, and serve hot with the custard.

  • To Make Streusel Topping: In a medium bowl mix 1/2 cup flour, brown sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon salt, chopped nuts, and grated lemon zest. Work in butter or margarine with fingers until all ingredients are well combined. Set aside.
  • To Make Fruit Filling: Place pitted and sliced fruit in a large bowl. In a small bowl, mix remaining sugar, flour, cinnamon, and nutmeg until thoroughly combined. Pour over fruit and stir gently until all fruit is evenly coated.
  • Roll out pie crust and place in a 9 inch pie pan. Trim and flute edges, then pour in fruit filling. Evenly cover fruit with streusel topping and bake in preheated oven for 45 to 55 minutes. Serve warm, or at room temperature.

2 1/2 pounds plums, washed, pitted and quartered
1/2 cup granulated sugar, plus more for sprinkling
1/4 teaspoon freshly grated nutmeg
Juice of 1/2 lemon
2 tablespoons cold unsalted butter, cut into small pieces
2 tablespoons heavy cream
Confectioners' sugar, for dusting
Creme fraiche, for serving

Steps:

  • Preheat oven to 400 degrees. On a lightly floured surface, roll dough into a 14-inch round that is 1/8 inch thick. Fit the dough into a 9-inch pie plate. Transfer to refrigerator to chill for 30 minutes.
  • In a large bowl, combine plums, sugar, flour, nutmeg, and lemon juice. Toss to combine. Mound plums in the lined pie plate. Dot with butter, and fold the pastry up over the fruit. Transfer to refrigerator to chill for 30 minutes.
  • Brush the pastry with cream, and sprinkle with granulated sugar. Bake until the plums are tender, the juices in the center of the pie are bubbling, and the pastry is golden brown, about 40 minutes. Let cool slightly before dusting with confectioners' sugar for serving.

5 tablespoons all-purpose flour, plus more for dusting
Pate Brisee for Plum Crumb Pie
6 black or red plums (2 pounds total), pitted and quartered
1/4 cup sugar, plus more for sprinkling
1 teaspoon ground cinnamon
1 cup Crumb Topping for Plum Crumb Pie

Steps:

  • Heat oven to 425 degrees. Have ready a 9-by-1 3/4-inch round tart ring set on a parchment-lined baking sheet. On a lightly floured surface, roll out dough to a 1/8-inch thickness. Trim to a 15-inch circle, and fit into tart ring, leaving excess dough overhanging.
  • Combine plums, sugar, flour, and cinnamon in a large bowl; toss to coat.
  • Place plum mixture in shell. Fold excess pastry over plums, leaving center open. Sprinkle crumb topping over exposed plums. Transfer baking sheet to refrigerator; chill until firm, about 30 minutes.
  • Bake until crust begins to brown, about 20 minutes. Reduce heat to 375 degrees. bake until crust has browned and fruit is bubbling, about 1 hour. Transfer to a wire rack to cool, 25 minutes. Remove tart ring, and serve warm or at room temperature.

1 cup white sugar

2 tablespoons white vinegar

Steps:

  • Mix plums and sugar together in a heavy-bottomed stockpot. Cook over medium heat, stirring occasionally, until mixture turns to liquid, 8 to 10 minutes.

1/2 cup granulated sugar
3 tablespoons tapioca flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger

4 cups Italian plums, pitted and cut into quarters
1/4 cup plum jam
3/4 cup all-purpose flour
3 tablespoons brown sugar
1 pinch ground cinnamon
1/3 cup unsalted butter, cut into pieces

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the granulated sugar, tapioca flour, cinnamon, ginger, cardamon and plums in a large bowl and toss together.
  • Stir in the jam.
  • Spoon the filling and any juices into the unbaked pie shell.
  • Place the pie plate on a baking sheet to catch any juices.
  • Combine the all-purpose flour, brown sugar and cinnamon in a large bowl.
  • Cut in the butter and work with your fingers until you have both small and large pieces.
  • Sprinkle the crumble over the plums.

Use this crumb topping our our Plum Crumb Pie, and use leftover topping to make impromptu fruit crisps.

Yield Makes 3 cups

Number Of Ingredients 7

1/4 cup whole blanched almonds
3 tablespoons granulated sugar
1 cup plus 2 tablespoons all-purpose flour
6 tablespoons packed light-brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, chilled and cut into small pieces

Steps:

  • Heat oven to 350 degrees. Spread almonds on a baking pan. Bake until fragrant and golden, about 8 minutes. Set aside to cool.
  • Place almonds and granulated sugar in the bowl of a food processor; process until finely ground. Transfer to the bowl of an electric mixer fitted with paddle attachment.
  • Add flour, light-brown sugar, cinnamon, and salt; mix on low speed until combined. Add butter, and mix just until small clumps begin to form, about 1 1/2 minutes. Store in an airtight container, refrigerated, up to 1 week, or frozen, up to 1 month.
