BBQ Spice Rub image

This rub is so simple! It's made with the everyday spices you have in your cupboard. I rub it on everything from chicken to pork to burgers to steak. I keep it in a Ziploc® bag in the freezer. It's always ready to go! Double or triple your ingredients so you always have it on hand.

1 tablespoon ground black pepper
1 tablespoon salt

Steps:

  • Mix brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne pepper in a bowl. Store in an air-tight container or keep in the freezer in a sealable plastic bag.

Number Of Ingredients 18

For the coconut sea salt:
2/3 cup unsweetened coconut flakes
1/3 cup fine sea salt
For the chile elixir:
5 small hot chiles, such as red jalapeños, cut into long, thin strips
16 ounces distilled or tap water
For the vanilla elixir:
8 ounces pure vanilla extract
8 ounces distilled or tap water
For the Azteca:
Juice of 1 lime
1/4 cup coconut sea salt
2 tablespoons sweetened cocoa powder
2 ounces chile elixir, or more to taste
2 ounces vanilla elixir
2 ounces simple syrup
Ice
9 ounces soda water

Steps:

  • Make the coconut sea salt:
  • In a food processor, process the coconut flakes and salt until fully combined, about 1 minute-the mixture will be light and fluffy. DO AHEAD: Coconut sea salt can be prepared in advance and stored, in an airtight container at room temperature, up to 2 weeks.
  • Make the chile elixir:
  • In a small saucepan, bring the chiles and distilled or tap water to a boil over high heat. Reduce the heat to moderate and simmer, uncovered, until reduced by half, about 15 minutes. DO AHEAD: Chile elixir can be prepared in advance and refrigerated up to 2 weeks.
  • Make the vanilla elixir:
  • In a small saucepan, bring the vanilla and distilled or tap water to a boil over high heat. Reduce the heat to moderately low and simmer, uncovered, until reduced by half-note that this reduces very quickly, in about 5 minutes. DO AHEAD: Vanilla elixir can be prepared in advance and refrigerated up to 2 weeks.
  • Make the Azteca:
  • Pour the lime juice onto a small plate and spread the coconut sea salt on a second small plate. Dip the rim of a 12-ounce glass into the lime juice, then dip it into the coconut sea salt to lightly coat.
  • In a cocktail shaker, combine the cocoa powder, chile elixir, vanilla elixir, and simple syrup. Shake vigorously until well combined. Add ice to the prepared glasses, then strain the Azteca into each glass. Add enough soda water to fill each glass, then stir to incorporate.

Beef Rub for Barbacoa image

A great recado for flavoring beef in preparation for smoking. Adjust seasoning to taste. If using on pork, leave out the onion and add 1 tsp each of coriander seed, mexican cinnamon and allspice. If I am using a smoker for this, I like using 4 garlic cloves, mashed, and adding them after the dry spices are ground well. If I am using higher heat, I use the garlic powder so it doesn't burn and get bitter. Ick! Red Apple has a great barbacoa recipe, #184735, that this would work beautifully on. This rub will keep very nicely in a bag in the freezer.

1 tablespoon cayenne powder

  • Combine all ingredients in a spice grinder and pulverize.
  • Rub on all meat surfaces.
  • Place meat in ziploc, or wrap with foil/plastic wrap and place in refrigerator overnight.

You can substitute Green Chile if you don't have poblanos. You can use those precooked chickens from the grocery store or grill chicken breast real quick. It freezes well too. To lower fat I use cooking spray to fry the tortillas and use fat free half and half instead of cream.

2 tablespoons oil
1/2 cup chopped onion
2 garlic cloves, finely chopped
3 large tomatoes, pureed
1 1/2 teaspoons salt
1 tablespoon butter
3 cups fresh corn kernels or 3 cups frozen corn kernels
3 zucchini, chopped
1/3 cup water
oil (for frying)
10 corn tortillas
2 poblano chiles, roasted, peeled and cut into strips
1 cup cream
2 -3 cups cooked and shredded chicken
1 cup monterey jack cheese

Steps:

  • Heat oil in skillet, add the onion and garlic and saute until transparent. Add the tomatoes and salt and cook over high heat for 5 minutes. Lower the heat and cook for 10 more minutes. Correct the seasoning and set aside.
  • Preheat oven to 375°F
  • Melt the butter in a saucepan. Add the corn and zucchini and cook 2 minutes. Add the water, cover and cook over low heat for 8 minutes or until the zucchini is crisp-tender.
  • Heat some oil in a skillet and fry the tortillas for 30-40 seconds on each side, just to soften. Set aside. (You could use cooking spray or sprinkle with water to soften and lower fat).
  • Place a thin layer of veggies on the bottom of a greased 9x13 inch baking dish. Top with a layer of 4-5 corn tortillas and then a layer of tomato sauce. Add half the remaining veggies, half the chiles, 1/2 cup cream, half the chicken and 1/2 cup cheese. Repeat the layers, finishing with the cheese. Bake uncovered until the cheese begins to melt. About 10-15 minutes.

This is a very popular Mexican soup. It can be served with any other Mexican dish. Just before serving, add tortilla strips and avocado cubes, so the tortillas stay crunchy.

10 (6 inch) corn tortillas, cut into 1/2 inch strips
1 ½ cups vegetable oil for frying
salt to taste
4 cups chicken broth
1 cup fresh cilantro leaves
2 large tomatoes
1 large onion
1 tablespoon chopped chipotle peppers in adobo sauce
1 teaspoon salt, or to taste
2 avocados - peeled, pitted and diced

Steps:

  • Heat oil in large skillet and carefully drop in half the tortilla strips. Fry in batches until golden brown and crunchy. Place fried tortilla strips on a paper towel-lined plate and pat dry. Sprinkle salt on tortillas, tossing to coat both sides.
  • Using a blender or food processor, blend tomatoes, onion and cilantro until completely pureed.
  • In a saucepan, heat chicken broth, chipotle chili, and pureed vegetables. Bring to a boil; remove from heat. Ladle soup into serving bowls. Prior to serving, add tortilla strips and avocado. Buen provecho!
